Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 

 

 

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. After Breakfast I went with Mom to Jungle Jim’s International Market in near by Fairfield, Ohio. Love shopping there. The biggest grocery store around! Picked some Boar’s Head Cold Cuts, Snapple, Half Runner Green Beans, 2 small Lobster Tails, and a Haddock Fillet. Too hot and humid to do a lot outside today, stayed in with the A.C.! For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

 

 

 

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Jungle Jim’s earlier. I had already rinsed the fillets off in cold water and cut the fillet into 4 pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love this Haddock it cooks up so nice and easy and I love the flavor and how meaty it is.

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 

For Breakfast this morning I Scrambled a couple of eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees, rain and thunderstorms moving in toward evening. Had the other half of the outside deck painted, looks great. Went to Meijer Lawn and Garden and picked up another bag of the dark Mulch. Ran a little short of Mulch for around the tree out front. Got the front and side yards looking good! Next is the back yard flower bed and replacing some skirting around the back of the shed. For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

 

 

 

 

Had not had Haddock in a while and it sounded good! I had purchased the Haddock from Kroger a couple of weeks ago and had them in the freezer. I sat the bag of them in the fridge overnight to thaw. I had already rinsed the fillets off in cold water and cut the fillets in half before I froze them. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until the pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 

 

For Breakfast this morning I Scrambled a couple of Eggs, topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a few shakes of Frank’s Hot Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 63 degrees out, rain late in the day. After Breakfast I headed to Meijer, I needed a few items I needed to make tomorrow night’s Dinner. Back home did some work outside. Cleaned off the deck and driveway areas. Then got the cart out and raked some leaves in back and side yards. Leaves are already falling! For Dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

 


I had purchased a Haddock fillet from Kroger the day before. I rinsed the fillet off in cold water and patted dry with a paper towel and had them in a plastic bag in the fridge. To prepare it I sliced it in half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Today’s Menu: Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots

 

 

 

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Healthy Life seasoned-haddock-w-creamy-parmesan-risotto-and-sliced-carrots-006Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After a night of heavy rain and thunder storms, the morning was quiet but a lot cooler. We had a record high of 76 degrees yesterday and a high of 41 degrees today! There goes my Sinuses again!Just as soon as they get adjusted to warm weather, here comes the cool weather back. Cloudy and breezy out. After Lunch I went up to see Dad for a while at the rehab center. Back home took a quick nap and watched some College Basketball. For Dinner tonight its a Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots.

 
I had purchased 2 Haddock fillets from Kroger the day before. I rinsed both fillets and cut into smaller pieces. I froze Seasoned Haddock w Green Beans and Fried Polenta 002one bag and kept the other one out for my Dinner tonight. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is. These make a great Fish Sandwich also!

 

 

Baked Salmon W Creamy Parmesan Risotto and Whole Baby Carrots 006

 

 

For one side dish I made some Creamy Parmesan Risotto. As always I used Lundberg Creamy Parmesan Risotto. Quick, easy, and delicious Risotto dish. Ready in about 25 – 30 minutes.

 

 

 

Chicken ‘n’ Noodles w Sliced Carrots and Whole Grain Bread 003

Then I also heated up a can of Del Monte Sliced carrots. These are so much easier to prepare than boiling fresh Carrots, and they taste just as fresh and good. I also baked a 1/2 loaf of LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

 

 

 

 
Lundberg Creamy Parmesan Risotto

For Breakfast I had a Chili and Cheese Omelet. I used Egg Beater’s Egg Whites, 3 Bean Buffalo Chili, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a slice of Toasted Healthy Life Whole Grain Bread. I could put this Chili on everything! After Breakfast I headed to Meijer and stopped by Kroger for a couple of items. There was one heavy frost out there this morning. Sunny day out but cold with a cold wind blowing all day. We might be headed to our normal Winter days. Back home did some light cleaning around the house. For dinner tonight I prepared a Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes.

Fried Okeechobee Crappie w Golden Hominy Cut Green Beans 003
For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Then for another side dish I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Busy day around the house today. We are having a new roof put on the house and our shed today. Which also means a whole lot of noise. Another beautiful Fall day out again, we are on a roll weather wise. Sunny and a high in the 70’s. Did a load of laundry for Mom and cleaned up around the house. Didn’t get to go see Dad today, I had to stick around the house while the repairs are going on. For dinner tonight I prepared a Seasoned Haddock w/ Multi – Grain Medley and 3 Bean Salad.

Well they finally had Haddock back in stock at the Kroger I go to. They told me a couple of weeks ago they were no longer going to carry it, they just weren’t selling enough of it. But Monday when I was there they said they had brought it back due to so many complaints. Anyway I purchased 3 nice size fillets that I’ve already cleaned and cut into smaller fillets and put in the freezer. I did keep some out for my dinner tonight. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

For one side dish I prepared some Minute Multi Grain Medley. I love the Minute Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it’s only 160 calories and 31 net carbs per serving.

