Today’s Menu: Carne Asada Marinated Buffalo Steak Strip Tacos

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 73 degrees and sunny out today. Running short on time today so I’ll just tell you about Dinner. For Dinner tonight I prepared Carne Asada Marinated Buffalo Steak Strip Tacos.

 

For the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips with water and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. The Omnivore Salt is a blend of Natural Sea Salt and Organic Spices. Then I grabbed a small Hefty Storage Bag and added some Kroger Private Selection Mexican Inspired Carne Asada Marinade. Then added the Buffalo Steak Strips and let the Steak Strips Marinate in the fridge until it was time to prepare them.

 

Next I got a Cast Iron Skillet and added 1 tablespoon of the Cooking Olive Oil, heated the Skillet on Medium High Heat. I got the bag out of the fridge and shook off the excess Marinade and placed the Strips on a plate to drain. Then over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. Oh the aroma when this is cooking up, it just fills the kitchen! I removed the Strips from the skillet into a bowl. These Steak Strips are so tender and delicious! Plus the Carne Asada Marinade gives it one incredible flavor! Love these Wild Idea Buffalo Premium Steak Strips.

 

Along with the Steak Strips I added La Preferdia Mild Jalapeno Slices, Olives (Black and Green), Lettuce Blend, fresh Shredded Dutch Gouda and all served in a La Banderita Carb Counter Tortillas. These are some of the freshest Tortillas you can find and they are only 35 calories and 3 net carbs per Tortilla. Add all this together and you have some mighty tasty Tacos.

Today’s Menu: Carne Asada Marinated Buffalo Steak Strip Tacos

 

For Breakfast I fried up some Double Smoked Bacon and some Simply Potatoes Southwest Style Shredded Hash Browns. I also had a cup of Bigelow Decaf Green Tea. 54 degrees, cloudy and very windy out today. We had a high of 54 and it dropped from there throughout the day. Did some laundry and had the computer tuned up. I had it tuned up by Geek Squad. It runs so much quicker now. For Dinner tonight I prepared Carne Asada Marinated Buffalo Steak Strip Tacos.

 

For the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. Today’s Menu: Buffalo Steak Strip Street Tacos

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 93 degrees, humid and partly sunny. They say rain late, but I doubt it. I water our front lawn and all the bushes every morning. But it’s a losing battle with the grass, every one’s yard is baked and brown. I’ll be glad to see a couple of rainy days! I finished touching up the trim on the shed finally. Turned out to be more of a job than I thought. Anyway for Dinner tonight I prepared Buffalo Steak Strip Street Tacos.

 

These are so delicious, I just can’t wait to have them again! Great flavor and the Buffalo Strips would just melt in your mouth! I was going to order more from Wild Idea Buffalo but they were out of stock until this past Friday. Ordered 3 more packages and they arrived Monday! So I was saying for the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. Today’s Menu: Buffalo Steak Strip Street Tacos

 

For Breakfast I Scrambled a couple of Eggs and toasted a slice of Aunt Millie’s Live Carb Smart Bread that I buttered with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Very humid and 86 degrees. Had a passing shower or two. After Breakfast I got the leaf blower out and cleaned off the deck and driveway. Watered the plants and picked a few Bell Peppers and gave them to a neighbor. And that was my day, just not feeling up to par. I’m not sick, a few aches and pains, but I just don’t feel 100%. Anyway for Dinner tonight I prepared Buffalo Steak Strip Street Tacos.

For Breakfast I toasted a Thomas Light English Muffin and topped it with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Hot and Humid out there today! It was 91 degrees, sunny, and humid. The Cicadas in a tree across the street are deafening, you can’t hear anything out there but the Cicadas. Not a thing to do today. I watered all the flowers and shrubs early and again after the sunset this evening. Besides that I just laid around. For Dinner tonight I prepared Buffalo Steak Strip Street Tacos.

Today’s Menu: Buffalo Strips w/ Mushrooms, Potato Pancakes and Sugar Snap Peas

 

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Only 49 degrees and cloudy out today, a good day to stay in. And I did after I picked up a grocery order from Kroger. With the increase of the China Flu I thought I would start to pick my groceries up. I just order online and schedule a time to pick them up. Did a load of laundry and a few chores around the house. For Dinner tonight Cast Iron Skillet Buffalo Strips w/ Sauteed Mushrooms, Potato Pancakes and Sugar Snap Peas.

 

To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. Next I got a Cast Iron Skillet and added 1 tablespoon of the Extra Light Olive Oil, heated the Skillet on Medium High Heat.

