Today’s Menu: Spaghetti and Turkey Meatballs w/ Bella Vita Low Carb Pasta Sauce

It was spaghetti and Meatballs tonight. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Roasted Meat Flavored). Along with the great taste of the Pasta Sauce it’s also only 70 Calories and a mere 6 Carbs! I also had Healthy Life Whole Grain Bread. For dessert a Yoplait Banana/Chocolate Smoothie.

Today’s Menu: Rainbow Trout w/ Twice warmed Potato, Cauliflower &Cheese Sauce, and Whole Grain Bread

I had a beautiful Rainbow Trout fillet by way of Meijer Seafood Department. I seasoned it with McCormick Grinder Sea Salt, Black Peppercorn, and Parsley and then sprinkled with Italian Style Bread Crumbs. I baked it for about 11 minutes at 400 degrees. Came out moist, tender and delicious!

For sides I had half a potato of the Twice Warmed Potato left over from yesterday’s dinner that I warmed up. Also I had Green Giant Cauliflower w/ Cheese Sauce. Tried this for the first time a couple of weeks ago and really liked it. Great tasting, easy to fix, and only 50 calories and 6 carbs! Also had Healthy life Whole Grain Bread. For dessert later a Yoplait Mango and Strawberry Smoothie.

Tried a new dessert tonight, YoplaitChocolate Banana Smoothie. I seen these on Biggest Loser and they looked so good I had to try it

Today’s Menu: Baked Catfish Tenders & Remoulade Dipping Sauce w/ Potato Pancakes and Creamy Parmesan Risotto


Mom and Dad wanted Fish tonight so that’s what I had to make. I used a Kroger brand Catfish Tenders. Baked at 425 degrees for 25 minutes, they come out perfect! I made a Remoulade Dipping Sauce for them also. This Sauce is fantastic and goes well with almost all Fish. I’ll leave the recipe at the end of the post for the Sauce.
As sides I made one my Mom’s favorites Potato Pancakes. I use Manischewitz Potato Pancke Mix. Not only are these delicious but their only 80 calories and 18 carbs per serving, 3 pancakes! I also had Lundberg Creamy Parmesan Risotto it takes about 25 – 30 minutes to whip this up. Really a quick and very good tasting Risotto. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Remoulade Sauce

Ingredients

1 Cup Light Mayonnaise
2 Tblsp Chili Sauce
1 tsp Garlic Salt
1tsp Curry Powder, or to taste
1 Tbsp Hot Prepared Horseradish
1 tsp Dry Mustard

*Add all ingredientsto jar or container
*Mix until well blended
*Refrigerate overnight or at least 4 hours before serving.

Today’s Menu: Good Earth Spicy Citrus Glazed Shrimp w/ Angel Hair Pasta and French Loaf Bread

I had the Good Earth Dinners  Spicy Citrus Glazed Shrimp tonight. I had included the instructions on this dinner from a previous postings and thought I would include them again. These dinners are great, just add the Shrimp, 2 Tablespoons of Extra Virgin Olive Oil, and 1 Tablespoon of I Can’t Believe it’s Not Butter and you have your complete dinner! I also had a slice of Pillsbury Simply Rustic Frech Bread. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Ingredients

1 Box of Good Earth Spicy Citrus Glazed Shrimp
1 Lb. uncooked Shrimp, thawed
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon “I Can’t Believe It’s Not Butter“

*Fill 2 quart sauce pan 2/3 full of water. Heat to boiling and stir in Pasta.
*Gently boil uncovered for 5 minutes, stirring occasionally.
*While Pasta is cooking empty Whole Wheat Flour into medium bowl or food storage bag.Coat well drained thawed Shrimp with Flour.
*Heat oil in non-stick 10″ skillet over medium – high heat. Carefully add Shrimp to hot oil and cook 1 – 2 minutes on each side or until golden brown.
*Reduce heat to medium. Cut off 3/4 inch corner of Spicy Citrus Glaze pouch. Carefully pour glaze into skillet with Shrimp. Cook uncovered 1 to 2 minutes, stirring frequently, until Shrimp are cooked through and coated with glaze.
*Drain Pasta. Add Butter and Pasta Seasoning to Pasta and toss with fork to coat.
Serve Shrimp with Pasta.

1 serving has 290 Calories and 38 Carbs.

Today’s Menu: Garlic Chili Chicken Soft Taco w/ Refried Beans and Pop Corn Chips


An easy to fix low carb and low calorie dinner tonight. I used Old El Paso Tortilla Stuffers. I love these from Old El Paso. They have a Carne Asada Steak and Garlic Chili Chicken, which is the one I went with tonight. The garlic Chili Chicken includes the Seasoned Rice, Chicken, Pinto Beans, and Peppers, plus it’s only 80 calories and 11 carbs! I used La Banderita Low Carb and Low Fat Soft Tacos, 81 calories and 11 carbs. As a side I had a serving of Old El Paso Fat Free Refried Beans and  a half serving of Chip‘ins Pop Corn Chips. Here’s another great low carb item Chip’ins. Only 120 calories and 22 carbs per serving, about 20 chips equals a serving. For dessert later I’ll have a Yoplait Delight Chocolate Eclair Parfait.
