Today’s Menu: Jambalaya with Hardwood Smoked Turkey Sausage and Baked Italian Bread

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger around 7:00 this morning, wanted to be in and out before it got crowded. Took the groceries home and put away and then went back out and picked up Breakfast for Mom and stopped by the Bank for her. Then later gave my neighbor a hand with a little yard work. I got the cart out of the shed and did most of it for her. She has trouble getting around, she’s 91. Then for Dinner tonight I prepared Jambalaya with Hardwood Smoked Turkey Sausage and Baked Italian Bread.

I used Zatarain’s New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya and Butterball Hardwood Smoked Turkey Sausage. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. To prepare it I just followed the easy instructions on the box. Mixed 2 1/2 cups of Water and 2 tablespoons of Extra Virgin Olive Oil, and brought it to a boil. Added the Zatarain’s Jambalaya Mix and my Smoked Sausage, I had sliced the Sausage into small bite size pieces before adding. Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes till most of the moisture had been absorbed. Removed it from the heat and let it rest for about 5 minutes before I served it.

The Butterball Hardwood Smoked Sausage and Zatarain’s New Orleans Style Jambalaya Mix make a perfect pairing! Love this Sausage, nice seasoning and delicious! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish. I also baked a loaf of Meijer Italian Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Jambalaya with Cajun Style Smoked Sausage and Baked Italian Bread

For Breakfast this morning I Poached an Egg and served it on a toasted Thomas Light English Muffin. I also heated up 2 Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. Cloudy and 74 degrees out, with rain showers in the afternoon. After the night I had, I had no plans on doing too much. I had one of those long and sleepless nights while dealing with Phantom Pains, and they were bad! So I spent much of the afternoon catching up on some rest and sleep. For Dinner tonight I prepared Jambalaya with Cajun Style Smoked Sausage and Baked Italian Bread.

For the Sausage I used something new, Zatarain’s Cajun Style Smoked Sausage. I came across this at Meijer the other day and thought I would give it a try.

I used Zatarain’s New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish. I also baked a loaf of Meijer Italian Loaf Bread. For Dessert later a bowl of Breyers Carb Smart Vanilla Bean Ice Cream.

Today’s Menu: Leftovers – Shrimp and Smoked Turkey Sausage Jambalaya

Our nicest day outside in quite sometime! Sunshine all day and a high around 40 degrees, a heat wave! With warmer weather on the way next week. Had a light Breakfast and worked out early this morning and the off to Walmart. Needed quite a few things, loaded up on some Jennie – O Turkey Products. Came back home and went and got Mom’s car washed for her. The local Car Wash’s are making a fortune today! For dinner tonight it’s leftovers, I reheated the Shrimp and Smoked Turkey Sausage Jambalaya.

Shrimp and Smoked Turkey Sausage Jambalaya 007
I had froze it from a few nights ago but it just sounded good so I let it thaw overnight in the fridge. When ready I put it in a medium size sauce pan and reheated it on medium heat till it was reheated thfrough. I really love this stuff, and the leftovers were just as good as the first night I prepared it! A little hot sauce and it was ready to go. I’ve left the original post with the instructions and ingredients below.

With 10 minutes left I added my Jumbo Shrimp, till fully cooked and turned pink. Removed it from the heat and let it rest for about 5 minutes before I served it. The Smoked Turkey Sausage and Jumbo Shrimp made a fantastic pairing with the Jambalaya Mix! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish.

Today’s Menu: Shrimp and Smoked Turkey Sausage Jambalaya

Shrimp and Smoked Turkey Sausage Jambalaya 007

Started my day off with a Healthy Life Whole Grain English Muffin and topped it with Smuckers Sugarless Blackberry Jam. Then got my workout in and then off to Kroger for a few items. It was very busy to be 7 am. Again mass hysteria has set in due to the forecast of that for letter word S-N-O-W! People in this are crack me up! Anyway back home after that and cleaned the house. For dinner tonight it’s Shrimp and Smoked Turkey Sausage Jambalaya.

I used Zatarain’s New Orleans Style Jambalaya Mix (Reduced Sodium) for my base for the Jambalaya. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes till most of the moisture had been absorbed. With 5 minutes left I added my Jumbo Shrimp, that I cooked ahead of time as the Jambalaya was cooking. Removed it from the heat and let it rest for about 5 minutes before I served it. The Smoked Turkey Sausage and Jumbo Shrimp made a fantastic pairing with the Jambalaya Mix! I added a couple of shakes (or more) of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious hearty dish.

I also had a slice of Klosterman Wheat Bread that I topped with I Can’t Believe It’s Not Butter. For dessert later a SO Delicious Dairy Free Minis Vanilla Sandwich. Came across these a while back and really enjoy them, SO Delicious Dairy Free Minis Vanilla Sandwiches. Love these, fantastic flavor and only 80 calories and 12 net carbs.

Today’s Menu: Leftovers: Shrimp and Smoked Turkey Sausage Jambalaya

Shrimp and Smoked Turkey Sausage Jambalaya 004
On my last visit to Kroger, they finally had Healthy Life Whole Grain English Muffins back in stock. It’s been a couple of months, if not more, since they had any. They checked with the Bread Distributor which told Kroger they couldn’t get in any to stock for an unknown reason. But they have it now! I had been using Thomas English Muffins, which are okay but Healthy Life has fewer calories, carbs, fat, and taste a whole lot better! Another slow day around here again. Ran a couple of errands for Mom, stopped and got gas, and stopped by the bank and back home. For dinner tonight it’s Leftovers: Shrimp and Smoked Turkey Sausage Jambalaya.

Shrimp and Smoked Turkey Sausage Jambalaya 002
I had prepared the Jambalaya a couple of nights ago and froze the leftovers. So I was searching the freezer for something to lay out for my dinner, I stopped when I seen the Jambalaya! I set it in the fridge overnight to thaw. To reheat it I used a sauce pan, added the Jambalaya, put the lid on the pan and let it reheat on medium low. The Jambalaya freezes and reheats great. Everything just as good as the first time. For dessert later a Jello Sugar Free Dark Chocolate Mousse. Below is the full recipe and post from a couple of nights ago.

Today’s Menu: Shrimp and Andouille Sausage Jambalaya and Baked California Sourdough Bread

Shrimp and Andouille Sausage Jambalaya and Baked California Sour 006

Heavy rain on and off all day and a high in the low 50’s. Got the cart out and did a little maintenance on it and cleaned it up a bit under the carport awning. Sure glad I invested in that, it gets me out and gets me to the lake if I want to go fishing, yard work and anything else I have to do outside. For dinner tonight it’s Shrimp and Andouille Sausage Jambalaya and Baked California Sourdough Bread, one of my favorites!

I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to kick things up! Also baked a California Sourdough Mini Boule. This makes one delicious Jambalaya Dish. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.
