Today’s Menu: Fish Sandwich Fillet Sandwich w/ Baked Tater Tots

 

 

To start my day off I had my morning cup of Bigelow Decaf Green Tea. 92 degrees, humid, and mostly sunny out today. Watered everything outside and did a quick clean of the yard and around the house, had everything done before the heat and humidity set in. Not much else going on today. For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

 

I haven’t had a Fish Sandwich and Tater Tots in a while and it sounded good for tonight’s Dinner! I used Gorton’s Fish Sandwich Fillets for my Fish, which I haven’t had in quite some time. Very easy to prepare. Removed the Fish from the bag. Heated the oven at 425 degrees. Placed the Frozen Fish Fillets in a single layer evenly on a baking sheet. Place the pan on the oven rack. Bake uncovered 15 minutes. I turned the Fish Fillets over halfway through the baking process.

 

These turned out perfect! Golden Brown and nice Flavor to them. I topped the Fish with a slice of Kraft Deli Style Sharp Cheddar Cheese and served it on a Aunt Millie’s Live Carb Smart Hamburger Bun (2 carbs).

 

 

 

 

 

 

I also baked some Ore Ida Tater Tots as I was baking the Fish. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Baked Tater Tots

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. 74 degrees with rain on and off all day. I saw on the news around Noon there would be a break in the rain so Mom and myself took off for Jungle Jim’s. They had a few items on sale I needed. It’s strange being out again and almost everyone had no mask on! It’s good to be getting back to normal again, I hope it works out for all of us. Back home I just did a few things around the house. For Dinner tonight I prepared Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 

I love my Fish and Seafood, especially the Florida Gulf Coast Grouper. When we went to Jungle Jim’s this afternoon I picked up some of the Grouper they had on sale, couldn’t pass that up! They also had Orange Roughy on sale which I purchased also. I first washed the fillet off in cold water and then cut the huge fillet into 4 smaller fillets, keeping 1 out for Dinner and froze the other 3. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Seasoned Breading Mix. Shook until the fillet was well coated. Shook off the excess. Then I got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful and these were perfect!

 

So as my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. I always love the combo of Fish and Potatoes! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Fish Sandwich Fillet Sandwich w/ Baked Tater Tots

 

To start my day off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 38 degrees, cloudy and windy outdoors today. After Breakfast I had to go the bank and then stopped by Wendy’s and picked up Breakfast for Mom. Back home it was Straighten the Pantry Day. Cleaned and straightened everything and checked expiration dates on everything. For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

 

I haven’t had a Fish Sandwich and Tater Tots in a while and it sounded good for tonight’s Dinner! I used Van De Kamps – Fish Sandwich Fillets for my Fish, which I haven’t had in quite some time. Very easy to prepare. Removed the Fish from the plastic pouch. Heated the oven at 425 degrees. Placed the Frozen Fish Fillets in a single layer evenly on a baking sheet. Place the pan on the oven rack. Bake uncovered 21 minutes. I turned the Fish Fillets over halfway through baking.

 

These turned out perfect! Golden Brown and nice Flavor to them. I topped the Fish with a slice of Kraft Deli Style Sharp Cheddar Cheese and served it on a Healthy Life Wheat Hamburger Bun.

 

 

 

 

I also baked some Ore Ida Tater Tots as I was baking the Fish. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Mango/Tea Snapple to drink.

To start my day off I had my morning cup of Bigelow Decaf Green Tea. 77 degrees and sunny out today. I went and had Mom’s car washed and then stopped by Wendy’s and picked up Breakfast for her. Beautiful day out there today, good day to do some yard work. So I got the cart out along with the leaf blower, rake and hedge clippers. Raked some leaves, and yes some of the trees the leaves are falling, and cut down some bushes that are done for the year. When done I took the cart out for a spin around the neighborhood. For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

Today’s Menu: Roast Beef and Swiss Sliders w/ Baked Tater Tots

 

 

 

For Breakfast this morning I Had Scrambled Eggs, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Partly cloudy and 63 degrees outside today. Did a load of laundry after Breakfast. Later got my mask on and the the leaf blower and cart out and cleaned around the house and raked. Then took the cart out and went around the neighborhood. Gave a neighbor a hand moving some items out of his shed. As the isolation continues. Ohio had an increase of cases the last 2 days, not good. For Dinner tonight I prepared Roast Beef and Swiss Sliders w/ Baked Tater Tots.

