Today’s Menu: Leftovers – Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread

Another cold morning out, 28 degrees and another heavy frost out this morning. Sunny and 55 degrees out today. After Lunch got the leaf blower, rake, and cart out of the shed and a little yard work. Not a lot of leaves today, just staying ahead of it. Helped a neighbor up the street do a few things around her yard. It feels so good to be outside in the sun doing things. Before long it will be so cold or snowy you can’t get out so I get out as much as I can. For Dinner tonight I heated up the Leftover Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread. I’ve left the original post from yesterday for the dish recipe and description. Take Care all!

Well nothing better than Red Beans and Rice w/ Hardwood Smoked Turkey Sausage to warm up a cold and windy day here in Ohio! For the Red Beans and Rice I used a box of Zatarain’s Reduced Sodium Red Beans and Rice Mix. For the Sausage I used Butterball Hardwood Smoked Turkey and for the Garlic Loaf I used a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread. I love these types of meals! I’m preparing 3 Bean Turkey Chili tomorrow! To prepare it I’ll need; the box of the Zatarain’s Red Beans and Rice Mix, 3 cups Water, Extra Light Olive Oil, and the Sausage. Mixed 3 cups of water, Rice Mix and 2 tbsp. of Light Olive Oil in 2-quart saucepan until it was well blended. Brought to a boil. Then reduced the heat to low and covered.

I got another skillet out, sprayed it with Pam Non Stick Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Sliced the Sausage into bite size slices and added them to the heated skillet until heated through. Removed them from the heat and set aside until needed.

Simmered for 25 minutes, until the rice was tender. Stirred occasionally to prevent the Rice and Beans from sticking. With 4 minutes of cooking time left I added the Smoked Turkey Sausage. When done I removed the skillet from heat. Let stand 5 minutes. And done ready to serve! This makes one fantastic Meal! The Red Beans and Rice is Seasoned perfect. It made plenty of both the Red Beans and the Rice. And the Sausage works perfect with it. Plenty of great leftovers!

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Tried something new for Breakfast this morning, Pancakes made using Birch Bender Keto Pancake and Waffle Mix. Their 160 calories and only 5 net carbs! Which is great if you have Diabetes and having to watch your carbs. They make some very good Pancakes. Topped them with Log Cabin Sugar Free Maple Syrup, only 20 calories and 8 carbs for 1/4 cup! You can enjoy Pancakes even with Diabetes 2.

Another cold morning out, 29 degrees and a heavy frost out this morning. Cloudy and 50 degrees for the day. A little later it was raking leaves day! My neighbor across the street has a huge tree and when the leaves fall it covers at least 6 houses yards with leaves. I got my 4 wheel cart out with rake and leaf blower and my neighbor came over and we raked my yard, and then we got his yard, and we finished by getting our other neighbor’s yard. 14 Hefty Bags full of leaves! Called it day after that! For Dinner tonight I prepared Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Fries

For Breakfast this morning I prepared a Diced Ham, Hash Browns, and Off the Block Cheddar Cheese Omelet. I used Kroger Diced Ham, Simply Potatoes Shredded Hash Browns, Sargento Off the Block Cheddar Cheese, Ortega Smokey Chipotle taco Sauce, and 2 Eggs to make this very delicious Omelet! I topped the Omelet with some more of the Cheddar and the Taco Sauce. Also had that morning cup of Bigelow Decaf Green Tea. Great start to rainy day!

Rain, windy, and 63 degrees out today. They say we could end up with an inch or more of rain. And they way it’s been coming down we’ll get that if not more. So nothing going on outside in this weather. I did give the outdoor grill a good cleaning. Scrubbed the grates and cleaned down into the base of grill. Then just kicked back and watched College Football for the afternoon. For Dinner tonight its a Smoked Turkey Sausage Dogs w/ Baked Fries.

I used the always delicious Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bun length pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Bun and topped with French’s Spicy Brown Mustard. I love these Smoked Sausages.

I also prepared some Ore Ida Golden Crinkle Cut French Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert,Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Today’s Menu: Leftover – Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Not much of an appetite when the weather is this hot and humid. Went and picked up Breakfast for Mom at McDonald’s; Sausage, Egg and Cheese McMuffin and a Coffee. Mom went on to Church afterward. Humid and 90 degrees out today. Got the cart out of the shed and cleaned up around the yard. Then got the leaf blower out and cleaned off the deck and driveway. That was about it for the day. For Dinner tonight Leftover Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage. Just couldn’t let these leftovers go to waste, they are so good! Something light to eat through this heat we have. I’ve left the original post from last night for descriptions and recipe. Enjoy!

