Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

 


Just a cup of Bigelow Decaf Green Tea. Had one of those long nights last night dealing with those Phantom Pains! Oh how I wish that they would find a cure for Phantom Pains! But for now nothing I can do except to wait them out. They continued until the early afternoon before stopping. So just tried to rest up today when I could. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

 

 

 

 


I had purchased the Catfish Nuggets from Kroger yesterday. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

 

 


For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

 

 

 

 


With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 

 


Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through.

 

 

 

 

 


I also made a small Cast Iron Skillet of Corn Bread, for Mom, using Martha White White Corn Meal. First Corn Bread I’ve made in a while and it’s just as good as it always was! What a meal Fried Catfish, Fried Potatoes, Green Beans, and Corn Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread

 

For Breakfast I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and topped them with some Smucker’s Sugarfree Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Rough morning and afternoon, I’ve had a bad Sinus Headache all day. Did a lot of resting and that was it. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

Today’s Menu: Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice

 

 

To start this Tuesday off I had one of favorites, French Toast and Turkey Sausage Links. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, 1/2 cup of 2% Milk, 1 medium Egg, Ground Nut Meg, Ground Cinnamon, and Blue Bonnet Light Butter. Mix the Milk, Egg and Spices together in a bowl and dip the Bread in mixture. Fry until each side is golden brown. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. Just fry for 8 minutes and done. For the Syrup topping I used Log Cabin Sugar Free Maple Syrup. Oh how I love French Toast! It’s 50 degrees and partly sunny out today. Ran a couple of errands and stopped by Meijer for a few items. Back home I was all caught up on everything and just took it easy. For Dinner tonight its Crispy Pan Fried Tilapia w/ Long Grain and Wild Rice.

 

 

 

 

I purchased the Tilapia while at Meijer earlier. I purchased 2 big and beautiful fillets of the Tilapia, having 1 for Dinner and froze the other one. I also bought a Red Snapper Fillet. So I had already rinsed the fillet in cold water and had it in plastic bag the fridge. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea Salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia until Golden Brown, about 3 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with that excellent Zatarain’s Seasoning.

 

 

 

 

I also prepared a packet of Uncle Ben’s Ready Rice Long Grain and Wild. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. An easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs with Fish perfect. Also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly buttered with I Can’t Believe It’s Butter. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Snow Flurries and 24 degrees this morning with rain showers and 41 degrees out for the afternoon. Gave Mom a hand in doing a couple of loads of laundry. Then I went to Walmart to pick up a couple of boxes of small Christmas Lights later in the day. For Dinner tonight its Catfish Nuggets w/ Fried Potatoes, Cut Green Beans, and Cast Iron Skillet Baked Corn Bread.

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had a real rough night dealing with Phantom Pains. I didn’t get an hours worth of sleep. They finally let up around 10:00 this morning. I’m really exhausted, these were the worst I’ve had in a while. I just wish someone would come up with a cure for Phantom Pains! Anyway after Lunch I went back to bed for most of the afternoon. For Dinner tonight its Catfish Nuggets w/ Savory Herb Potatoes and Savory Herb Potatoes and Green Beans.

 

Picked up the Catfish Nuggets at Kroger the other day and had them in the freezer. Layed the bag in the fridge overnight to thaw To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish.

 


For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

 


Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Roasted Fingerling Potatoes and Golden Hominy

 

 

For Breakfast this morning I Made a Breakfast Sandwich using; Healthy Life Multi Grain English Muffin, Scrambled 1 Egg, lightly heated 3 slices of Boar’s Head Sweet Slice Ham, and 1 slice of Boar’s Head Swiss Cheese. Outside today it’s sunny and 90 degrees today. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Then I had to go to the Bank and make some changes on my Checking Account and Purchased a Safety Deposit Box. I ‘ve been needing a Safety Box for a while. I used to have one and the Bank I was at closed and my new one was sold out and I was put on a waiting list. And it came through yesterday. So I got that all taken care of. For Dinner tonight its Seasoned Gulf Coast Grouper w/ Roasted Fingerling Potatoes and Golden Hominy.

 

 


I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida. I had a couple of the fillets in a bag in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Crispy Southern Fish Fri. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!

 


Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area, only 1 store around here locally that sells them (Thank you Jungle Jim’s).

 


For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Oven-Roasted Fingerling Potato Fries

Ingredients:

Fingerling Potatoes
Extra Virgin Olive Oil
Garlic Powder
Sea Salt
Pepper
Chili Powder
Kraft Reduced Fat Parmesan Grated Cheese
Directions:

1.) Thoroughly clean and scrub the potatoes.

2.) Cut the potatoes in half and add to a large mixing bowl.

3.) Add the olive oil. I used about 1 tablespoon, but this will vary by how many potatoes you use. Just use enough oil to give the potatoes a nice coat. Add your seasonings.

