Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

 

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. We ended up with about 1 1/2 inches of snow, our first of the year. Gloomy day out there today. A few snow flurries with a high of 36 degrees. Cleaned the house today and did a few things around the house, not a lot to do today. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

We’re having Shrimp tonight, I could eat Shrimp and Seafood every day! While at Meijer the other day I picked up some of the huge Freshwater Colossal Shrimp, first time I’ve seen Meijer have these! I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re awfully good! To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

 

Poured about 1/2 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I also baked a Loaf of Garlic Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello.

 

 

 

 

 

 

 

 

McCormick Cracker Meal Seafood Fry Mix
Cracker Meal Seafood Fry Mix adds extra crunchiness to fried and baked foods. All ingredients have been specially selected to provide a superior coating that seals in natural juices for fish, seafood, poultry, meats and vegetables.
Ingredients
Enriched Bleached Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, And Folic Acid), Whey (Milk), Dextrose, And Soybean Oil.

Serving size
1/4 cup Mix (32g)
All You Need
1/2 cup Cracker Meal
1 lb. Fish or Seafood*
Water or Milk
Vegetable Oil
Directions
1. POUR Cracker Meal into shallow dish or large plastic bag. Moisten fish, cut into serving-size pieces, or seafood with water or milk. Shake off excess.
2. COAT fish, several pieces at a time, evenly with Cracker Meal. Let stand 5 minutes. Discard any remaining Cracker Meal. Fry as directed below. Serve with McCormick® Cocktail Sauce or Tartar Sauce. Use the entire package to coat 4 lbs. fish or seafood.

*Best with tilapia, trout, catfish, shrimp, or scallops. Also try with shucked oysters and clams, or soft-shell crabs (pierce several times before coating).

Pan Fry: Pour oil to a depth of 1/4 inch in a large skillet; heat to 350°F on medium heat. Fry fish, in batches, 2 to 4 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Oven Fry: Cover bottom of shallow baking pan with melted butter. Arrange fish or seafood in a single layer in pan; turn to coat with butter. Bake in preheated 425ºF oven 10 to 20 minutes until golden brown around edges and fish flakes easily with a fork.

Flavorful Tips:
• For a thicker coating, dip fish in a mixture of 3 tbsp. milk and 2 beaten eggs before coating with Cracker Meal.
• Coat boneless skinless chicken breast halves or chicken parts as directed. Bake in 400ºF oven 20 to 30 minutes for chicken breast halves or 45 to 50 minutes for chicken parts.
• Use Cracker Meal instead of bread crumbs when making meat loaf or meat balls.

For a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

The rain started early yesterday morning and continued through today. We’ll have an inch or more when done with snow flurries toward evening. It was good morning to sleep in and that’s what I did. I’m normally up around 6:00 every morning but I slept in till 8:00. And that’s late for me! Did a few things around the house, not a lot to do today. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

Today’s Menu: Fried Freshwater Shrimp w/ Roasted Butternut Squash and Roasted Asparagus

So I cleaned the house today, dusted and ran the sweeper. Scrubbed all the Kitchen Counters and cleaned out the Fridge. For Dinner tonight I prepared Fried Freshwater Shrimp w/ Roasted Butternut Squash and Roasted Asparagus.

For a side dish I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoon Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

 

 

For another side I prepared Roasted Asparagus. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Fried Freshwater Shrimp w/ Sugar Snap Peas and Mini Ears of Sweet Corn

 

 

For Breakfast this morning I prepared a Breakfast Taco. To prepare it I heated up a couple of Johnsonville Turkey Breakfast Sausage Links. Then Scrambled a Egg. Then to assemble it I used a Old El Paso Blue Corn Stand Up Taco Shell. Sliced up the Sausage and added it to the Scrambled Egg, stirred and mixed. Added the Scramble to the Taco Shell, added Sargento Reduced Fat Sharp Cheddar Cheese, and topped it all with Ortega Chipotle Taco Sauce. This made one delicious Breakfast Taco! I’ll have to have these for Dinner, very soon! Partly Cloudy, humid, and a high of 90 degrees out today. Had to take Mom to her follow up eye exam, everything looked great they said. Back home did a few chores around the house. For Dinner tonight its Fried Freshwater Shrimp w/ Sugar Snap Peas and Mini Ears of Sweet Corn.

