This week’s Diabetic Dish of the Week is Baked Chicken Breasts Supreme. The original recipe was from Taste of Home. The lightened up and tweaked by a friend of mine.

 

 

Baked Chicken Breasts Supreme

Recipe Ingredients:

1 1/2 cups Fat Free Plain Yogurt or Reduced Fat Sour Cream
1/4 cup Lemon Juice
1/2 teaspoon Worcestershire Sauce
1 teaspoon Celery Seed
1 teaspoon Hungarian Sweet Paprika
1 Garlic Clove, minced
1/2 teaspoon Sea Salt (to taste)
1/4 teaspoon freshly Ground Pepper
8 boneless, boneless and skinless Chicken Breast halves
2 cups Progresso Italian Style Bread Crumbs

 

Cooking Directions:

1 – In a large bowl, combine first eight ingredients. Place chicken in mixture and turn to coat. cover and marinate overnight in the refrigerator.
2 – Remove chicken from marinade; coat each piece with crumbs.
3 – Arrange on a lightly greased shallow baking pan.
4 – Bake, uncovered, at 350°F (175°C) for 45 minutes or until juices run clear.
Makes 8 servings.

Best Ever Turkey MeatloafBest Ever Turkey Meatloaf

Ingredients
2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic minced
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
½ cup fresh breadcrumbs
¼ cup egg substitute or 1 egg
½ cup ketchup
2 teaspoons Worcestershire sauce
½ teaspoon freshly ground black pepper
¾ teaspoon salt, if desired
barbeque sauce, if desired
Directions
1 – Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

2 – Add ground turkey, breadcrumbs, egg, ¼ cup ketchup, Worcestershire sauce, pepper and salt, if desired to turkey mixture; mix well. Press into 8 x 4-inch loaf pan. Top with barbeque sauce, if desired.

3 – Bake 1 hour or until the internal temperature of meatloaf is well-done, 165ºF as measured by a meat thermometer. Let stand at room temperature 5 minutes before slicing.
* Always cook to an internal temperature of 165°F.

Ingredients
1 (20-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
4 cloves garlic, minced
2 teaspoons Worcestershire sauce
2 teaspoons olive oil
1 teaspoon smoked paprika
¼ teaspoon ground cumin
8 ounces thinly sliced onions
crumbled blue cheese, if desired
4 reduced-calorie hamburger buns

 

 

Directions
In medium bowl, combine turkey, garlic, Worcestershire sauce, 2 teaspoons oil, paprika and cumin. Shape into 4 patties.

In large nonstick skillet over medium-high heat, cook the patties as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from heat and place on serving platter. Cover to keep warm.

Add oil to skillet. Heat over medium-high heat. Cook onion 4 minutes or until soft, stirring frequently. Place patties on bun bottom and spoon onion over patties and add cheese, if desired. Place bun top over patties.

Today’s Menu: Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread

 

 

 
Another day and another day of arguing with my prescription insurance. I’m beginning to wonder if it’s worth the hassle of switching insurances to save a little money. Live and learn. Warmed up to 40 degrees today, big improvement there! For dinner tonight, nothing but comfort food! I prepared Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread.

For the Turkey I used Jennie – O Extra Lean Ground Turkey Breast. To make your Sauce topping you’ll need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan and bake at 350 degrees for 50 – 55 minutes. It comes out one delicious Turkey Meatloaf! And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. Almost forgot, lots leftover so this will make some incredible Meatloaf Sandwiches!

 

 

 
For one side I prepared a must when having Meatloaf, Mashed Potatoes. I used Bob Evan’s Mashed Potatoes, as usual. Easy to prepare and comes out perfect every time. Then I also heated up a small can of Del Monte Whole Kernel Sweet Corn along with a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 lb Jennie O Extra Lean Ground Turkey Breast
1 Slice of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into a loaf pan. Place the one slice of Turkey Bacon across the top of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

It’s Wednesday and time for the Wild Idea Buffalo Recipe of the Week, Buffalo Meatloaf. I made a Turkey Meatloaf last week and can’t wait to give this one a try soon! Buffalo MeatloafWild Idea Buffalo Meatloaf

Serves 8 people or 5 yard workers.

Ingredients:

2 – pounds Wild Idea Ground Buffalo
2 – eggs
1½ – teaspoons dry mustard
1 – teaspoon chili powder
½ – teaspoon thyme
½ – teaspoon salt
½ – teaspoon pepper
1 – tablespoon dry parsley
1 – teaspoon Worcestershire Sauce
¾ – cup milk
2 – slices dry bread, crumbled
1 – small onion, diced
1½ – cup stewed tomatoes, chopped
¼ – cup ketchup

 

 

Preparation:

1 – Mix eggs and spices together.
2 – Wisk in milk.
3 – Mix in Ground Buffalo meat
4 – Add bread crumbs, stewed tomatoes and onion and mix thoroughly
5 – Shape in oval and place in loaf pan, rounding top slightly.
6 – Bake in 350 degree oven for 1 hour, brush with ketchup and continue baking for an additional 15 minutes. *
7 – Serve with baked potatoes and minted spring peas.
*Optional: Organic Bacon can be added after 30 minutes of cooking. Brush with ketchup as above.

