Today’s Menu: Roast Beef and Swiss Sliders w/ Baked Tater Tots

 

 

 

For Breakfast this morning I Had Scrambled Eggs, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Partly cloudy and 63 degrees outside today. Did a load of laundry after Breakfast. Later got my mask on and the the leaf blower and cart out and cleaned around the house and raked. Then took the cart out and went around the neighborhood. Gave a neighbor a hand moving some items out of his shed. As the isolation continues. Ohio had an increase of cases the last 2 days, not good. For Dinner tonight I prepared Roast Beef and Swiss Sliders w/ Baked Tater Tots.

I was able to buy some Boar’s Head Roast Beef, Sweet Sliced Ham, and Swiss Cheese from my pick up order from Kroger. Also picked up some Kroger Whole Wheat Slider Buns. To make the Sliders I’ll need Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Boar’s Head London Broil Roast Beef, Boar’s Head Imported Switzerland Swiss Cheese, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp.Worcestershire Sauce, 2 tbsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. Hellmann’s Dijonnaise Creamy Mustard Dijon Mustard.

 

So next I made my Bun Topping Sauce. I grabbed a small size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worcestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it. You can make your own adjustments depending on your taste. I added extra Poppyseed Dressing and Dijon Mustard.

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham and on top of each bottom Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of the Swiss Cheese on top of the Ham, made these on 1/2 the Buns. On the other 1/2 i used the Roast Beef and Swiss Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders and Baked Roast Beef are incredible! I normally just use Ham but we used Roast Beef also and these turned out just as good! The Ham, Roast Beef, and Swiss Cheese all great but the Topping Sauce makes this Dish. The Sauce gives it such great flavor, love these Sliders!

 

 

 

I also baked some Ore Ida Tater Tots that I served with some Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Smart Pop – Pop Corn along with a Diet Dr. Pepper to drink. Stay safe everyone!
