Idaho® Potato and Chicken Gumbo

Recipe Ingredients:
6 tablespoons Brown Roux (recipe follows)
1 1/2 cups Idaho® potatoes, peeled and shredded
1 cup diced yellow onion
1 cup diced yellow, red and green peppers
1 cup diced celery
1 tablespoon minced garlic
2 pounds cooked chicken meat, pulled (shredded)
2 tablespoons Creole seasoning (recipe follows)

8 cups Idaho® potatoes, cubed and sautéed for accompaniment

Brown Roux:
8 ounces (1 cup) butter
8 ounces (2 cups) all-purpose flour

Creole Seasoning:
2 tablespoons paprika
1 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon ground white pepper
1 teaspoon cayenne pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried basil

Cooking Directions:
1 – For Gumbo: In a large stockpot, bring the chicken stock to a boil. Temper approximately 6 tablespoons of Brown Roux into the broth (add 1/2 cup of hot broth to the roux and mix completely. Add the broth and roux mixture back into the boiling broth and whisk).
2 – Add potato. Simmer for 12 minutes. Add the onion, peppers, celery, garlic, and chicken pieces.
3 – Add Creole seasoning. Taste and adjust seasoning, if desired. Continue to cook for another 10 minutes (the vegetables should be cooked, but still firm).
4 – To Serve: Ladle gumbo over sautéed potatoes.
5 – For Oven Method Brown Roux: Slowly brown the flour on a sheet pan at 300°F (150°C) about 20 to 30 minutes. Stir the mixture halfway through (about 10 to 15 minutes) to achieve an even browning. The flour should be a light khaki color and will smell like roasted nuts.
6 – For Stovetop Method Brown Roux: Cook the flour and the butter over medium-high heat until a brown, smooth consistency occurs (about 5 to 6 minutes). Once the roux has cooled, cover and leave unrefrigerated until needed. Later, if any oil has separated from the roux, simply stir the oil into the mixture.
7 – For Creole Seasoning: Combine all ingredients and mix thoroughly. May be stored in a tightly covered container. Makes 1/4 cup.

Beef Chili Carnavale
Beef Chili CarnavaleSure to become a favorite, this fantastic chili recipe is an excellent source of fiber, protein, niacin, vitamin B6, vitamin B12, iron, selenium and zinc; and a good source of choline.

Recipe Ingredients:
2 pounds ground beef (95% lean)
1 (28-ounce) can crushed tomatoes, undrained
1 (14.5-ounce) can diced tomatoes with mild green chiles
1 (14.5-ounce) can regular or reduced-sodium beef broth
1 (12-ounce) bottle regular or light beer
1 medium yellow onion, diced
2 medium green, red, yellow or orange bell peppers, diced
1 (6-ounce) can tomato paste
1/3 cup chili powder
1 large jalapeño pepper, seeded, finely chopped
2 tablespoons minced garlic
1 tablespoon ground cumin
1 teaspoon dried oregano leaves
2 (15-ounce) cans black beans, drained and rinsed
Lime wedges and baked tortillas chips (optional)

Suggested Toppings: Sliced cherry tomatoes, sliced green onions, sliced serranos or jalapeños, chopped onion

Cooking Directions:
1 – Heat stockpot over medium heat until hot. Add ground beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Remove drippings.
2 – Add tomatoes, beef broth, beer, onions, bell peppers, tomato paste, chili powder, jalapeño pepper, garlic, cumin and oregano to stockpot, stirring to combine. Bring to a boil; reduce heat and simmer, uncovered, 45 minutes, stirring occasionally.
3 – Stir in black beans and continue to simmer 15 minutes or until thickened to desired consistency, stirring occasionally.
4 – Season with salt and black pepper, as desired. Garnish with toppings, as desired. Serve with lime wedges and baked tortilla chips, if desired.
Makes 8 servings.

Note: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F (70°C). Color is not an indicator of ground beef doneness.

Fiesta Turkey Breakfast Bowls
With edible tortilla bowls, turkey sausage and scrambled eggs, these easy-to-make breakfast bowls are a tasty way to get the day going. Under 300 calories per serving!

INGREDIENTS
6 (7-inch) whole wheat flour tortillas
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links
1 medium red bell pepper, chopped
1 small sweet yellow onion, coarsely chopped
1 tablespoon extra virgin olive oil
1½ cups egg substitute or 6 eggs
½ cup salsa
6 fresh cilantro sprigs

DIRECTIONS
1) Heat oven to 375°F. Lightly spray custard cups with cooking spray. Gently place tortillas into cups, overlapping edges as necessary to fit. Bake tortillas 12 to 15 minutes or until lightly brown.
2) Cook the turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove turkey from skillet and cut each link into three pieces. Set aside.
3) In same skillet, sauté bell pepper and onion in oil 5 minutes or until slightly softened. Reduce heat and add egg substitute to pepper and onion mixture. Cook and stir over medium heat 5 minutes or until soft scrambled. Spoon egg mixture into prepared tortillas. Top with turkey sausage pieces. Serve with salsa and garnish with cilantro.
* Always cook to an internal temperature of 165°F.

Cracked Pepper Philly Melt
Layers of melted Swiss cheese, thinly sliced deli turkey, bell peppers, sautéed onion and pepperoncini make up this flavorful melt. Ready in under 15 minutes, this recipe makes for an easy weeknight dinner.

INGREDIENTS
1 tablespoon vegetable oil
1 cup sliced yellow onion
½ cup thinly sliced green bell peppers
½ cup thinly sliced red bell peppers
¼ cup pepperoncini peppers, drained and sliced
8 ounces JENNIE-O® DELI FAVORITES® Oven Roast Turkey Breast, from the service deli
¼ cup mayonnaise
4 hoagie buns, split and grilled
4 slices Swiss cheese, halved

DIRECTIONS
1) In skillet over medium-high, heat oil. Add onion and cook 5 minutes or until softened. Add peppers; cook until tender. Remove from heat and reserve.
2) Heat turkey in microwave 10 to 15 seconds or until hot. Spread mayonnaise on hoagie bottoms. Top with turkey, pepper mixture and cheese. Replace bun top.

Best Turkey Burger Recipe
Three reasons it’s our best burger recipe: It’s juicy, lean and topped with the classics. This recipe is a great place to start if you’re looking to switch from beef to turkey but don’t want to sacrifice flavor.

INGREDIENTS
4 JENNIE-O® 1/3 lb. Turkey Burgers
4 slices fat-free American cheese
4 Kaiser rolls, split
4 slices red or yellow onion
4 slices tomato
4 leaves romaine or red leaf lettuce

DIRECTIONS
1) Cook patties as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Top patties with cheese during last minute of grilling. Lightly toast rolls on grill, cut-side-down, during last 1 to 2 minutes of cooking.
2) Serve patties in rolls topped with grilled onion, tomato and lettuce.
* Always cook to an internal temperature of 165°F.

The sugar content in yellow onions makes them spoil quickly if they are stored closely together – who knew? The solution is to store your onions in an old (clean) pair of pantyhose, making knots in the legs so the onions can’t touch. It might look a little weird, but it works!