A really perfect day out today! It’s about 77 degrees and sunny. Beautiful day but it was a very, very, long night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn’t order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausea and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run its course, which it eventually did. I won’t go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I’m not big on Buffets and that’s the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Potatoes.

 
I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I’m using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I’ll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt’s Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reach 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I’ll add Turkey Bacon to it from now on!

 
To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I’ve had, nice job Green Giant! I also prepared Bob Evan’s Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it’s an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of a Honey Crisp Apple.

Ingredients

Today’s Menu: Baked Ham & Swiss Sliders w/ Baked Crinkle Fries

 

 

We got some hot and humid weather coming, around 89 to 90 degrees. I can take the heat but the humidity is what makes me uncomfortable. For dinner one my favorite recipes, Baked Ham & Swiss Sliders w/ Baked Crinkle Fries. A while back I made some Aunt Millie’s Baked Ham & Swiss Rolls, using Aunt Millie’s Hawaiian Rolls. This time I made them using Kroger Whole Wheat Slider Buns. These are only 70 calories and 13 carbs. I also used Kroger Hickory Smoker Ham and it’s 70 calories and 1 carb per serving along with Sargento Ultra Thin Swiss Cheese which is 40 calories and 1 carb per slice, but I’ll only be adding a half a slice per sandwich.

 

This is makes one tasty sandwich! This is another one of those keeper recipes. To prepare it preheat your oven to 350 degrees. Then I Baked Whole Wheat Ham SLIDERS 003used the package of Slider Buns, 1 – 12 oz. Package of Kroger Private Selection Hickory Smokehouse Ham, and 1 package of Sargento Ultra Thin Swiss Cheese. I placed the bottom half of the bun in the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan. Then I topped the rolls in the pan with Ham slices, and top with the Swiss Cheese slices. and placed the top of the rolls on the sandwiches.

 

I then poured a topping mixture evenly over the sandwiches. To make the mixture I combined the following ingredients: 4 Tbsp. butter (1/2 stick) melted, 2 tsp. dried onion, 1 1/2 tsp. Worchestershire sauce, 1 1/2 tsp. Poppyseed dressing, and 1/2 tsp. yellow mustard. Mix well with a whisk or fork till its well combined. Pour mixture evenly over the sandwiches. Cover with foil and bake at 350 degrees for 15 minutes then remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. And as I said earlier they are delicious. The topping mixture is what gives it it’s fantastic flavor. I can’t wait to try this on some Grilled Cheese or Grilled Ham and Cheese Sandwiches! The recipe is for 12 sandwiches, I only made 6 Sandwiches so I cut back on the amount of Butter I used. I used Blue Bonnet Light Stick Butter, another calorie and carb saver! Just by doing the little things like going to an Ultra Thin cut of Meat or Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on any recipe. It all adds up. Once again the Sandwiches came out absolutely delicious! It’s just the whole combination of everything that just bursts these Sandwiches with flavor. I love these sandwiches!! To accompany my Baked Ham and Swiss Sandwiches I prepared some Baked Ore Ida Crinkle Fries. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

 

 

 
Aunt Millie’s Baked Ham & Swiss RollsBaked Whole Wheat Ham SLIDERS 001
Fresh from the oven!

Ingredients:
1 package Aunt Millie’s Hawaiian dinner rolls. 12 ct.
1 – 12 oz. Package of ham slices
1 – 8 oz. package of swiss cheese, slices
8 Tbsp. butter (one stick) melted
2 tsp. dried onion
1 1/2 tsp. Worchestershire sauce
1 1/2 tsp. Poppyseed dressing
1/2 tsp. yellow mustard
Yield: 12 servings

 

Directions:
Cut rolls in half.
Place the bottom in a deep baking pan large enough to hold 12 sandwiches, about 11″ x 14″ pan.
Top the rolls in the pan with ham slices, and top with the swiss cheese slices.
Place the top of the rolls on the sandwiches.
Mix together butter, onion, Worchestershire, dressing, and mustard.
Pour mixture evenly over the sandwiches.
Cover with foil and bake at 350 degrees for 15 minutes.
Remove foil and bake an additional 15 minutes to allow the rolls to crisp.
Remove from oven to cool and serve.

