Today’s Menu: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we’ve really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50’s. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it’s purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

 

 

 

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I’ll make a sandwich with it for lunch tomorrow.

 

 

 

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I’m not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it’s only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Ingredients:
1 lb Cod Fish Fillets
1/4 cup I Can’t Believe It’s Not Butter, melted
2 tablespoons Lemon Juice
1/4 cup all-purpose Flour
1/2 teaspoon Morton’s Light Salt
1/8 teaspoon White Pepper
Paprika

 

Directions:
*If fish fillets are large, cut into serving pieces.
*Mix butter and lemon juice.
*In another bowl, mix flour, salt and white pepper.
*Dip fish into butter mixture; coat fish with flour mixture.
*Place fish in ungreased square baking dish, 8x8x2 inches.
*Pour remaining butter mixture over fish; sprinkle with paprika.

Today’s Menu: Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad

Another gorgeous Fall like day around the neighborhood today! 39 degrees this morning and a high around 68 with sunshine and blue skies above! Out riding the four-wheel for a while and doing some outside cleaning. For dinner tonight a Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad.

 

 

 

A light and heathy dinner tonight. I used Wild Idea Buffalo Pulled Buffalo, a 1 lb. package. A great item to have in the freezer, just thaw and heat it up! After heating it up I served it on a Healthy Life Whole Grain Bun and topped it with JB’s Fat Boy Chipotle BBQ Sauce. I love BBQ Sandwich’s but using Pulled Buffalo makes that much more delicious! The Pulled Buffalo is so moist and flavorful, not to mention healthier than Beef.

For a side to go with my Sandwich I went this morning and bought some fresh Green Lettuce and Radishes. I made a Green Lettuce and Radish Salad, adding a sprinkle of fresh grated Parmesan Cheese, sliced Pepadews, J and D’s Bacon Croutons, and topped with Ken’s Light Options Sweet Vandalia Onion Dressing. It’s been a while since I’ve had a Salad. For some reason it’s hard for me to digest green vegetables and later will give me an upset stomach. But I miss having a Salad so it was worth it. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

That Cheesecake Craving!

I had been wanting a Cheesecake for quite some time now. So today I stopped up at a local Kroger and purchased the ingredients, 1 box Jell-O Sugar-Free Fat – Free Instant Pudding & Pie Filling Cheesecake, a container of Cool Whip Free (for topping), and 1 Graham Cracker Crust (I used a Kroger Brand Pre-Made Crust). Dessert tonight Cheesecake!

So easy to make! In a bowl add 1 box Jello Mix (2 for a denser cake), 1 3/4 cups Fat Free Milk (I used 2% instead). Stir for 2 minutes and pour into the pre-made pie crust, cover and refrigerate for at least 3 hours before serving. You’re done!

I topped mine with Cool Whip Free but for Mom and Dad I had also bought some Blackberries and I made a Simple Blackberry Sauce for them. Found the recipe on an internet search, from http://www.heathersdish.com/1/simple-blackberry-sauce/. It is as it says a Simple Blackberry Sauce, and delicious! I left the full recipe below along with a web link to her site. To make the sauce I needed 1 bag frozen blackberries (I used Fresh Blackberries), 1/3 cup sugar (I used Splenda), 2 Tbsp cornstarch, and 3 Tbsp fruit juice or water (I used lime juice). Then pour the berries into a small saucepan and cover with sugar (Splenda), then stir to coat the berries with the Splenda (this also helps break up the berries and release some of the juices). Bring to a simmer over medium-low heat and cook for about 2-3 minutes until the sugar is absorbed. Meanwhile stir together the cornstarch and juice/water. Once the sugar is dissolved, remove from heat and gently stir in the cornstarch mixture. Put back on the heat for an addition 30-60 seconds until it’s as thick as you want it. Let cool before serving! Very tasty topping!

1 bag frozen blackberries (I believe mine was a 12-oz bag)
1/3 cup sugar
2 Tbsp cornstarch

For the second time I’m going with Newman’s Own Chicken Florentine & Farfalle Complete Skillet Meal. I came across this at Meijer a while back and I’ve tried a couple of the dinners now. It has 370 calories and 42 carbs, which isn’t bad considering it’s a complete meal. It comes frozen and contains “Freshly made Pasta and White Chicken Meat in a Parmesan and Romano Cheese Sauce.”

 

 

You want an easy and delicious Chicken Florentine meal, you have to try this! The only problem is it’s a 2 serving meal and if your just preparing for yourself it’s tough not to eat both servings! I really enjoyed this. The Pasta, Chicken and Sauce are perfect together. The only things I added was a bit of Sea Salt and a sprinkle of Kraft Shredded Parm Cheese. I baked a side of Walmart Bakery’s Garlic Knot Bread. For dessert later i baked a pan of Betty Crocker Low Fat Fudge Brownies, I added walnuts to them to make them Walnut Fudge Brownies. I took a half serving slice of Brownies and topped it with a scoop of Breyer’s Carb Smart Vanilla Ice Cream for dessert later.

