Today’s Menu: Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Cloudy, a high of 58 degrees and cool breeze blowing out there today. After Tea I went to Meijer for a few items. Back home nothing to do today, which is good because my Sinuses are killing me today. Big change in the weather and temperature. It should clear up in a day or so, hopefully. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.

 

I purchased more of the Yellow Lake Perch from Meijer earlier today. I love this Yellow Lake Perch! I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I saw them.

 

I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and were delicious! I love Fish!

 

 

 

 

To go with my Perch I prepared a cup of Kraft Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 77 degrees, very windy and partly cloudy out today. I had to return a rake I bought from Meijer, it came apart after using it 1 time. While at Meijer I picked up a couple of other items also. On the way back I picked up Breakfast for Mom at McDonald’s. Too windy to do a lot outside today. Did a few things in the house and then cleaned out the shed. For Dinner tonight I prepared Fried Yellow Lake Perch w/ Mac and Cheese and Baked French Bread.

 

I purchased the Yellow Lake Perch from Meijer this morning. I rinsed the Fillets in cold water then patted them dry and put them in a Hefty Plastic Bag and on into the fridge until ready to use. I love using Yellow Lake Perch, fries up a beautiful golden brown and like most fresh water fish has a fantastic taste. It’s not too often I find Yellow Lake Perch so I grabbed these when I seen them.

 

I then seasoned them with Sea Salt and rolled the fillets in my favorite Breading Mix, Zatarain’s Crispy Southern Fish Fri. Pan fried them in Bertolli Cooking Olive Oil, on medium heat for 3 minutes per side. They came out with a golden brown crust and delicious! I love Fish!

 

 

 

To go with my Perch I prepared a cup of Kraft Mac and Cheese. They come in a microwavable plastic container. Today’s Menu: Catfish Nuggets w/ Fried Potatoes and Cut Green Beans

 

To start this morning off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Live Carb Smart Wheat Bread, and had a cup of Bigelow Decaf Green Tea. A great way to start the day. 94 degrees, sunny, and humid. We had a heat index of 105 degrees out. Good day to stay in which is what I did. I needed to rest and get caught up on sleep. I fought with Phantom Pains from late yesterday afternoon until about 5:00 this morning. I had little to no sleep. Good day to stay in. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes and Cut Green Beans.

 

I had bought the Catfish Nuggets from Kroger and had them in the freezer. I sat the bag in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side for about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

For one side we had Fried Potatoes! I’m using Medium Size Red Potatoes. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Then slice each Potato into thin slices and slit each slice at least 4 times. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

I also heated up a can of Del Monte Cut Green Beans. What a meal Catfish, Fried Potatoes and Green Beans. I also made a small Cast Iron Skillet of Cornbread. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

To start this rainy morning off I made a 1/2 package of Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. 92 degrees, humid, and sunny outside today. I repainted the trim of our shed after Breakfast. Then later I sprayed for weeds and crabgrass. Then raked the backyard. I pulled up a couple of the Pepper plants also, done for the year. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes and Cut Green Beans.

To start this morning off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also Scrambled a couple of Eggs and heated up a couple of Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. Cloudy with rain on and off all day, high of 67 degrees. After Breakfast I did a few things around the house then hit the bed. I had a rough night with Phantom Pains and got little to no sleep all night. So I took it easy all afternoon. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes and Cut Green Beans.

Gave Mom a hand in her Spring Cleaning. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes and Cut Green Beans.

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 38 degrees and partly cloudy out today. After my Tea me and Mom went to Jungle Jim’s International Market. Love going there, they have everything! The best Deli and Cheese Shop anywhere. And the Produce, Meat, and Seafood Departments you can find anywhere! It’s one amazing store. Back home I went and had my car washed and got gas. Not much else going on. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

I also heated up a can of Del Monte Cut Green Beans. Then made a small Cast Iron Skillet of Cornbread, for Mom, using Martha White White Corn Meal. What a meal Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Coke Zero to drink.

Today’s Menu: Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread

 

 

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 84 degrees, rain showers, and humid. outdoors today. My allergies and sinuses were a lot better today, thankfully! I was starting to get a little worried. Cleaned and straightened up the shed today. Then later Mom wanted to go to Walgreen’s so I took her up there and back home. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

I bought the Catfish Nuggets from Meijer. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

For one side we had Fried Potatoes! I’ve loved these all my life! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

Then got the cart out and took a spin around the neighborhood before it got too hot out. Also did a little yard work while I had the cart out. After Lunch I took Mom out to Ross to where we bought the fresh Vegetables. She wanted some tomatoes, corn, peaches, and a cantaloupe. That was my day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

 

We had this meal a few weeks back and Mom wanted to have it again, who am I to say no! I had purchased the Catfish Nuggets from Kroger yesterday.