Crab Stuffed Flounder

 

 

INGREDIENTS:
1 1/2 pounds flounder fillets
1 cup crabmeat – drained, flaked and
cartilage removed
1 tablespoon finely chopped green bell
pepper
1/4 teaspoon ground dry mustard
1/4 teaspoon Worcestershire sauce
1/4 teaspoon salt
ground white pepper, to taste
3 crushed saltine crackers
1 egg white
1 tablespoon mayonnaise
1/4 cup butter, melted
1 egg yolk
5 tablespoons mayonnaise
1/2 teaspoon paprika
1 tablespoon dried parsley
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Rinse the fillets and pat dry with paper towels.
2. Combine crab meat, green pepper, mustard powder, Worcestershire sauce, salt, white pepper and the crushed saltines. Combine the egg white and 1 tablespoon mayonnaise. Stir this into the crab meat mixture.
3. Brush the flounder fillets with melted butter. Place in a lightly greased, shallow baking dish. Spoon the crab mixture over the fillets and drizzle with any remaining butter.
4. Bake the fillets at 400 degrees for 15 minutes.
5. While the fish is baking, lightly beat the egg yolk in a small bowl. Stir in 5 tablespoons of mayonnaise. Remove fish from oven and spread this mixture over the stuffing; sprinkle with paprika and parsley.
6. Increase oven temperature to 450 degrees and bake until golden and bubbly, about 6 minutes.

Spicy Party Mix
Ingredients:

13 cups freshly popped popcorn
2 egg whites, Egg Beater’s Egg Whites (1/2 cup)
1 1/2 teaspoons Worcestershire sauce
1/2 cup Splenda No Calorie Sweetener, Granular
2 tablespoons sweet Hungarian paprika
1 1/2 teaspoons cayenne pepper (less if you don’t like spicy heat)
3/4 teaspoon sea salt
1 1/2 cups dry roasted salted peanuts
1 1/2 cups whole almonds, toasted
1 cup pecan halves, toasted
2 1/2 cups low fat mini pretzels
Directions:

Preheat oven to 325°F (160°C). Spray two 11-x13-inch jellyroll pans with cooking spray and set aside.
Pop popcorn and set aside.
Blend egg white, Worcestershire sauce, SPLENDA® Granular, paprika, cayenne and salt in a small mixing bowl.
Toss peanuts, almonds, pecans and pretzels together in a large mixing bowl. Add egg white mixture and stir until thoroughly coated. Add popcorn and toss until thoroughly coated.
Place on prepared baking pans. Bake for 20 to 25 minutes or until mix begins to get crispy. Remove mix from oven and pour onto parchment or waxed paper to cool. Cool to room temperature before serving.
Note: Store mix in an airtight container

Today’s Menu: Baked Ham & Swiss Potato Rolls w/ Baked Crinkle Fries

 
A while back I made some Aunt Millie’s Baked Ham & Swiss Rolls, using Aunt Millie’s Hawaiian Rolls. This time I made them using Walmart Bakery Split Top Potato Rolls. These are only 90 calories and 16 carbs. I also used Kroger Hickory Smoker Ham and it’s 70 calories and 1 carb per serving.
This is makes one tasty sandwich! As I said the first time I made these,This is another one of those keeper recipes T o prepare it preheatBaked ham and swiss on potato roll 006 your oven to 350 degrees. Then I used a package of Potato Split Top Rolls, that I had cut in half., 1 – 12 oz. Package of Kroger Private Selection Hickory Smokehouse Ham, and 1 package of Sargento Ultra Thin Swiss Cheese. I Cut the rolls in half and Place the bottom in a deep baking pan large enough to hold 6 sandwiches, about 11″ x 14″ pan. Then I topped the rolls in the pan with Ham slices, and top with the Swiss Cheese slices. and placed the top of the rolls on the sandwiches.
I then poured a topping mixture evenly over the sandwiches. To make the mixture I combined the following ingredients: 4 Tbsp. butter (1/2 stick) melted, 2 tsp. dried onion, 1 1/2 tsp. Worchestershire sauce, 1 1/2 tsp. Poppyseed dressing, and 1/2 tsp. yellow mustard. Mix well with a whisk or fork till its well combined. Pour mixture evenly over the sandwiches. Cover with foil and bake at 350 degrees for 15 minutes then remove foil and bake an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve. And as I said earlier they are delicious. The topping mixture is what gives it it’s fantastic flavor. I can’t wait to try this on some Grilled Cheese or Grilled Ham and Cheese Sandwiches! The recipe is for 12 sandwiches, I only made 6 Sandwiches so I cut back on the amount of Butter I used. I used Blue Bonnet Light Stick Butter, another calorie and carb saver! Just by doing the little things like going to an Ultra Thin cut of Meat or Cheese or by going with low fat, reduced fat, low carb you can end up reducing the fat, calorie and carb count on any recipe. It all adds up. Once again the Sandwiches came out absolutely delicious! It’s just the whole combination of everything that just bursts these Sandwiches with flavor. I love these sandwiches!! To accompany my Baked Ham and Swiss Sandwiches I prepared some Baked Ore Ida Crinkle Fries. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

 

 
Aunt Millie’s Baked Ham & Swiss RollsBaked Ham and Swiss 003
Fresh from the oven!

Ingredients:
1 package Aunt Millie’s Hawaiian dinner rolls. 12 ct.
1 – 12 oz. Package of ham slices
1 – 8 oz. package of swiss cheese, slices
8 Tbsp. butter (one stick) melted
2 tsp. dried onion
1 1/2 tsp. Worchestershire sauce
1 1/2 tsp. Poppyseed dressing
1/2 tsp. yellow mustard
Yield: 12 servings
