Butterflied Grilled Chicken with a Chile-Lime Rub
A quick and efficient way to cook a whole bird on the grill is to butterfly, or “spatchcock” it. When cooking a whole chicken on the grill, try searing the chicken first over direct heat then finish cooking over indirect heat (as instructed in this recipe). That way you avoid the all too common problem when grilling–chicken burned on the outside and raw in the center. For best flavor, let the chicken marinate in the rub overnight in the refrigerator. Serve with lime wedges and fresh salsa………

Fajita Chicken Wings with Avocado Dipping Sauce

Recipe Ingredients:
2 1/2 pounds chicken wings, split at the joint, wingtips removed
2 packages of fajita or taco seasoning
3/4 cup ketchup
1/4 cup vegetable oil
1/4 cup Worcestershire sauce
1 teaspoon salt

Cool Ranch Avocado Dipping Sauce:
2 Hass Avocados from Mexico
1 package ranch dressing mix
1/2 cup sour cream
1 tablespoon lemon juice

Cooking Directions:
1 – Mix the fajita seasoning, ketchup, vegetable oil, Worcestershire sauce and salt in a one gallon zipper-style plastic bag. Add chicken wings, seal bag and shake until the wings are completely covered in the marinade. Refrigerate at least one hour, or overnight.
2 – Preheat oven to 375°F (190°C).
3 – Place wings in a single layer onto a lightly greased or nonstick baking sheet. You may have to use two baking sheets to fit all of the wings.
4 – Place wings in oven and bake for 25 to 30 minutes. Serve warm with the Cool Ranch Avocado Dipping Sauce (recipe below).
5 – For Cool Ranch Avocado Dipping Sauce: In a small bowl, combine the avocado, ranch dressing mix, sour cream, and lemon juice. Mix thoroughly until smooth.
Makes 4 servings.

Chili con Carne
This chili con carne with ground beef is a serious crowd-pleaser, whether you’re hosting a football-watching party or just feeding a hungry family. It has a nice, beefy, beany flavor and just enough spice. You’ll be surprised that a chili that comes together in less than an hour has so much flavor. Three types of chile peppers (fresh poblanos, chili powder and chipotles in adobo) add depth and complexity. Poblanos also add some color to the chili–if you can’t find them, you can sub bell peppers of any color, though they won’t add heat. Using lean ground beef makes this chili healthier and also keeps it from being greasy. Be sure to brown the beef well for the best flavor: you want to stir to break up the chunks, but don’t stir too much or the beef won’t sear at all. Serve with cornbread and bowls of sour cream, chopped avocado, tomatoes, scallions, cilantro and hot sauce and let everyone customize their own bowl……………………

We’re thrilled to announce that the 13th annual Weekend of Fire will take place on October 5 and 6 at The Oscar Event Center! This year, we’re bringing you more samples, more fiery foods, and more heat with brand new competitions, newly-imagined WOFI awards, and plenty of the spicy foods that you love! Join us at the Oscar Event Center at Jungle Jim’s Fairfield on Saturday, October 5 from 11:00 AM to 7:00 PM and Sunday, October 6 from 11:00 AM to 4:00 PM to sample and celebrate hundreds of fiery foods and, most of all, to have fun!

Craft your own hot and spicy cocktail at The Singe Bar! Our bartenders will provide the spirits for you to make the perfect Bloody Mary. Make them as mild or as wild as you want and challenge your friends to try something new!

New this year, we’re pitting vendor against vendor in a fiery foods showdown to determine your favorites! Recipes from participating vendors will go head to head in the Arena of Fire, and we’ll let you sign-up to try them, if you dare. Vote for your favorites to decide the 2019 champion!

You can purchase your favorite products right from the manufacturers! Each booth will have plenty of product on hand, so sample all you please and be sure to take some home for later. You can find some of the best deals of the year at the booths during the show.

The Union Centre Food Truck Rally was a huge success in 2018 with approximately 10,000 diners! It is one of the TOP 5 Butler County events…We hope you’ll check it out this year!

Once a year Union Centre Boulevard Merchant Association gathers Cincinnati’s best food trucks at The Square @ Union Centre for a Food Truck Rally! Last year there were over 40 food trucks with a variety of food options including smoothies, barbecue, mac and cheese, seafood, heart-healthy, vegan, sweet treats, Cajun, and Cuban! There is plenty of entertainment with live bands throughout the day, as well as beer and wine for adult diners.

There is no admission fee for the event, but each vendor charges their own prices for their menu items. UCBMA sells beer and wine at the event on a cash-only basis, to cut down on credit card transaction fees. There is an ATM on premises for you convenience.
