Three Cheese Asparagus Gratin with Gouda, Muenster and Asiago
An elegant side dish of tender asparagus spears enrobed in a creamy, two cheese sauce topped with asiago cheese and buttery bread crumbs.

Recipe Ingredients:
4 tablespoons butter
2 pounds (approximately) asparagus, washed and tough ends removed
1 cup milk
1 teaspoon cornstarch mixed with 2 tablespoons cold water
1 cup (4 ounces) Wisconsin Gouda (plain or smoked) cheese, shredded
1 cup (4 ounces) Wisconsin Muenster cheese, shredded
1 teaspoon salt
1 cup coarse bread crumbs
1/2 cup (2 ounces) grated Wisconsin asiago cheese
1/4 teaspoon freshly ground black pepper

Cooking Directions:
1 – Preheat oven to 425°F (220°C). Grease a 9x9x2-inch glass baking dish with 1 tablespoon of butter.
2 – Arrange the asparagus in the baking dish.
3 – Gently simmer milk over medium heat. Stir in the cornstarch mixture to thicken slightly. Add the Gouda and Muenster cheeses and whisk in until smooth and creamy; season with the salt. Pour the cheese sauce over the asparagus.
4 – Melt the remaining 3 tablespoons butter. Toss with the bread crumbs, Asiago and pepper. Sprinkle over the asparagus mixture.
5 – Bake for 20 to 25 minutes, or until bubbly and lightly browned.
Makes 6 servings.

Asiago Cheese Puffs
Asiago Cheese PuffsServe these tasty, light-as-air cheese puffs as is, or stuff them with a savory filling of your choice.

Recipe Ingredients:
1 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon salt
Cayenne pepper, to taste
1 cup water
1 cup all-purpose flour
4 large eggs
1/2 cup Wisconsin Asiago Cheese, finely shredded
1/2 cup Wisconsin Aged Parmesan Cheese, grated
1/2 cup Wisconsin Pepato Cheese, shredded

Cooking Directions:
1 – Preheat oven to 400°F (205°C).
2 – In small saucepan, combine the butter, oil, salt, cayenne pepper and water; bring to boil. Add the flour all at once; stir until the mixture forms a smooth ball. Cook over low heat, until the mixture is drier, but still smooth; place in a mixing bowl. Beat in eggs, one at a time; stir in cheeses.
3 – Drop tablespoonfuls of the batter onto greased baking sheets.
4 – Bake for 20 minutes or until lightly browned and firm. Serve immediately.
Makes 30 servings.

Variations:

For lighter puffs, use 2 whole eggs and 4 egg whites instead of 4 eggs.

Other hard and semi-hard cheeses can be substituted in this recipe.

Rustic Asiago Chicken Portobello Skillet
This rustic Italian-style chicken and portobello mushroom and orzo pasta dish makes a deliciously hearty one-skillet meal.

Recipe Ingredients:
2 tablespoons butter
1 cup onion, chopped
3 garlic cloves, minced
3 to 4 medium Portobello mushrooms, sliced
1 1/4 cups very hot water
1 teaspoon balsamic vinegar
1 chicken bouillon cube
1/4 cup sun-dried tomatoes, finely chopped (not packed in oil)
2 cups cooked chicken, diced
2 cups cooked orzo (or other tiny pasta)
2 tablespoons fresh basil, chopped
1 cup Wisconsin Mozzarella cheese, shredded
2 plum tomatoes, chopped
6 ounces Wisconsin Asiago cheese, shaved*

Cooking Directions:
1 – In a large 12-inch nonstick skillet over medium-high heat, melt butter. Add onion and garlic, and sauté 2 minutes.
2 – Add mushrooms to pan, stir and sauté for 3 more minutes.
3 – In a small bowl, combine water, vinegar, bouillon cube and sun dried tomatoes, stirring until bouillon cube is dissolved. Add this mixture to skillet.
4 – Stir in chicken and cooked orzo. Reduce heat to low and simmer 5 to 6 minutes until excess liquid is thickened.
5 – Stir in basil, Mozzarella cheese and plum tomatoes. Heat through an additional 2 minutes.
6 – Garnish each serving with shavings of Asiago cheese. Serve immediately.
Makes 6 servings.

*Use a vegetable peeler to shave the Asiago cheese.
