Today’s Menu: Crispy Pan Fried Tilapia w/ Sliced Potatoes and Asparagus Cuts and Tips

 

 

To start this 8th day of November off I prepared a Scrambled Egg and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. About 30 degrees this morning. Had a high of 50 degrees and partly cloudy out. Spent most of the day house cleaning today. Later in the afternoon I went to Bank for Mom. For Dinner tonight I prepared Crispy Pan Fried Tilapia w/ Sliced Potatoes and Asparagus Cuts and Tips.

 

 

I purchased the Tilapia while Jungle Jim’s International Market the other day. I had already rinsed it in cold water and had it in plastic bag the freezer. I sat the bag in the fridge and let it thaw overnight. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia in the hot Oil until Golden Brown, about 4 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with excellent seasoning. Love hitting the Seafood Dept. at Jungle Jim’s. They have about anything, they even have tanks of live Tilapia and Trout!

 

For one side I prepared some Simply Potatoes Homestyle Sliced Potatoes , first time having these. Again Jungle Jim’s is the only place around here that I seen carries this product from Simply Potatoes. To prepare them; Heat 2 tbsp of vegetable oil in a skillet until hot. Add potatoes. Cover with lid. Cook 5–6 minutes or until golden brown on the bottom. Turn and cook an additional 4–5 minutes. According to the package instructions – During cooking, potatoes must reach a temperature of 165degrees F for 2 minutes. Wow what an easy way to have Fried Sliced potatoes! These came out so good and were so easy to prepare! You can use these for several different Potato Recipes including Scalloped Potatoes. I’ll have to buy more of these!

 

I also heated up a can of Del Monte Asparagus Cuts and Tips. Partially drained some of the can’s liquid. Then added the contents to a small sauce pan and cooked on medium high to a boil and then reduced the heat to simmer. Cooked about 7 minutes. Really enjoyed Dinner tonight! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Catfish Nuggets w/ Potato Pancakes and Fresh Green Beans

 

For Breakfast this morning I toasted a couple Eggo Waffles. Still love these after all these years! I also had a cup of Bigelow Decaf Green Tea. Outside its 83 degrees and humid, some places got a brief shower. After Lunch I took Mom over to the office of where Dad is at for rehab. They briefed us on how Dad was doing and when he might be released. Hope all goes well but Dad’s Dementia is getting worse, not much we can do about that though. Back home not a lot going on, did a few things in and around the house. For Dinner tonight one of my favorites, Catfish Nuggets w/ Potato Pancakes and Fresh Green Beans.

 

 

 

Picked up the Catfish Nuggets at Kroger earlier. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

 

 

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

 

 

 

 

Next I cooked some fresh Green Beans. Mom’s Cousin dropped some off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snacks I had a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

 

 

 

 

 

Manischewitz Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Today’s Menu: Catfish Nuggets w/ Creamy Cheddar Pasta

 

 

For Breakfast this morning I prepared some Waffles. I used Bisquick Heat Smart Flour to make them with and used Egg Beater’s to replace the Egg. I’ve got a large Waffle Maker and a smaller on that makes 2 Waffles, I used the smaller one. I also heated up a couple Jimmy Dean Turkey Breakfast Sausage Links. Really enjoy waffles and Pancakes and by using the Bisquick Heart Smart Flour it makes them a bit healthier. I also had my usual cup of Bigelow Decaf Green Tea.

 

 

 

Outside it’s Hot and Humid with a passing shower. After Breakfast I headed to Walmart, needed some printing ink and copy paper. Looked at a couple of new TVs while there also. I might get a larger one for our spare room If I can find a good buy. Stopped and got my car a much needed car wash and had the inside cleaned also. Then stopped and got gas and back home. Just did some of those odd and ends jobs around the house. For Dinner tonight it’s Catfish Nuggets w/ Creamy Cheddar Pasta.

 

 

Picked up the Catfish Nuggets at Meijer yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

 

To go with my Fried Catfish Nuggets I prepared some Bear Creek Creamy Cheddar Pasta Mix. I’ve had this a few times now and really like it. Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

 

 

 

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Catfish make a great pairing! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

No Breakfast or even Green Tea this morning! I’ve been fasting since 10:00 last night. I had to be at my Family Doctor this morning at 8:15 for my 4 month check up for sugar, cholesterol, etc. I’ll have the results in about 5 days they say. Hopefully I’ll get a good report on all. I also did the Cologaurd test for Colon Cancer. Another beautiful day out, 86 and mostly sunny but a bit humid. Ran a couple of errands for Mom later in the day. Still not sure if Dad is going to make it or not. We may have to put him in assisted living, he’s so weak at times. Just praying for the best. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Catfish Nuggets w/ Creamy Cheddar Rotini Pasta

 

 

 
To start this 18th day of April I toasted a couple Eggo Waffles. Still love these after all these years! I also made my morning cup of Bigelow Decaf Green Tea. What a beautiful day out there today, 77 degrees and sunny! After Breakfast I went to Walmart to pick up a few bottles of gas for the new grill. Also put a new outdoor table and chair in layaway, I’ll get it out after the deck is painted. Back home I had hired a neighborhood repair man to spray and wash the house, deck, and driveway down. Hope he gets time here soon to repaint our wooden deck. Had to change a tire on my 4 wheel mobility chair, picked up a nail. So for Dinner tonight its Catfish Nuggets w/ Creamy Cheddar Rotini Pasta.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Roasted Fingerling Potatoes and Golden Hominy

 

 
For Breakfast this morning I prepared an Egg Sunnyside Up, heated up 2 Jimmy Dean Turkey Breakfast Sausage Links, made some Simply Potatoes Shredded Hash Browns, toasted 2 slices of Healthy Life Whole Grain Bread, and had the morning cup of Bigelow Decaf Green Tea. Now that’s a Breakfast, I was starving this morning! Lot of rain today, started overnight. Bad timing for all the rain, today is Opening Day in Cincinnati! The Reds first game of the season is like a Holiday in this area. It all starts off with the Findlay Market Parade. The Parade first started in 1920 and has become a tradition. But the rain is putting a damper on everything. I stayed in today and the house a major cleaning and did a load of laundry for Mom. Dad is starting therapy today so we’ll see how that goes. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Roasted Fingerling Potatoes and Golden Hominy.

