Today’s Menu: Fried Red Snapper w/ Hash Browns and Golden Hominy

 

Skipped Breakfast this morning, not really hungry. I did  just have a cup of Bigelow Decaf Green Tea though. Went to Meijer for a few items and back home. Later went over to a Lawn and Garden Center and took a look at few plants and bushes. Back home I planted a couple of bushes I bought in the backyard. Not feeling up to par today so I kicked back the rest of the afternoon. We are watching my cousin’s 2 girls tonight for about 4 hours or so. For Dinner tonight it’s Red Snapper! I prepared a Fried Red Snapper w/ Hash Browns and Golden Hominy.

 

 

 

 

I had purchased the Red Snapper at the Kroger Seafood Department last week. I had it in the freezer so I laid the fillet in the fridge to thaw overnight. To prepare the the fillet, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillets in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Fish Fri. Then shook the bag until the fillets were well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain’s Lemon Pepper Breading Fish Fri is a perfect pairing.

 

 

 

For one side I prepared some Simply Potatoes Hash Browns, I always use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley.

 

 

 

 

 

 

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For a Snack later some Honeycrisp Apple Slices.

Today’s Menu: Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges

 

 

For Breakfast on this rainy Thursday Morning I prepared a Scrambled Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I drove Mom back to Jungle Jim’s. She wanted another bag of the Green Beans and picked up some Beets. Back home it was back to canning the rest of the Green Beans. Then Mom canned the Beets she had bought. Another busy day of canning. For Dinner Tonight I prepared Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges.

 

 

 


While at Jungle Jim’s International Market I just had to go to their Seafood Department! I picked some Haddock, they just got the Haddock in and I to wait a bit until they had it ready. Then I also picked up a an Orange Roughy Fillet, New Zealand caught. I love their Seafood Department, in fact I love the whole store! I’m having the Haddock tonight!

 

 

 

To prepare it I rinsed the fillet off in cold water and patted dry with a paper towel. Next I sliced it in half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

For a side I cooked up some of the fresh Green Beans we bought at Jungle Jim’s. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! And we 14 quarts of canned Beans now!

 

 

 

 

 

Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s! I also baked a loaf of RiverRoad Bake House The family’s favorite Baked Bread. And Meijer is the only store that sells this around here. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Seasoned Haddock w/ Cheesy Cheddar Rotini Pasta

 

To start this morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walgreen’s and picked up a Prescription and then to McDonald’s and picked up Breakfast for Mom. It really hasn’t rained a lot of late and the yards are starting to turn brown. Outside today it’s 87 degrees and sunny. After Lunch got the cart out and did some yard work. Later took a spin around the neighborhood. So for Dinner tonight I prepared a Seasoned Haddock w/ Cheesy Cheddar Rotini Pasta.

 

 

I had purchased a Haddock fillet from Kroger a while back and had it in the freezer. I let it thaw overnight in the fridge. I rinsed the fillet off in cold water and patted dry with a paper towel. To go with my Seasoned Haddock I prepared a new dish, Knorr Pasta Sides Cheesy Cheddar Rotini Pasta. I had heard of the Knorr Products but had never tried them until now. To prepare it; In medium saucepan, bring 1-1/2 cups water, 1/2 cup 2% milk and 1 Tbsp. of I Can’t Believe It’s Not Butter. Stir in contents of package and return to a boil. Reduce heat and continue boiling gently for 10 minutes or until pasta is tender, stirring occasionally. Let stand at least 2 minutes. Stir and serve. Easy to prepare and delicious! Excellent Pasta with good Cheese flavor. I also baked a loaf of the RiverRoad Bake House Garlic Oval Loaf Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Seasoned Haddock w/ Creamy Cheddar Pasta

 

 

To start this snowy morning off I toasted a couple of slices of Healthy Life Whole Grain Bread, Scrambled a couple of Eggs, fried 2 Jennie – O Turkey Breakfast Sausage Links, and made the daily morning cup of Bigelow Decaf Green Tea. It started snowing late yesterday but the ground was to warm and it didn’t stick, at first. Eventually though it started sticking. We’ve had snow flurries on and off most of the day. It was 16 degrees this morning and we had a high of only 31. What happened to our early Spring! The cold looks as though it’s killed all the early flowers that had come out. The cold is here for a few days they say. Sure be glad for warmer weather! Dad is doing better. They thought he had shingles but it turned out to be a rash from an anti biotic they had given him. Not sure when he’s coming home. So for Dinner tonight I prepared a Seasoned Haddock w/ Creamy Cheddar Pasta.

 

I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into smaller pieces. I ended up with 3 bags, I had one the day I purchased them and froze the other 2. So I grabbed one of the plastic bags and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

 

 

To go with my Seasoned Haddock I prepared a new dish, Bear Creek Creamy Cheddar Pasta Mix. I had tried the Bear Creek Potato Soup Mix and Creamy Chicken Pasta, which both were excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Haddock make a perfect pairing! For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and as usual had my morning cup of Bigelow Decaf Green Tea. Outside we had rain on and off for most of the day, about 49 degrees for a high. After Lunch I went to the rehab center to see Dad and while there I went to therapy with him. He’s doing really good with it, might get to home soon! Back home and not a lot going on the rest of the day. For Dinner tonight I prepared Catfish Nuggets w/ Cut Italian Beans and Oven Fries.

