Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for just a couple of items. I stopped by McDonald’s then to pick up Breakfast for Mom and Dad. Finished up some house cleaning and then did some work on the computer. I took the back off the processor and cleaned the inside of the computer, a lot of dust. Deleted some old files and ran all the scans. For Dinner tonight Turkey Tacos and Refried Beans.

 

 

I had been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Love the Taco Shells that stand! Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For dessert later a Blue Bunny No Sugar Added Vanilla Mini Cone.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

 

For Breakfast I prepared some Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. I love Gravy!! Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with that morning cup of Bigelow Decaf Green Tea. I also baked up a pan of Pillsbury Biscuits for Mom and Dad to have with the gravy. I love Biscuits but 2 slices of toast has way less carbs and calories than one Biscuit. Not a lot going on today, caught up on everything. I took a ride later over to Home Depot to look at some plants and trees. Not sure what I’m going to do yet for some new shrubbery. It’s our warmest day of the year so far, high near 90 degrees and mostly sunny. For Dinner tonight its Turkey Tacos and Refried Beans for Taco Tuesday!

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the fridge to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Had a very bad night of dealing with Phantom Pains. These were almost violent pains I had to deal with. I just pray that one day they come up with a cure for these! Then last night we got a call from the rehab center where Dad is at and they told us he has Shingles! So now he is under quarantine for 3-5 days! What else can happen!! Weather wise we hit about 75 degrees yesterday afternoon and the temps dropped quickly and we had snow flurries in the early morning, this weather is crazy! After Breakfast I headed up the road to the local Kroger for a few items we needed. Didn’t do a whole lot today but rest, didn’t get a lot of sleep last night. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

We love Chili and Cheese Nachos and I haven’t had them in a while! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Our area here in West Chester has run the full gauntlet of weather! In the last 2 days its been 80 degrees and sunny, heavy rain and thunder storms, dropping temperatures with snow and sleet, and now this morning snow flurries and in the 20’s! All 4 seasons in 2 plus days! After Breakfast it was house cleaning day. Dusted (my least favorite chore), vacuumed, and cleaned the stove and oven. Had a very restless night last night. Dealing with the Phantom Pains, first time in a while. I had a bad case of them lasted for almost the entire day and night. Sure wish they come up with a cure for these. Anyway after Lunch I went up and seen Dad at the rehab center. It looks as though he may be released sometime next week, hope so! For Dinner tonight Turkey Tacos and Refried Beans.

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I was out of the Jennie – O Turkey sausage Links, I haven’t found any at Meijer lately, and Meijer is the only store I can find Jennie – O products. So I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the freezer to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Not a bad day out today, partly sunny and in the 50’s. After Breakfast I got the leaf blower out and cleaned our deck and driveway, lot of leaves. After that I cleaned the house, vacuum and dusted. Everything done and this afternoon its NFL Football, love Football! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Started this rainy morning off with a Gouda Egg White Omelet with Turkey Sausage Links and Toast. The Shredded Gouda worked perfect as the Cheese filling in the Omelet. For the Omelet I used Meijer Brand Egg White Substitute. My Sausage was Jennie – O Turkey Breakfast Sausage Links along with toasted Healthy Life Whole Grain Bread. And not forgetting, my morning cup of Bigelow Decaf Green Tea.

We went from being very dry out to very wet, with flooding! A whole lot of rain yesterday evening through the morning. It finally slowed and cleared up somewhat as the day went on. When we finally got a break I headed out to Meijer and Kroger. Purchased the majority of the items at Meijer. Then at Kroger a few items I needed and all of Mom’s items she needed. Noticed a most of the trees have turned to their Fall Colors throughout the area now. Lot of bright colors this year. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Got to have my Chili and Cheese Nachos every so often, and tonight’s the night! Ingredients; I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives. Anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab About time! For my other toppings I sliced up some sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good!