Added 2 tablespoons of Extra Light Olive Oil into large skillet. Heated the oil on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

 

For one side I prepared a bag of Green Giant Steamers Sugar Snap Peas. To prepare them; Keep Frozen. Place pouch, printed side up, on microwavable plate. Do not cut slit in pouch. Microwave on high 5 minutes. Let stand 1 minute. Pull or cut to open and serve! Came out good and very easy to prepare.

 

 

 

 

 

For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

Outside on the 2nd day of June its Partly Sunny and 84 degrees. Did a few things around the house then went outside and got the leaf blower out. Cleaned the deck and driveway areas off. After Lunch we went up and spent most of the afternoon with Dad. Dad is down to 120 lbs. now and he barely eats anything at all. He’s not doing good at all. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

 

To start the day off I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Sunny and 48 degrees for a high today, plus a lot less windy! Caught up on most everything. I did a couple of loads of laundry for Mom and that was about it. Got the leaf blower out and cleaned off the wooden deck and around the driveway are. Still a bit brisk outside. Watched some College Basketball afterward. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

I’m having Shrimp for the second day in a row, I could eat Shrimp and Seafood every day! While at Kroger yesterday I picked up some of the huge Freshwater Colossal Shrimp, I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re not bad. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

 

 

 

Poured about 1 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

 

To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate

Today’s Menu: Fried Freshwater Shrimp w/ Mac and Cheese

 

 


To start my morning off I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. It snowed overnight and into the morning here. We ended up with over 3 inches. So not much going on outside today. And not going on inside. I was caught up on everything so it a was layed back day today. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

 

While at Kroger yesterday I picked up some of the huge Freshwater Colossal Shrimp, I cleaned them and put them in the fridge until needed for Dinner tonight. I love these, they are so meaty. They don’t have that Ocean taste like Ocean Shrimp but they’re not bad. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

 

 


To go with the Shrimp I prepared some Stouffer’s Classic Mac and Cheese Cups. just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I baked a loaf of La Brea Bakery Multi Grain Bread. For Dessert/Snack later some sliced Kraft Sharp Cheddar Cheese and Whole Grain Saltine Crackers.

To start my morning off I prepared a Poached Egg and served it all on a toasted Healthy Life Whole Grain English Muffin. I love Poached Eggs! Also had a cup of Bigelow Decaf Green Tea. Started a load of laundry for Mom after Breakfast. Cloudy with light rain moving, high of 62 degrees. Went to Kroger for a couple of item s and then by McDonald’s to pickup Breakfast for Mom and Dad. For Dinner tonight it’s Fried Freshwater Shrimp w/ Mac and Cheese.

McCormick Cracker Meal Seafood Fry Mix

Cracker Meal Seafood Fry Mix adds extra crunchiness to fried and baked foods. All ingredients have been specially selected to provide a superior coating that seals in natural juices for fish, seafood, poultry, meats and vegetables.

Ingredients
Enriched Bleached Wheat Flour (Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, And Folic Acid), Whey (Milk), Dextrose, And Soybean Oil.

Serving size
1/4 cup Mix (32g)
All You Need
1/2 cup Cracker Meal
1 lb. Fish or Seafood*
Water or Milk
Vegetable Oil
Directions
1. POUR Cracker Meal into shallow dish or large plastic bag. Moisten fish, cut into serving-size pieces, or seafood with water or milk. Shake off excess.
2. COAT fish, several pieces at a time, evenly with Cracker Meal. Let stand 5 minutes. Discard any remaining Cracker Meal. Fry as directed below. Serve with McCormick® Cocktail Sauce or Tartar Sauce. Use the entire package to coat 4 lbs. fish or seafood.

*Best with tilapia, trout, catfish, shrimp, or scallops. Also try with shucked oysters and clams, or soft-shell crabs (pierce several times before coating).