 

 

I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida. They just dropped off 4 bags of Grouper they caught just 4 days ago! I had a couple of the fillets in a bag in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Crispy Southern Fish Fri. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 
Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

 

 
For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Today’s Menu: Catfish Nuggets w/ Garlic-Herb Potatoes and Sugar Snap Peas

 

 

To start the morning off I toasted a couple of slices of Healthy Life Whole Grain Bread and topped the slices with catfish-nuggets-w-garlic-herb-potatoes-and-sugar-snap-peas-006some Smucker’s Sugar Free Blackberry Jam. And as usual I made a cup of Bigelow Decaf Green Tea. Its February 7th and its 52 degrees here at 7:00 this morning, and we had a high around 64 degrees and a lot of rain! But come tomorrow only a high of 44 and 32 by Thursday, welcome to Ohio! Anyway after Breakfast I went to the local Kroger and picked up a few items. Then stopped by McDonald’s and picked up Breakfast for Mom. Spent the rest of the day cleaning the house and doing some laundry for Mom. I’ll visit dad tomorrow, spent Sunday and Monday at the rehab unit with him, he’s making progress! For Dinner tonight I prepared Catfish Nuggets w/ Garlic-Herb Potatoes and Sugar Snap Peas.

 
Picked up the Catfish Nuggets at Meijer and had them in the freezer. Set a the bag in the fridge to thaw overnight. Tocatfish-nuggets-2-7-17 prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. Love using all these Zatarain’s Products!

For one side I heated up some Mann’s Stringless Sugar Snap Peas. They come fresh packed in a plastic bag. Just empty the bag into a small skillet with a 1/2 tablespoon of Light Olive Oil and heated 7 minutes on medium heat. Done, easy way to have some Beans! Only 35 calories and 4 net carbs per serving, 1 cup.

 

 

 
Then for another side dish I prepared – the Little Potato Company Oven Ready Garlic Heab Potatoes. It comes in a bison-chopped-sirloin-steak-w-sugar-snap-peas-and-garlic-herb-po-002Oven Ready Foil Container. Remove the cardboard sleeve, seasoning pack and plastic film. Add the seasoning pack contents and 2 tbsp of light olive oil to tray. Toss until well coated. Place uncovered tray on in the oven. Cook for 40 minutes until tender, stirring occasionally. Then you can serve them right from foil container they came in. Another delicious Potato Product from the Little Potato Co.! It’s one Comfort Food Dinner Tonight! Really enjoyed this one. For dessert later Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free catfish-nuggets-w-cut-italian-beans-and-baked-fingerling-potatoe-003Blackberry Jam. Then I fried up a couple of Eckrich Smoked Turkey Sausage Links and as usual had my morning cup of Bigelow Decaf Green Tea. A bit cooler out there today, 31 degrees this morning and a high in the mid 40’s. I received bad news yesterday, my good friend that was in assisted living Passed away. So I was a bit down today, I’ll miss my friend deeply. After Lunch I took Mom around to let her run a couple of errands, boy gas prices went up by about 21 cents a gallon. Back home and not a lot going on the rest of the day. For Dinner tonight I prepared Catfish Nuggets w/ Cut Italian Beans and Baked Fingerling Potatoes.

 
I had purchased the Catfish Nuggets from Kroger and had them in the freezer so I let them thaw in the fridge Catfish Nuggets Rice 003overnight. Fried Walleye w Cut Roma Beans and Baked Roasted Fingerling Pota 003
For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans every day and never get tired of having them.

 

 

 
Then for another side I prepared some Roasted Fingerling Potatoes. I purchased these at Jungle Jim’s yesterday. To Sweet Asian Wings fingerling fries 001start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes, probably my favorite Potato. Just love how easy they cook up and taste. For Dessert tonight I’m having a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Breakfast this I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also, as usual, had my morning cup of Bigelow Decaf Green Tea. Had to get up about 3:00 this morning and turn the heat on, it was getting real chilly inside! We had a low of about 39 degrees with a slight wind. One sunny and cool Fall Day out there today. Lot of leaves on the deck and driveway but there was no use in trying to clean it up with the wind blowing like it was. After Lunch ran a couple of errands for Mom and that was about my day! Spent the rest of the afternoon watching some College Football. For Dinner tonight its Catfish Nuggets w/ Diced New Potatoes and Green Beans.

Not being a Coffee drinker I really enjoy my Tea! After Breakfast I gave Mom a hand with a couple of loads of laundry. Humid and a high near 90 degrees, but we are finally getting some rain. In fact heavy rain with thunderstorms. We really needed the rain as everything is so dry, the yards are even turning brown. So it was another day indoors getting some things done around the house. For Dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.
