Today’s Menu: Buffalo 6 oz. Sirloin Steak w/ Scalloped Potatoes, Green Beans, and Texas Toast (Light)

 

 

For Breakfast I toasted a couple Eggo Nutrigrain Waffles and had my morning cup of Bigelow Decaf Green Tea. 57 degrees and Sunny, not too bad for December 3rd! Feels more like an early Spring day than December. I went to Kroger after Breakfast and picked up Breakfast for Mom and Dad at McDonald’s. Not a whole going on today. Mom went to Church and I stayed home and kept an eye on Dad. Dad is going down hill fast, not sure how much longer he’s going to be around. The Dementia is getting worse every passing week. So for Dinner tonight I prepared a Buffalo 6 oz. Sirloin Steak w/ Scalloped Potatoes, Green Beans, and Texas Toast (Light).

 

I placed an order with Wild Idea Buffalo earlier this week and it was delivered on Friday afternoon and I’m having the Wild Idea Buffalo – FINE CUT SIRLOIN STEAK 6 OZ. for Dinner tonight. I absolutely love all the Wild Idea Buffalo Products, never have received a Steak that wasn’t delicious!

 

 

 

 

To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. I then preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 5 minutes on one side then flipped it over and cooked the other side for 4 minutes. It came out a beautiful medium rare. Nice crust on the outside and pink in the center. Rare to Medium Rare is the only way to have Buffalo Steaks as far as I’m concerned. The Wild Idea Buffalo Steaks are just incredible. So tender, juicy, and the best flavor of any Steak. I topped the Steak with a bit of A-1 Sauce Thick and Hearty.

 

I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. I hadn’t had these in quite a while so I picked up a package while at Meijer. It comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. Easy way to have Scalloped Potatoes with no clean up!

 

 

 

 

For a second side I reheated the Del Monte Cut Green Beans I had leftover from Dinner last night. Just love those Beans! I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Let stand 1 to 2 minutes prior to serving.