Today’s Menu: Mozzarella &Turkey Sausage Flatbread Pizza

A hot fresh made Flatbread Pizza just sounded good on this cold and blustery Saturday. I made a Mozzarella &Turkey Sausage Flatbread Pizza. I used Flatout Flatbread Thin Crust Flatbread Heritage Wheat as my Flatbread. Love this Flatbread, it’s low in carbs and calories, browns up real nice, and has a fantastic pizza crust taste.

For my toppings I used Classico Traditional Pizza Sauce, Fresh Mozzarella Cheese Slices, sliced Black Olives, Hormel Sliced Turkey Pepperoni, sliced Baby Bella Mushrooms, and Jennie – O Spicy Turkey Breakfast Sausage. Everything combined makes one fantastic Pizza! A great alternative to high calorie and carb Pizza’s. This one’s right around 350 calories and its missing none of the taste of regular Pizza! For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Smucker’s Sugar Free Hot Fudge Topping.

Today’s Menu: Progresso Kitchen Favorites Chicken Marsala With Linguine andMushrooms w/ Whole Grain Bread

 

 

Tried another of the Progresso Kitchen Favorites tonight for dinner, Chicken Marsala With Linguine. I just had the Lasanga dinner last night and it was delicious so I was looking forward to this tonight. Like the other one it was easy to prepare and just as delicious! The dinner kit included Linguine Pasta, Marsala Sauce Seasoning, Marsala Cooking Wine, and Seasoned Flour. I just added the Boneless Chicken Breasts, Extra Virgin Olive Oil, Mushrooms, I Can’t Believe It’s Not Butter, and Hot Water. I’ve left the ingredients and full instructions at the bottom of the post. It’s ready in about 20 minutes. Just boil your pasta, prepare the Chicken, and serve! There’s 330 calories and 30 carbs.

The dinner came out mouth watering delicious! The Pasta was tender and the Chicken with the Mushrroms and Marsala Sauce and seasoning is incredible! I’m a huge sauce lover and this Marsala Sauce is one of the best I’ve had. These Progesso Kitchen Favorites are going to become part of the dinner menu’s for us. We also had Aunt Millie’s Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding.

Ingredients

Enriched Linguine Pasta (Semolina Wheat, Niacin, Ferrous Sulfate, Thiamin Mononitrate, Riboflavin, Folic Acid), Sweet Marsala Wine, Enriched Flour (Wheat Flour, Niacin, Iron, Thiamin Mononitrate, Riboflavin, Folic Acid). Contains 2% Or Less of: Corn Starch, Salt, Butter (Sweet Cream, Salt), Molasses*, Dextrose, Roasted Garlic*, Maltodextrin, Sugar, Natural And Artificial Flavor, Yeast Extract, Nonfat Milk, Spices, Hydrolyzed Corn And Wheat Gluten, Chives*, Partially Hydrogenated Soybean Oil, Xanthan Gum, Parsley Flakes, Cream of Tartar, Caramel Color, White Wine*, Hydrolyzed Soy Protein, Chicken Fat, Chicken Powder, Chicken Broth, Sulfiting Agents, Lactic Acid, Egg Yolk*, Citric Acid, Sodium Phosphate, Onion*, Freshness Preserved By Potassium Sorbate, Tocopherol, Ascorbyl Palmitate. *Dried. Directions
Ready in about 20 minutes. You Will Need: 1 lb uncooked boneless skinless chicken breasts; 3 tablespoons vegetable oil; 3/4 cup hot water; 1 tablespoon butter. Pasta: Fill 3-quart saucepan 2/3 full of water. Heat to boiling; stir in Pasta. Gently boil uncovered 10 minutes, stirring occasionally. Remove pasta from heat; let stand up to 5 minutes before draining. Drain pasta before serving; cover to keep warm. While water is heating and pasta is cooking, continue with chicken. Chicken: Cut each chicken breast into 5 or 6 pieces (3 x 1 inch). Empty Seasoned Flour into medium bowl or food-storage plastic bag. Coat chicken with flour; discard any remaining flour. Heat oil in 10-inch skillet over Medium-High heat; rotate skillet until oil covers bottom. Carefully add chicken to hot oil; cook 2 to 5 minutes on each side or until deep golden brown. Reduce heat to Medium. Cut off 3/4-inch corner of Cooking Wine pouch. Carefully pour wine into skillet with chicken; cook uncovered 30 seconds. Stir in Seasoning and hot water. Simmer uncovered about 3 minutes, stirring occasionally, until chicken is no longer pink in center. Serve: Stir butter into chicken and sauce until melted (if sauce becomes too thick, stir in 2 to 3 tablespoons hot water, 1 tablespoon at a time). Remove from heat. Serve chicken and sauce over pasta. Refrigerate leftovers. Kitchen Tip: Kitchen Tip: While chicken is simmering, stir in 4 to 6 oz sautéed fresh mushrooms or canned (drained) mushrooms.