I also had some Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these chilled. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

I had a fillet of the Haddock in the freezer that I let thaw overnight in the fridge. To prepare it I cut the fillet into smaller pieces. Then rinsed the fillet in cold water and patted dry with a paper towel. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites.

 

Seasoned Haddock w Whole New Potatoes and Asparagus Cuts and Tip 002
For one side I prepared a can of Del Monte Whole New Potatoes. Easy way to get a delicious Potato dish and just as good as fresh! Then I also heated up a cam of Del Monte Asparagus Cuts and Tips. Just heat and serve, again just as good as fresh and lot easier to prepare. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Another day of sunshine here in West Chester! A bit hotter and a bit humid in the late afternoon but not too bad. For Seasoned Haddock w Green Beans and Fried Polenta 009Breakfast I had a Healthy Life Whole Grain English Muffin topped with Smucker’s Sugarless Blackberry Jam, and a cup of Bigelow Decaf Green Tea. Need a loaf of Bread and Eggs so I went to the Kroger up the road. While there I checked to see if they finally had the Bluegrass Lean Brats in yet, and they did! My email campaign to Bluegrass Meats paid off, and they are in all local Kroger in the area. Again thank you to Bluegrass Meats for following up on this and making it happen. Using the Lean instead of the normal Brats is a difference of 100 calories per Brat, huge difference! Anyway for dinner tonight I prepared a Seasoned Haddock w/ Green Beans and Fried Polenta. I did grill a Bluegrass Lean Brat for Lunch though!

For one side I prepared Fried Polenta. It’s been a while since I had Polenta so when I was at Jungle Jim’s Market last Seasoned Haddock w Green Beans and Fried Polenta 004week I picked a roll up. I use Frieda’s Organic Traditional Polenta. it comes in a roll, so all you have do is slice it and then prepare it the way you want. To make it I’ll need Egg Beater’s, Progresso Italian Style Bread Crumbs, Kraft Reduced Fat Grated Parmesan Cheese, and Extra Virgin Olive Oil. To prepare it just lightly coat the slices in the Egg Beater’s and gently shake off the excess. Then dip each slice in the bowl of bread crumbs and coat well. Then I fried the slices, heated the Extra Virgin Olive Oil about 1/4″ deep in a skillet and fry the slices for 2-3 minutes on each side. They fry up golden brown with a nice crust, flavorful, and a moist center.

 

 

 

Then I also had some Green Beans. My Mom had gone to Jungle Jim’s and purchased a mess of them and prepared them, love Green Beans especially when they’re fresh. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

I was up and around about 6:10 this morning and it was 12 degrees and a wind chill of 0, and that was our high for the day. It started falling after that and remained below 0 with the wind chill and overnight and late morning we got an additional 4-5 inches of snow. A little more than what they thought we were going to get, then late afternoon it started again and we got another 1-2 inches. Winter is making up for our mild Winter we had so far! For dinner tonight it’s a Seasoned Haddock w/ Cut Green Beans and Potato Pancakes.

Haddock Potato Pancakes 001
When I make Potato Pancakes I always use Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

 

 

 

 

Manischewitz Potato Pancake MixMANISCHEWITZ Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Cold morning to start with a breeze blowing for a wind chill with it. Had Breakfast and worked out afterwards. Went to Costco to stock up on some bulk items and a few Pharmacy items for Mom and Dad. When are Beef prices going to stop going up? Even at Costco it was way to high for roasts or steaks that I was going to pick up for Mom. i did pick up a big package of Tilapia Fillets, nice size fillets. Also picked up some Canned Vegtables and Cans of Starkist Tuna for the local Free Store and for our Church. Our Church have nights where they Dinners for the Homeless and Needy. For my Dinner tonight I prepared Seasoned Haddock w/ Multi Grain Medley and Sliced Carrots.

 

 

 

I had the Haddock in the freezer so I let it thaw overnight in the fridge. To prepare it I rinsed thSeasoned Haddock and Risotto 001e fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. It’s a meaty delicious and mild tasting fish. I think I could eat Seafood everyday! And good thing, as expensive as Beef and Pork are getting.

 

 

 

For one side I prepared a bag of the Minute Whole-Grain Medley. I used this for the first time a while back and it instantly became one of my favorites. It has Brown Rice, Thai Red Rice, Wild Rice, and QuinMinute Multi Grain Medley (2)oa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish. Also this time I added some Chopped Pecans to it, made a nice addition to the dish! I also heated up a small can of Del Monte Sliced Carrots along with a slice of klosterman Wheat Bread. For dessert later a SO Delicious Dairy Free Minis Vanilla Sandwich.
