Today’s Menu: Red Beans and Rice w/ Hardwood Smoked Turkey Kielbasa

A little chilly out there this morning, about 22 degrees! It was supposed to warm up to above 50 degrees but I don’t think it ever reached 50 with cool breeze blowing all day. Went to walmart I needed a new Hair Trimmer, the old one finally died after about 15 years. Picked a small Jennie – O Turkey, about 1.79 lbs, for easter that I’ll prepare for Easter. For dinner tonight, a Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa along with Red Beans and Rice.

I can only find the Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa at Target. So last time i was there I picked up a couple of packages of it. To start I prepared the Red Beans and Rice. I used the Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice. Easy way to have some excellent Red Beans and Rice, plus it’s Reduced Sodium. If you love Red Beans and Rice you’ll love this! To prepare; In a 2 quart saucepan, combine 2 3/4 cups water, 2 tablespoons olive oil or margarine and Zatarain’s Black Beans and Rice. Stir well and bring to boil. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. As the Red Beans and Rice is cooking I cut the Turkey Kiebasa in ½-inch slices. With about 12 minutes of cooking time left for the Beans and Rice I added it the mix. Continued cooking another 13 minutes or so and served. One good combination, Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice and the Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa. The flavor of Kiebasa paired with red beans and Rice is perfect, I did add a couple of shakes or so of Frank’s Red Hot Sauce. Also had a slice of Klosterman Wheat Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Lot of rain overnight and showers on and off all day. Rain and 50 degrees today, Snow Flurries and 30 for Saturday, 70 degrees and Sunny for Monday, “Welcome to Ohio Weather!” Had to pick up a couple of prescriptions and then spent most of the day at the rehab center with Dad. They told us today that he should be able to come home sometime next week. Tried a new Jennie – O Turkey product for dinner tonight, the Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa. I prepared Red Beans and Rice w/ Hardwood Smoked Turkey Kielbasa.

I had stopped at Target yesterday morning to pick up a couple of packs of Jennie – O Turkey Franks when I saw that they had the Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa. First time I had seen this in store and had to try it!

 

 

 

 

 

Red Baeans and Rice Kielbasa 002
To start I prepared the Red Beans and Rice. I used the Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice. Easy way to have some excellent Red Beans and Rice, plus it’s Reduced Sodium. If you love Red Beans and Rice you’ll love this! To prepare; In a 2 quart saucepan, combine 2 3/4 cups water, 2 tablespoons olive oil or margarine and Zatarain’s Black Beans and Rice. Stir well and bring to boil. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. As the Red Beans and Rice is cooking I cut the Turkey Kiebasa in ½-inch slices. With about 12 minutes of cooking time left for the Beans and Rice I added it the mix. Continued cooking another 13 minutes or so and served. One good combination, Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice and the Jennie – O Fully Cooked Hardwood Smoked Turkey Kielbasa. The flavor of Kiebasa paired with red beans and Rice is perfect, I did add a couple of shakes or so of Frank’s Red Hot Sauce. Also had a slice of Klosterman Wheat Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

 I guess we’re in for a cold week or so from I’m hearing on the news. This weather is really getting old, it seems as the Ground Hog was right! It was sunny out all day but we had a wind chill that made feel in the teens to the single digits all day. Think warm Spring Days! For dinner tonight it’s Hardwood Smoked Turkey Sausage and Shrimp w/ Red Beans and Rice.

 

 
To make this I used one of my favorites Smoked Turkey Sausage, Butterball Hardwood Smoked Turkey Sausage. For me this is a perfect Smoked Turkey Sausage; fantastic flavor, great seasoning, and cooks up just right. To prepare it I pan fried it in a medium size skillet. Just sprayed the skillet with Pam and fried them on medium heat about 12 minutes, turning the sausages frequently until done. When done I sliced 1 1/2 of the two sausages up into quarter size pieces and set aside. Then for the Shrimp I had a bag of Kroger Jumbo Shrimp in the freezer. I sat them in the fridge overnight to thaw. I rinsed them cold water and they were ready to go when it was time to add them to Red Beans and Rice. I added the Shrimp to the mix last because the Shrimp doesn’t take long to get done.

Then for the Red Beans and Rice I used Zatarain’s New Orleans Style Reduced Sodium Red Beans and Rice. Easy way to have some excellent Red Beans and Rice, plus it’s Reduced Sodium. Cleaned out a couple of closets today, which was way over due.Amazing the stuff you can find that you had forgot about. That was about the extent of my day. For dinner tonight a Hardwood Smoked Turkey Sausage w/ Red Beans and Rice along with a slice of Whole Grain Bread.

 

 

 

 

 

I had this a while back and had frozen the leftovers, I wasn’t sure how the Beans and Rice would hold up after freezing. I let it thaw in the fridge overnight. To reheat it I emptied the container in a small sauce pan on medium heat. When done I added a few shakes of Frank’s Red Hot Sauce and it was ready! The Beans and Rice along with the Sausage froze and reheated perfectly and tasted as good as the first time I had made it!

One delicious meal! For dessert later Weight watchers Chocolate Swirl Ice Cream Bar.