4.) Put on a baking sheet and sprinkle with the Parmesan Grated Cheese

5.) Roast in the oven for 25-35 minutes at 450 degrees. The potatoes should be tender in the middle when done.

Today’s Menu: Catfish Nuggets w/ Fried Potatoes, Sugar Snap Peas, and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

For one side we had Fried Potatoes! I’ve loved these all my life and my Mom makes the best! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on high.

 

 

 

 

As the Skillet is heating, slice the Potatoes. Slice the Potatoes width wise about a 1/4 inch from the bottom of the Potato. Then slice them length wise all the way through. If you are not going to fry the Potato slices right away, put then in a large bowl of Salted Cold Water until ready to use.

 

 

 

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

 

 


For another side I prepared some Sugar Snap Peas. To prepare these; Heat a tablespoon of Extra Light Olive Oil in a large saute pan over medium high heat. Add the Sugar Snap Peas, Salt and Pepper and saute, tossing occasionally for 3 to 5 minutes, until the sugar snap peas are crisp tender. Place the Sugar Snap Peas in a serving bowl, sprinkle with Sea Salt and serve. We haven’t had these in a while and turned out great! I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert later a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream topped with It free Peach Slices.

Today’s Menu: Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread

 

 

For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to get Breakfast for Mom and Dad and I also stopped at Dunkin Donuts and picked up Donuts for them. Lot of rain the last day or so and a lot more on it’s way. The news says rain every day next week, and heavy at times. Come on Sunshine! Back home did a couple of loads of laundry and then after Lunch did some house cleaning. For Dinner tonight Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread.

 

I had purchased some Catfish Nuggets from Meijer a while back. So I grabbed a package out of the freezer and let it thaw overnight in the fridge. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.

 

For a side dish I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. I hadn’t had these in quite a while so I picked up a package while at Meijer. It comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. Easy way to have Scalloped Potatoes with no clean up! I also baked a loaf of River Road Bakehouse Multi Grain Bread. I’ve been buying this from Meijer the last few months and it’s our favorite Baked Bread. Mom’s a big Bread eater like me! For Dessert later a Dole No Sugar Added Diced Peach Cup.

To start the day I prepared a Poached Egg that I served on a toasted Healthy Life Whole Grain English Muffin. Cloudy with a high of 28 degrees and snow flurries. Finished cleaning the house after Lunch and cleaned the fridge. For dinner tonight I prepared Catfish Nuggets w/ Hash Browns and Cut Green Beans.

Simply Potatoes Hash Browns

For one side I prepared some Simply Potatoes Hash Browns, which I always use when making Hash Browns. Fried them in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Just love Potatoes with Fish. I also heated up a can of Del Monte Low Sodium Cut Green Beans. For Dessert later a Del Monte Sugar Free Diced Peach Cup.

Today’s Menu: Crispy Pan Fried Tilapia w/ Sliced Potatoes and Asparagus Cuts and Tips

 

 

To start this 8th day of November off I prepared a Scrambled Egg and toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. About 30 degrees this morning. Had a high of 50 degrees and partly cloudy out. Spent most of the day house cleaning today. Later in the afternoon I went to Bank for Mom. For Dinner tonight I prepared Crispy Pan Fried Tilapia w/ Sliced Potatoes and Asparagus Cuts and Tips.

 

 

I purchased the Tilapia while Jungle Jim’s International Market the other day. I had already rinsed it in cold water and had it in plastic bag the freezer. I sat the bag in the fridge and let it thaw overnight. To prepare it I’ll need; the Tilapia, McCormick Grinder Sea salt and Peppercorn Medley, and Zatarain’s Crispy Southern Fish Fri. To start I heated Extra Light Olive Oil in a skillet over medium-high heat. When the skillet was ready I cooked the Tilapia in the hot Oil until Golden Brown, about 4 minutes per side. I had not had Tilapia in a while and it tasted great! Moist with excellent seasoning. Love hitting the Seafood Dept. at Jungle Jim’s. They have about anything, they even have tanks of live Tilapia and Trout!

 

For one side I prepared some Simply Potatoes Homestyle Sliced Potatoes , first time having these. Again Jungle Jim’s is the only place around here that I seen carries this product from Simply Potatoes. To prepare them; Heat 2 tbsp of vegetable oil in a skillet until hot. Add potatoes. Cover with lid. Cook 5–6 minutes or until golden brown on the bottom. Turn and cook an additional 4–5 minutes. According to the package instructions – During cooking, potatoes must reach a temperature of 165degrees F for 2 minutes. Wow what an easy way to have Fried Sliced potatoes! These came out so good and were so easy to prepare! You can use these for several different Potato Recipes including Scalloped Potatoes. I’ll have to buy more of these!

 

I also heated up a can of Del Monte Asparagus Cuts and Tips. Partially drained some of the can’s liquid. Then added the contents to a small sauce pan and cooked on medium high to a boil and then reduced the heat to simmer. Cooked about 7 minutes. Really enjoyed Dinner tonight! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