I was able to buy some Boar’s Head Roast Beef, Sweet Sliced Ham, and Swiss Cheese from my pick up order from Kroger. Also picked up some Kroger Whole Wheat Slider Buns. To make the Sliders I’ll need Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Boar’s Head London Broil Roast Beef, Boar’s Head Imported Switzerland Swiss Cheese, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp.Worcestershire Sauce, 2 tbsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. Hellmann’s Dijonnaise Creamy Mustard Dijon Mustard.

 

So next I made my Bun Topping Sauce. I grabbed a small size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worcestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it. You can make your own adjustments depending on your taste. I added extra Poppyseed Dressing and Dijon Mustard.

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham and on top of each bottom Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of the Swiss Cheese on top of the Ham, made these on 1/2 the Buns. On the other 1/2 i used the Roast Beef and Swiss Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders and Baked Roast Beef are incredible! I normally just use Ham but we used Roast Beef also and these turned out just as good! The Ham, Roast Beef, and Swiss Cheese all great but the Topping Sauce makes this Dish. The Sauce gives it such great flavor, love these Sliders!

 

 

 

I also baked some Ore Ida Tater Tots that I served with some Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Smart Pop – Pop Corn along with a Diet Dr. Pepper to drink. Stay safe everyone!

It’s a special day today, My Dad would have been 98 today! We miss you and love you Dad.
To start this Friday morning off I had a Jimmy Dean Simple Scramble – Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Love these, so easy to prepare and make a good Breakfast. Plus they are only 150 calories and 3 carbs per cup! Sunny and 85 degrees out today, with a high pollen and mold count! So I wasn’t outside a whole lot today with my allergies as they are. Got the leaf blower and cleaned off the deck and driveway areas. Not a whole lot going on today. For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 

 

 

 

I was out of the Gulf Coast Grouper until my friends got back from Florida a couple of days ago. They dropped off a couple of bags of Grouper they had caught a few days ago from the Gulf Coast. I had the fillets in the freezer, laid a fillet in the fridge overnight to thaw. I rinsed the Grouper in cold water and dried it on a paper towel. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. For Breakfast I had a Poached Egg and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. Well I finally found a good and reliable Carpet place. They are coming over for the measurements for my bedroom and the bath room. Sunny and 88 degrees, and low humidity! Did a few things around the yard. After Lunch I went to Walmart, we needed a new Water Hose. Back home I took a spin around the neighborhood and enjoyed the afternoon. For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

To start the day off I Poached an Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. Then I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with my morning cup of Bigelow Decaf Green Tea. Same weather outside! Passing thunder storms, humid, and 80 degrees. We’ve had so much rain in this are, like a lot of country. There’s flooding throughout our area. Friday is supposed to be sunny and clear, hope they are right! For Dinner tonight its Seasoned Grouper w/ Baked Tater Tots and Johnny Cakes.

 

 

 

 

 

I purchased the Grouper while at Jungle Jim’s International Market. They had them on sale and I just couldn’t resist from buying 3 fillets. I have a couple of the Gulf Coast Groupers in the freezer but I can’t walk away from a sale!

 

 

 

 

 

 

I rinsed the Grouper in cold water and dried it on a paper towel. I then sliced the Grouper into smaller pieces. To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillet was well coated. Shook off the excess off. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

 

 

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.

