Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

 

 

 

Started the day off with 1 Egg Sunnyside Up, fried a SayersBrook Bison Ranch Fillet Mignon, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I love those Fillet Mignon! After I had my Breakfast I went to Meijer for a few items and to pick some Catfish Nuggets up for tonight’s Dinner. Mostly sunny and 52 degrees out today. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

 

 

Picked up the Catfish Nuggets at Kroger earlier. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

 

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a potato cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

 

 

 

 

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For Dessert later a bowl of Breyer’s Vanilla Carb Smart Ice Cream.

 

 

 

 

Manischewitz Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Started the day off with 1 Egg Sunnyside Up, 3 slices of Jennie – O Turkey Bacon, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. After I had my Breakfast I went to Walmart for a few items and by Kroger to pick some Catfish Nuggets for tonight’s Dinner. Not a bad day outside today, partly cloudy and 76 degrees out. A little cooler today and no humidity. Got the cart out and did a little yard work and then took a ride around the neighborhood and down by the lake. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Today’s Menu: Seasoned Haddock w/ Oven Roasted Fingerling Potatoes and Mini Ears of Sweet Corn

 

 

For Breakfast this morning I had another of the al fresco Apple Maple Chicken Sausage Breakfast Patties. I love this Sausage, so good! I found more of these at Meijer the other day and picked a few of the packages up. I love making these and making them into a Breakfast Sandwich, the patties are the perfect size for English Muffins. I fried the patty for 8 minutes and as that was cooking I toasted a Healthy Life Whole Grain English Muffin. Along with my Breakfast Sandwich I had that morning cup of Bigelow Decaf Green Tea. Passing showers this morning and then mostly sunny and 75 degrees. I got my cart out of the shed and cleaned it today, a much needed cleaning!Then repotted a couple of plants for Mom. For Dinner tonight its Seasoned Haddock w/ Oven Roasted Fingerling Potatoes and Mini Ears of Sweet Corn.

 
I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and having the last bag tonight. So I grabbed one of the plastic bag and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 
Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s!

 

 

 

I also boiled some Green Giant Mini Ears of Sweet Corn. If you’ve never tried the Green Giant Corn you need to! It’s frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Our streak of Hazy, Hot, and Humid continues. Really humid out there today! My dad is still in the hospital, they traced down the internal bleeding and it was nothing serious. He will have to go through a few treatments to correct it though. Also he’s having a lot of trouble breathing and he’s very weak, so he might be in there a few days. We had a heavy wind and thunder-storm move through late last night. Spent some of the day picking up branches and blowing the leaves and debris. Just cooking for myself tonight, Mom’s having dinner up at the hospital with Dad tonight. So I prepared a Seasoned Tilapia Sandwich w/ Baked Steak Fries.

I had purchased the Tilapia from Costco a while back and had them in the freezer. I grabbed 2 of them from the freezer and laid them in the fridge overnight to thaw. I fried 2 fillets one for my dinner tonight and one for my lunch tomorrow. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled it in Zatarain’s Crispy Southern Fish Fri Breading Mix. Using a Cast Iron Skillet,I Pan fried them in Canola Oil about 3 minutes per side. They came out golden brown and delicious! Served it on a Perfection Deli Mini Wheat Sub Bun.

 
For a side for my Fish Sandwich I baked some Ore Ida Steak Fries. Served these with a side of Hunt’s Ketchup. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Went out this morning around 6:50 this morning to get the morning papers and it was a bit nippy out! The wind was howling, with snow flurries, and the wind chill made it feel like the mid 20’s. The high is only going up to around 40 but with the wind chill will having it feel like the 30’s. And Winter begins! Did some laundry and settled in for a day of College Football. For dinner tonight Fried Okeechobee Crappie w/ Hash Browns and Cut Green Beans.

I love my Fish, all Fish, but my favorite eating Fish has to be Crappie, Lake Okeechobee Crappie! But my stock of the Crappie has now ran out. Very sad when the year’s supply is gone. So I laid my last 2 bags of the Crappie out of the freezer and in to the fridge overnight to thaw. To start I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As always they came out Golden Brown and delicious! It’s hard to even describe how much I love eating Crappie. especially the Lake Okeechobee Crappie. All out of Crappie until next year!

To go with the Crappie I prepared some Hash Browns, Potatoes are perfect with Fish. I always use Simply potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I heated up a can of Del Monte Cut Green Beans, Green Beans go well with any meal as far as I’m concerned. Green Beans was my favorite Vegetable growing up even. One fantastic Crappie Meal tonight, but my last for a while. For dessert later a SO Delicious Dairy Free Coconut Milk Mini Ice cream Sandwich, one of my new dessert favorites. Made with Coconut Milk and only 80 calories and 12 net carbs per serving (1 Mini Sandwich).

Wow a perfect day out today! About 78 degrees, sunny, and a bit of a breeze. Had an early doctor’s appointment with dermatologist, just a 6 month check up, got the car washed, and ran a couple of errands, then home for the day. Cleaned up the grill a bit and then got the cart out to enjoy the rest of the day. For dinner tonight it’s a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

 

 

 

 

Still using the bag of Tilapia I had purchased from Walmart. Good thing to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun.

 

 
For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

A fairly nice day out today. The flowers and trees are really starting to come out now. The harsh Winter took its toll though on a lot plants here in the neighborhood. Woke up hungry and wanting some Turkey Goetta. Started frying some up and my Mom caught a whiff of them and she wanted some too. Good way to start the day with a little Goetta! For dinner tonight I prepared, Fried Okeechobee Crappie w/ Hash Browns and Sliced Carrots.

 

 

 
My Mom’s cousin and her husband brought me my annual supply of Okeechobee Crappie, or Specks as they call them in Florida! I laid a bag out in the fridge overnight to thaw. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side.As always they came out Golden Brown and delicious! Oh my I can’t even describe how much I love eating Crappie.

Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Then I also heated up a small can of Walmart Brand Sliced Carrots along with a slice of Klosterman Wheat Bread. For dessert later something new, Fiber One 90 Calorie Chocolate Fudge Brownies. Tried these the other day and really like them. Good Chocolate Flavor, moist, and their only 90 calories 12 net carbs per serving (1 Brownie).