For my Sausage I used Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bite size pieces. These go great with anything.

Then to go with the Turkey Sausage I prepared a Italian Pasta Salad, made about noon today. It always taste even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

To serve made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the some left over Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast on this sunny Saturday Morning I had a cup of Bigelow Decaf Green Tea. Humid and a high of 88 degrees. Same old weather around here! Rain moving in this evening. Hardwood Smoked Turkey Franks w/ Fettuccini

Today’s Menu: Hardwood Smoked Turkey Franks w/ Fettuccini

For Breakfast this morning I made a couple of slices of French Toast. Made using aunt Millie’s Light Whole Grain Bread, Egg Beater’s, 2% White Milk, Ground Nutmeg, and Ground Cinnamon. For the toppings I used Log Cabin Sugar Free Maple Sugar and I Can’t Believe It’s Not Butter. I also fried up a couple Johnsonville Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. outside another day of passing showers and thunderstorms and a high around 82 degrees. Not much going on today. After Lunch went to the ATM and stopped and got gas. Gas is at $2.90 a gallon around here! Between Gas and the ever rising prices of food, you just can’t get ahead. For Dinner tonight its Hardwood Smoked Turkey Franks w/ Fettuccini.

For the Turkey Franks I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into 1/4 the 2 links. I’ll use the leftovers for Breakfast or Lunch. It will go perfect with the Fettuccini!

Tried a a new Fettuccini, Knorr Pasta Sides – Chicken Flavor Fettuccini. The Fettuccini comes in a packet already seasoned with the Chicken Flavor Sauce. I added Water and I Can’t Believe It’s Not Butter.

To prepare it; I grabbed a medium saucepan and sprayed it with Pam Non Stick Cooking Spray. Added 2 cups water and 1 Tbsp. of I Can’t Believe It’s Not Butter and brought it to a boil. Stirred in contents of the package. Continued boiling for 7 minutes or until the Pasta was tender, stirring occasionally. Let stand at least 2 minutes. Stir and serve. Added a shake of Morton’s Lite Salt to it. Fantastic pasta and the Sauce was very flavorful. Good item to have in the pantry. Would go perfect with Pork or Chicken. Also had a Buttered slice of Aunt Millie’s Light Whole Grain Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

For Breakfast on this sunny Saturday Morning I Poached an Egg, toasted a Thomas Light English Muffin, and had a cup of Bigelow Decaf Green Tea. Beautiful day out there today! 69 degrees and Sunny! Had to go back to Kroger, I forgot a couple of items Mom wanted. Stopped by McDonald’s and picked up Breakfast for her. Did some yard work then later helped an older neighbor do a few things around his house. For Dinner tonight its an Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage.

For my Sausage I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bite size pieces.

Made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the left over Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Smoked Turkey Sausage Dogs w/ Baked Fries

For Breakfast this morning I Poached an Egg, toasted 2 slices of Aunt Millie’s light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Outside its cloudy and a high of 81 degrees. After Breakfast I went to the Walmart Garden Center, looking for a grill. Then to Kroger and picked up a couple of items and then stopped by McDonald’s and picked up Breakfast for Mom. After Lunch got the cart out of the shed and finished up some yard work. Anyway for Dinner tonight its a Smoked Turkey Sausage Dogs w/ Baked Fries.

I used the Butterball Hardwood Smoked Turkey Sausage.

To go with the Sausage Dog I baked up some Alexia Organic Yukon Select Fries. Seasoned them with Morton’s Lite salt and Ground Black Pepper. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right.! Plus they are only 120 calories and 15 net carbs. Served with a side of my favorite Ketchup, Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Leftover – Shrimp and Smoked Turkey Sausage Gumbo

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast! We were fogged in this morning! Heavy fog until about 11:00 this morning. But then it turned sunny and a high of 46 degrees. The snow is melting! After Breakfast I went to Meijer to do some grocery shopping. I was at the Kroger up the road from us yesterday but their prices are so much higher than Meijer or Walmart! So after Meijer I stopped and got gas and then to McDonald’s to pick up Breakfast for Mom. Later on went outside and cleaned up around the driveway and deck. Then kicked back the rest of the afternoon. For Dinner tonight Leftover: Shrimp and Smoked Turkey Sausage Gumbo. I wasn’t going to let these leftovers go to waste! I’ve left the original post from yesterday for details of the dish, Enjoy!

One of my favorite meals tonight, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.