 

 

 

 

 

 


I also made a batch of Johnny Cakes. Sort of last minute add on, Mom wanted some. To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner. I took some of the Johnny Cakes and 3 Bean Turkey Chili over to Dad at the rehab center, which he loved. For Dessert/Snack tonight a bowl of Skinny – Pop Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Lemon Pepper and Cumin Crusted Walleye Fillet w/ Baked Tater Tots

 

 

To start this Friday morning off I had a Jimmy Dean Simple Scramble – Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Love these, so easy to prepare and make a good Breakfast. Plus they are only 150 calories and 3 carbs per cup! The same weather outside again. Passing rain and thunderstorms, humid, and 79 degrees. Had to go to the local Kroger to pick up a couple of items and a prescription for Mom. Cleaned the Kitchen and then took it easy for the afternoon. I’m still dealing with my allergies, everyone around here is suffering! For Dinner tonight Cumin Crusted Walleye Fillet w/ Baked Tater Tots.

 

 

 

I came across the recipe on the Diabetic Gourmet Magazine website, CUMIN-CRUSTED FISH FILLET WITH LEMON. I’ll be using Walleye as my Fish of Choice. Then for Seasoning I’ll need; Ground Cumin, Thyme, Paprika, Lemon Pepper, and Parsley. I left the original recipe and it’s web link at the end of the post. But after thinking about it I’m going to use Zatarain’s Lemon Pepper Breading Mix. I did add a bit of Ground Cumin to the Breading Mix. I’m all for making Cooking easier while keeping the flavors and taste. I had the Walleye in the freezer in a plastic Hefty Bag. Laid it in the fridge overnight to thaw. To prepare it, in a pie pan I added the Zatarain Mix. Rubbed the mix on both sides of fillets.

 

 

 

Then in a large skillet, set over medium heat, heat Extra Light Olive Oil. Add the Walleye and cook until browned on both sides, about 4 minutes per side. Sprinkled with parsley and done! Love all the Zatarain’s Mixes on Fish and Seafood!

 

 

 

 

 

 

To go with my Walleye, as it was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

CUMIN-CRUSTED FISH FILLET WITH LEMON

Ingredients

1/2 to 1 Tbsp ground cumin
1/4 tsp thyme
1 tsp paprika
1/2 tsp lemon pepper
1 lb whitefish fillets (like cod, walleye or halibut)
1/2 Tbsp canola oil
2 Tbsp chopped parsley
lemon wedges

Directions

1 – In a small bowl, mix together cumin, thyme, paprika, and lemon pepper.
Rub spice mixture on both sides of fillets.
2 – In a large skillet, set over medium heat, heat canola oil. Add fish fillets and cook until browned on both sides and fish is opaque in the center about 4 minutes per side.
3 – Sprinkle with parsley and serve immediately with lemon wedges.

Recipe Yield: Yield: 4 servings.Serving Size: 4 oz (125 g) fish.

Today’s Menu: Fish Sandwich Fillet Sandwich w/ Baked Tater Tots

 

 

Just a cup of Bigelow Decaf Green Tea this morning for Breakfast. Partly cloudy and 68 degrees out today. Afterward I had to follow my neighbor to the repair shop. He dropped his car off and I gave him a ride back. Then later in the afternoon I took him back to pick his car up. Not much else going on today. For Dinner tonight I prepared a Fish Sandwich Fillet Sandwich w/ Baked Tater Tots.

 

 

 

 

 

I used Van De Kamps – Fish Sandwich Fillets for my Fish. Having these reminds me of the Lunch Menu in High School every Friday! Anyway very easy to prepare. Removed the Fish from the plastic pouch. Heated the oven at 425 degrees. Placed the Frozen Fish Fillets in a single layer evenly on a baking sheet. Place the pan on the oven rack. Bake uncovered 21 minutes. I turned the Fish Fillets over halfway through baking.

 

 

 

 

 

These turned out perfect! Golden Brown and nice Flavor to them. I topped the Fish with a slice of Kraft Deli Style Sharp Cheddar Cheese and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun.

 

 

 

 

 


I also baked some Ore Ida Tater Tots as I was baking the Fish. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