Pan Fry: Pour oil to a depth of 1/4 inch in a large skillet; heat to 350°F on medium heat. Fry fish, in batches, 2 to 4 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

Oven Fry: Cover bottom of shallow baking pan with melted butter. Arrange fish or seafood in a single layer in pan; turn to coat with butter. Bake in preheated 425ºF oven 10 to 20 minutes until golden brown around edges and fish flakes easily with a fork.

Flavorful Tips:
• For a thicker coating, dip fish in a mixture of 3 tbsp. milk and 2 beaten eggs before coating with Cracker Meal.
• Coat boneless skinless chicken breast halves or chicken parts as directed. Bake in 400ºF oven 20 to 30 minutes for chicken breast halves or 45 to 50 minutes for chicken parts.
• Use Cracker Meal instead of bread crumbs when making meat loaf or meat balls.

Fried White Shrimp w/ Porcini Wild Mushroom Risotto

Today’s Menu: Fried White Shrimp w/ Porcini Wild Mushroom Risotto

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I would prefer Gravy and Biscuits but by having Toast I save a lot of calories and carbs. It was 31 degrees out there this morning and that was our high temperature of the day, and it dropped into the 20’s as day went on. Did a load of laundry after Breakfast. Later on after Lunch I went outside and got the leaf blower out and cleaned off the remaining leaves off the deck and driveway. I’ll retire the leaf blower until the Spring! For Dinner tonight its Fried White Shrimp w/ Porcini Wild Mushroom Risotto.

 

I purchased the Jumbo White Shrimp from the Kroger Seafood Department. To prepare them I rinsed them off with cold water and removed the shells. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix. Poured about 1 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix was excellent! Nice crunch and seasoning!

 

For one side dish I prepared something new, Lundberg Porcini Wild Mushroom Risotto. I’ve tried different Lundberg products before and loved all of them so I was sure this one would be just as good as the rest. It comes packaged with the Porcini Mushroom Risotto and the Seasoning Packet. I add Water, Extra Light Olive Oil, and Kraft Reduced Fat Grated Parmesan Cheese (for topping).

 

 

 

 

To prepare it; In a 2 qt. saucepan, sauté the Rice in ½ Tbsp. Olive Oil over medium heat for 2 minutes. Add 2 1/2 cups of Water and contents of Seasoning Pouch. Stir well and bring to a boil. Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until the Rice is tender. Garnish with Grated Parmesan Cheese, and serve. Fantastic flavor and love the added Porcini Mushrooms! I’ll have to keep this one in stock.

 

 

 


Then for another side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

 

 

 

Lundberg ORGANIC PORCINI WILD MUSHROOM RISOTTO
DESCRIPTION
Enjoy the exotic, earthy, nutty flavor of wild porcini mushrooms in this elegant Italian-style risotto. We created this delicious gourmet side dish by blending quality organic ingredients like mushrooms, garlic, and onion with our creamy Arborio rice. You’ll love how the individual kernels plump, creating a rich, creamy sauce while the rice grains remain separate and al dente.

Serving suggestions:
* Substitute ½ cup of white wine for ½ cup of water.
* Serve with sauteed spinach and mushrooms.
* Drizzle with truffle oil or other flavored oil of your choice.

COOKING INSTRUCTIONS
Stove Top:

1 – In a heavy 2 qt. saucepan, sauté rice in ½ Tbsp. olive oil over medium heat for 2 minutes.
2 – Add 2 1/2 cups of water and contents of seasoning pouch. Stir well and bring to a boil.
3 – Reduce heat to simmer, cook uncovered for 20 minutes stirring occasionally until rice is tender.
4 – Garnish with grated Parmesan cheese if desired. Serve piping hot.
Microwave:

1 – In a microwaveable glass casserole, combine rice, seasoning, 2 1/2 cups of water, and 1/2 Tbsp. of olive oil. Stir well and cover.
2 – Reduce microwave power to 70%. Cook 11 minutes. Remove cover and stir.
3 – Cook uncovered a additional 10 minutes at 70% power and stir. Check for Tenderness.
4 – Add one additional minute as needed, checking texture after each minute.
5 – Serve piping hot.
*Microwave ovens may vary so adjust time and temperature accordingly