 

 

I had purchased the Catfish Nuggets from Kroger and had them in the freezer so I let them thaw in the fridge Catfish Nuggets Rice 003overnight. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. I love using all these Zatarain’s Products!

 

 

Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 003

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

For another side I prepared some Alexia Oven Fries with Olive Oil, Rosemary and Garlic. I think this is the second time I tried these. I picked a couple of bags of these up at Jungle Jim’s International Market on my last visit there. They are already seasoned with Olive Oil, Rosemary and Garlic. I also seasoned them with some Morton’s Lite Salt. They baked up perfectly and tasted great, as all the Alexia Potato. Great to have a bag of these handy in the freezer!

I love Hash Browns and Sausage in the mornings for Breakfast. So that’s what I’m having this morning. I used Eckrich Smoked Turkey Links. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. I also had a toasted slice of Healthy Life Whole Grain Bread. I do enjoy a good Breakfast to start the day!

Cloudy out all day but we had a high in the low 60’s. After Breakfast I went to the local Kroger up the road. Just needed a few items and then stopped by the bank before coming back home. After Lunch went and seen my friend at the assisted living center. He’s still hanging on but really struggling to breathe now. I took his wife and son out to lunch, they needed the break. It’s really tough on the family. Back home, just wanted to relax for a while. For Dinner tonight I’m having a Seasoned Haddock w/ Mac and Cheese.

These make a great Fish Sandwich also!

For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Fish and Mac and Cheese are just a natural pairing. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Just love this skillet meal! So after Breakfast caught up on house cleaning. I usually do this on Sunday but I have a small party set up for Mom and Dad’s anniversary over at the rehab unit where Dad is. So I wanted to get everything done today. I pick the cake up tomorrow at 11:00. So I spent most of the day getting stuff done around the house. I did get the cart out for about an hour this afternoon, around the neighborhood and lake. For dinner tonight I prepared Seasoned Haddock w/ Mac and Cheese.

I had purchased the Haddock from our local Kroger and had it in the freezer. So I grabbed a bag and let it thaw in the fridge overnight. I had already rinsed the fillet and cut it into smaller pieces. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

For the Mac and Cheese I used the Kraft Macaroni and Cheese – Triple Cheese again. Used this for the first time last week and using it again. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Today’s Menu: Seasoned Haddock w/ Mac and Cheese

 
Restless night dealing with those dreaded Phantom Pains. Oh how I wish they would comSeasoned Haddock w Mac and Cheese 008e up with a cure for these, they are so painful! Anyway for Breakfast I toasted a Healthy Life Whole Grain English Muffin and topped it with a Poached Egg. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast finished up some housework and cleaned a bit outside. After Lunch I laid down for afternoon nap, needed to catch up on some sleep since I had very little overnight. The Phantom Pains finally eased up around noon. I didn’t get to go see dad today but he’s actually doing a lot better! They have him out of the wheelchair and he’s using a walker now. Hopefully he’ll be home before long. For Dinner tonight it’s a Seasoned Haddock w/ Mac and Cheese.

It was a cup of Bigelow Decaf Green Tea and a toasted Healthy Life Whole Grain English Muffin for Breakfast this morning. After Breakfast I had to move all items under the Kitchen and 2 bathroom sinks. Then cleared off the kitchen counters. The Pest Control came this afternoon and started our treatment of Carpenter Ants. Several neighbors also were being treated today. We’ve had a slight problem with them since Duke Energy plowed down the woods behind us. So after the sprayed I had to move everything back, fun day! Glad to get it done though. Got the leaf blower out and cleaned the deck and driveway of leaves and such. So for dinner tonight it’s Seasoned Haddock w/ Mac and Cheese.

Today’s Menu: Seasoned Haddock w/ Cut Green Beans and Baby Carrots

For Breakfast on the rainy and windy Thursday morning I prepared a couple of Bob Evan’s Turkey Sausage Patties. They pre-cooked so all you do is heat them up in a skillet for 8 minutes. Just the right size for the Healthy Life Whole Grain English Muffins that I use. Good tasting sausage patties, made a good Breakfast Sandwich! Another rainy and windy night and most of today, had a high in the 40’s. So staying today it was house cleaning this afternoon, vacuumed and dusting. For dinner tonight I prepared Seasoned Haddock w/ Cut Green Beans and Baby Carrots.

I had a few bags of Haddock Fillets in the freezer so I grabbed 1 bag and let it thaw in the fridge overnight. I had already cleaned and cut the fillet into smaller pieces. To prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Whole Baby Carrots
For one side dish I reheated some leftover Del Monte Cut Green Beans. Then I also prepared a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
