Today’s Menu: Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread

 

 

For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to get Breakfast for Mom and Dad and I also stopped at Dunkin Donuts and picked up Donuts for them. Lot of rain the last day or so and a lot more on it’s way. The news says rain every day next week, and heavy at times. Come on Sunshine! Back home did a couple of loads of laundry and then after Lunch did some house cleaning. For Dinner tonight Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread.

 

I had purchased some Catfish Nuggets from Meijer a while back. So I grabbed a package out of the freezer and let it thaw overnight in the fridge. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

For a side dish I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. I hadn’t had these in quite a while so I picked up a package while at Meijer. It comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. Easy way to have Scalloped Potatoes with no clean up! I also baked a loaf of River Road Bakehouse Multi Grain Bread. I’ve been buying this from Meijer the last few months and it’s our favorite Baked Bread. Mom’s a big Bread eater like me! For Dessert later a Dole No Sugar Added Diced Peach Cup.

Today’s Menu: Buffalo 6 oz. Sirloin Steak w/ Scalloped Potatoes, Green Beans, and Texas Toast (Light)

 

 

For Breakfast I toasted a couple Eggo Nutrigrain Waffles and had my morning cup of Bigelow Decaf Green Tea. 57 degrees and Sunny, not too bad for December 3rd! Feels more like an early Spring day than December. I went to Kroger after Breakfast and picked up Breakfast for Mom and Dad at McDonald’s. Not a whole going on today. Mom went to Church and I stayed home and kept an eye on Dad. Dad is going down hill fast, not sure how much longer he’s going to be around. The Dementia is getting worse every passing week. So for Dinner tonight I prepared a Buffalo 6 oz. Sirloin Steak w/ Scalloped Potatoes, Green Beans, and Texas Toast (Light).

 

I placed an order with Wild Idea Buffalo earlier this week and it was delivered on Friday afternoon and I’m having the Wild Idea Buffalo – FINE CUT SIRLOIN STEAK 6 OZ. for Dinner tonight. I absolutely love all the Wild Idea Buffalo Products, never have received a Steak that wasn’t delicious!

 

 

 

 

To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. I then preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 5 minutes on one side then flipped it over and cooked the other side for 4 minutes. It came out a beautiful medium rare. Nice crust on the outside and pink in the center. Rare to Medium Rare is the only way to have Buffalo Steaks as far as I’m concerned. The Wild Idea Buffalo Steaks are just incredible. So tender, juicy, and the best flavor of any Steak. I topped the Steak with a bit of A-1 Sauce Thick and Hearty.

For a second side I reheated the Del Monte Cut Green Beans I had leftover from Dinner last night. Just love those Beans! I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

It sure doesn’t feel like Spring out there today! A very cold wind blowing all day and I’m not sure it even reached 32 degrees. We did miss the snow as that went South and East of us. It will be in the 50’s the rest of the week they say. I was scheduled for my 6 month check-up for Sugar, Cholesterol and such but with all the meds I’ve been taking the last week or so I had to reschedule it for next week to get a better reading on everything. Not real hungry tonight so it was a light dinner. So tonight I prepared Chicken Breast Strips w/ Oven Baked Scalloped Potatoes.

 

 

 
I used Pilgrim’s Southern Style Breast Strips, first time in quite a while. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

 

 

 
Then for my only side I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. This one also comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. A delicious Meal without much effort or cleanup involved! For dessert later a Skinny Cow Chocolate Truffle Ice Cream bar.
