Today’s Menu: Roast Beef and Swiss Sliders w/ Baked Tater Tots

 

 

 

For Breakfast this morning I Had Scrambled Eggs, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Partly cloudy and 63 degrees outside today. Did a load of laundry after Breakfast. Later got my mask on and the the leaf blower and cart out and cleaned around the house and raked. Then took the cart out and went around the neighborhood. Gave a neighbor a hand moving some items out of his shed. As the isolation continues. Ohio had an increase of cases the last 2 days, not good. For Dinner tonight I prepared Roast Beef and Swiss Sliders w/ Baked Tater Tots.

I was able to buy some Boar’s Head Roast Beef, Sweet Sliced Ham, and Swiss Cheese from my pick up order from Kroger. Also picked up some Kroger Whole Wheat Slider Buns. To make the Sliders I’ll need Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Boar’s Head Sweet Sliced Ham, Boar’s Head London Broil Roast Beef, Boar’s Head Imported Switzerland Swiss Cheese, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp.Worcestershire Sauce, 2 tbsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. Hellmann’s Dijonnaise Creamy Mustard Dijon Mustard.

 

So next I made my Bun Topping Sauce. I grabbed a small size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worcestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it. You can make your own adjustments depending on your taste. I added extra Poppyseed Dressing and Dijon Mustard.

 

 

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham and on top of each bottom Bun. You can put as much of the Ham you want on each. I then placed a 1/2 a slice of the Swiss Cheese on top of the Ham, made these on 1/2 the Buns. On the other 1/2 i used the Roast Beef and Swiss Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

 

These Baked Ham Sliders and Baked Roast Beef are incredible! I normally just use Ham but we used Roast Beef also and these turned out just as good! The Ham, Roast Beef, and Swiss Cheese all great but the Topping Sauce makes this Dish. The Sauce gives it such great flavor, love these Sliders!

 

 

 

I also baked some Ore Ida Tater Tots that I served with some Hunt’s Ketchup for dipping. For Dessert/Snack later a bowl of Smart Pop – Pop Corn along with a Diet Dr. Pepper to drink. Stay safe everyone!

Today’s Menu: Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip

 

For Breakfast on this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. 51 degrees and cloudy outside today. I took Mom’s car to the Car Shop to have the oil changed and then stopped and had it washed. Then back home I then took my car up to have it washed. We now have 2 clean cars! Not much else going on today. For Dinner tonight its Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip.

 

 

 

 

 

I was going to prepare Stir Fry tonight but me or Mom just wanted something a bit lighter tonight so we had Roast Beef and Cheddar on Whole Grain Bread w/ Chips and Dip. Just seemed like a good day for a Sandwich for Dinner! For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink. Till tomorrow!

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. It is freezing cold outside this morning, minus 9 degrees below zero! We ended up with about 7 inches of snow overnight also with a high of just 16 degrees. So it’s cold , windy, and icy outside but warm and snug inside. We had about an inch of snow on the ramp leading outside. I had to wait for my neighbor to come over to dig me out before I ventured outside to try to clean up a bit. The same neighbor used his snow blower to get some of it off the driveway, so very cold out. Cleaned the house today and then watched the NFL Playoffs the rest of the afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

Just seemed like a good day for a Sandwich for Dinner! Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning it was Ham and Eggs. I had purchased a small Meijer Sliced Pepper Ham. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start an Icy and Cold morning. We got freezing rain overnight and snow on top of it, about 1/2 an itch. It all made for some slick roads out there, a lot of wrecks. It got to 40 degrees later and cloudy for the afternoon. I’m usually up by 6:00 am. or so but I slept in till 8:00 this morning! It felt good to get that extra sleep. Not much going on outside today so I did things around the house today. Cleaned the house and then some repairs. I replaced some of the lower wall trim around the house. I run into it sometimes in my Hoveround Mobility Chair and damage it. So a while back I bought a long strip of the wood trim at Home Depot. That way I have it on hand to replace it from time to time. So I stayed busy inside all day. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can’t Believe It’s Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I’m not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.
