Today’s Menu: Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread

 

 

To start this rainy morning off I made some Simply Potatoes Shredded Hash Browns and heated up some Meijer Diced Ham. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Then topped them off with Diced Ham. I love combinations of Potatoes and Ham. Also had a cup of Bigelow Decaf Green Tea. The day started off with rain but had cleared up by noon, still windy and a high of 43 degrees. Did a load of laundry and cleaned the house today, dusted and ran the vacuum. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

 

I bought the Catfish Nuggets from Meijer a while back and had them in the freezer. I sat the bag in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

For one side we had Fried Potatoes! I’m using Medium Size Red Potatoes. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Then slice each Potato into thin slices and slit each slice at least 4 times. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

 

I also heated up a can of Del Monte Cut Green Beans. Then made a small Cast Iron Skillet of Cornbread, for Mom, using Martha White White Corn Meal. What a meal Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Dr. Pepper to drink.

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 38 degrees and partly cloudy out today. After my Tea me and Mom went to Jungle Jim’s International Market. Love going there, they have everything! The best Deli and Cheese Shop anywhere. And the Produce, Meat, and Seafood Departments you can find anywhere! It’s one amazing store. Back home I went and had my car washed and got gas. Not much else going on. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

To start this Morning off I had a cup of Bigelow Decaf Green Tea. 84 degrees, rain showers, and humid. outdoors today. My allergies and sinuses were a lot better today, thankfully! I was starting to get a little worried. Cleaned and straightened up the shed today. Then later Mom wanted to go to Walgreen’s so I took her up there and back home. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

I bought the Catfish Nuggets from Meijer. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. Then got the cart out and took a spin around the neighborhood before it got too hot out. Also did a little yard work while I had the cart out. After Lunch I took Mom out to Ross to where we bought the fresh Vegetables. She wanted some tomatoes, corn, peaches, and a cantaloupe. That was my day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

 

We had this meal a few weeks back and Mom wanted to have it again, who am I to say no! I had purchased the Catfish Nuggets from Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. One HOT day out there today, it was 98 degrees at 5:00 this afternoon. Anyway I went to Kroger after Breakfast, at least around here the stores are having less and less items on the shelves. The Meat department had a good selection as the Dairy Department but canned goods and frozen foods were really low! Too hot to be out there today for me. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

To start this Morning off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Change in the weather here. We had a low of 49 degrees this morning and a high of 74 degrees, a bit cooler. Took care of a few things around the house and outside. Got the cart out a bit later and took a spin around the neighborhood.For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Cornbread.

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

 


Just a cup of Bigelow Decaf Green Tea. Had one of those long nights last night dealing with those Phantom Pains! Oh how I wish that they would find a cure for Phantom Pains! But for now nothing I can do except to wait them out. They continued until the early afternoon before stopping. So just tried to rest up today when I could. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

 

 

 

 


I had purchased the Catfish Nuggets from Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

 

 


For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

 

 

 

 


With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

 


Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through.

 

 

 

 

 


I also made a small Cast Iron Skillet of Corn Bread, for Mom, using Martha White White Corn Meal. First Corn Bread I’ve made in a while and it’s just as good as it always was! What a meal Fried Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and topped them with some Smucker’s Sugarfree Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Rough morning and afternoon, I’ve had a bad Sinus Headache all day. Did a lot of resting and that was it. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

Today’s Menu: Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

 

 

To start this Tuesday off I had one of favorites, French Toast and Turkey Sausage Links. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, 1/2 cup of 2% Milk, 1 medium Egg, Ground Nut Meg, Ground Cinnamon, and Blue Bonnet Light Butter. Mix the Milk, Egg and Spices together in a bowl and dip the Bread in mixture. Fry until each side is golden brown. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. Just fry for 8 minutes and done. For the Syrup topping I used Log Cabin Sugar Free Maple Syrup. Oh how I love French Toast! It’s 50 degrees and partly sunny out today. Ran a couple of errands and stopped by Meijer for a few items. Back home I was all caught up on everything and just took it easy. For Dinner tonight its Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the Tilapia while at Meijer earlier. I purchased 2 big and beautiful fillets of the Tilapia, having 1 for Dinner and froze the other one. I also bought a Red Snapper Fillet. So I had already rinsed the fillet in cold water and had it in plastic bag the fridge. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea Salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia until Golden Brown, about 3 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with that excellent Zatarain’s Seasoning.

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. Also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Butter. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