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Baked Turkey Taco Nachos

 

 
To start the morning off for Breakfast I had a toasted 2 slices of Healthy Life Whole Grain Bread, topped with I Can’t baked-turkey-taco-nachos-016Believe It’s Not Butter. Then I fried 2 Jennie – O Turkey Breakfast Sausage Links and also prepared some Simply Potatoes Shredded Has Browns. And had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went the local Kroger and picked up some Lettuce and stopped by McDonald’s to pick up Breakfast for Mom and Dad. Later in the day I went and had the car washed. Around the house I ran the vacuum and dusted. Then outside just the daily cleaning. Another hot Fall Day out there again. Sunny, Muggy, and 90 degrees. Not real Fall like out there! So for Dinner it was leftovers. I used the Turkey and Black Bean Taco Mixture and topped Tostitos Multi Grain Chips with it, for Baked Turkey Taco Nachos.

To prepare them I first preheated the oven to 400 degrees. Then I reheated the leftover Turkey and Black Bean Mixture. I took the Chips and topped it with Daisy Light Sour Cream, Lettuce, Turkey and Bean Mix, sliced Olives, Smoked Chipotle Taco Sauce, and the Sargento Reduced Fat Shredded Fat 4 Cheese Mexican.

I put the loaded Chips on a foil lined baking sheet and baked the Taco Nachos till heated through and the Cheese started to melt. Really like how these came out. All the ingredients on a crispy Tostitos Chip. The Tacos were excellent last night but I’m enjoying these Taco/Nachos a bit more! The Ortega Smoky Chipotle Taco Sauce that I use has to be the best Taco Sauce I’ve ever had! Love this stuff. It has a fantastic taste to it with just the right amount of heat. Below are the ingredients and preparation directions. Tacos or Nachos, it works great with either! I’ve left yesterday’s post of Turkey Nachos below that list full instructions, Enjoy!

I used the Jennie -O Ground Turkey I received from Jennie – O this afternoon! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes.

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin, topped with I Can’t Believe It’s Not Butter. Also had the morning cup of Bigelow Decaf Green Tea. I started a load of laundry for Mom and then I headed out to Meijer. After Meijer I headed to Kroger, Mom had a list of things she needed from there. It may be the first day of the Fall Season but it was still feeling like a hot August Summer day out there. Sunny, 88 degrees, and muggy. I had no clue on what to have for Dinner tonight. Up until around 12:30, this is when Fed – Ex dropped a package off from Jennie – Turkey. Tonight its Turkey Tacos!

I had no clue on what Dinner was going to be and then as if Jennie – O read my mind, a Fed -Ex truck pulled up and brought out the Green and White shipping box. When I see that headed to the door I know Jennie – O Turkey has sent me some Turkey Products to use! As a member of the Jennie -O Switch Club they send me Jennie – O Turkey products, coupons, and recipes to try and blog about. This shipment had a package of Jennie – O Ground Turkey and a package of Jennie – O Turkey Breast Tenderloins. My Dinner problem was solved! Ton ight I’m using the Ground Turkey and its going to be a Taco Night!

Today’s Menu: Turkey Tacos and Refried Beans

For Breakfast I prepared a packet of the Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with that morning cup of Bigelow Decaf Green Tea. After Breakfast it was house cleaning day. Dusted (my least favorite chore), vacuumed, and cleaned the stove and oven. With the inside done moved the cleaning outdoors. Got the leaf blower out and cleaned the wooden deck and driveway areas. Got the weed killer spray and the cart and sprayed around the house flower beds for weeds. Starting to get hot and muggy out. Sunny and a high in the 90’s, plus more humid out. Dad was released from the hospital and resting here at home, good to have him back. For Dinner tonight Turkey Tacos and Refried Beans.

Just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. Really been dreading today. Today is my Aunt’s Funeral, really a rough day for the family. I was very close to her and I’m really going to miss her. She had dementia, so at least she’s not suffering no more from that terrible disease. It was very tough watching her healthy slowly decline due to the dementia. Love you Aunt Dorthy! I wanted a light Dinner and something easy to fix. So tonight I prepared Chili and Cheese Nachos.

Top with Hormel Turkey Chili with Beans, Black Olives, Green Olives, Sliced Jalapenos, all covered up with a blanket of Sargento Shredded Mozzarella. That’s my Dinner Tonight!