 

Over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. I removed the Strips from the skillet into a bowl. I turned the Heat to Medium and then using the same Skillet I Sauteed some Mushrooms. I seasoned those with Ground Roast Cumin, Dried Parsley, Sea Salt, and Ground Black Pepper. Turning and tossing the Mushrooms often and for about 4 minutes. I removed them from the Skillet into a bowl. I used the same Skillet and Sauteed the Mushrooms.

 

For one side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.

 

For a side I prepared a bag of Mann’s Stringless Sugar Snap Peas. To prepare them I used a medium size skillet. I added a tablespoon of Extra Light Olive Oil and heated it on medium heat. As the skillet was heating I emptied the bag of Snap Peas into the skillet. Stirred a few times and cooked them for 5 minutes. Ready to serve. Very good Snap Peas, nice and full! For Dessert/Snack later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

Manischewitz Potato Pancake Mix

Directions Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Today’s Menu: Buffalo Steak Strips Hoagie and Baked Fries

 

 

For Breakfast this morning I Scrambled a couple of Eggs and topped them with a sprinkle of Sargento Off the the Block 4 State Cheddar. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Sunny and 70 degrees out today. With the rain and wind that came in overnight my yard and deck were full of leaves! So I got my cart, rake, and leaf blower out of the shed. I ended up filling up 2 1/2 large garbage bags with leaves. Then gave a neighbor a hand raking his yard. For Dinner tonight I prepared a Buffalo Steak Strips Hoagie and Baked Fries.

 

To make my Hoagie I’ll be using Wild Idea Buffalo – Premium Steak Strips, Extra Light Olive Oil, Wild Idea Omnivore Salt, Meijer Perfection Whole Grain Mini Sub Buns, Hellman’s Organic Mayonnaise- Spicy Chipotle, and Pennsylvania Dutchman Sliced Mushrooms. I was going through the freezer looking for something for upcoming Dinner and came across a package of Wild Idea Buffalo – Premium Steak Strips. I had forgot that I had purchased them a while back and had them in the freezer. I sat the package in the fridge overnight to thaw. The package contains pre-cut strips from the Tenderloin, New York Strip, Ribeye and Sirloin. I had some a quite a while back and they are just flat out delicious!

 

To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. The Omnivore Salt is a blend of Natural Sea Salt and Organic Spices. Then I left the Strips rest. Next I got a Cast Iron Skillet and added 1 tablespoon of the Extra Light Olive Oil, heated the Skillet on Medium High Heat.

 

Over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. I removed the Strips into a bowl. I turned the Heat to Medium and then using the same Skillet I Sauteed some Mushrooms. I seasoned those with Ground Roast Cumin, Dried Parsley, Sea Salt, and Ground Black Pepper. Turning and tossing the Mushrooms often and for about 4 minutes. I removed them from the Skillet into a bowl.

 

To serve I got one of the Hoagie Rolls and added some of the Spicy Chipotle Mayonnaise to the bottom half of the roll, I put on nice and thick. I have fallen in love with this Mayo! Nice Spice, a little heat but nothing overpowering. Then I added my Buffalo Steak Strips, topped that with the Sauteed Mushrooms and it’s ready to eat! Those Steak Strips are nothing less than incredible! So tender and flavorful. The Chipotle Mayo and Sauteed Mushrooms are perfect with the Steak Strips. One very delicious Steak Hoagie!

This week’s Wild Idea Buffalo Recipe of the Week is – VIETNAMESE BISON STEAK SALAD. Included is the recipe for the Dressing and Salad. VIETNAMESE BISON STEAK SALAD
A fabulous combination of ingredients! Feel free to use any vegetables of your choice. Not only is it tasty and beautiful, but it’s healthy too! *Optional: Rice Noodles may also be added to this salad. Prepare as directed and place the noodles in the center of the plate. (Makes 4 servings)

Dressing Ingredients:
1 – cup fresh cilantro, lightly packed
2 – cloves of garlic, about 1 tablespoon
1 – jalapeno pepper, coarse chopped
¼ – cup pure cane sugar
¾ – cup fresh lemon juice, warmed
½ – cup Asian fish sauce
¼ – cup sesame oil

Preparation:
1) In a blender, purée the cilantro, garlic, sugar, and lemon juice.
2) While the motor is still running, add the remaining ingredients. Set aside or refrigerate the dressing until needed.

Salad Ingredients:
1 – 1 lb. Premium Steak Strips
1 – tablespoon olive oil
½ – small red cabbage, finely julienned
½ – red onion, finely julienned
2 – carrots, finely julienned or use peeler for ribbon effect
1 – yellow bell pepper, finely julienned or zucchini ribbons
½ – cucumber, diced
½ – cup fresh mint, julienned
½ – cup fresh basil, julienned

Preparation:
1) Rinse the Wild Idea bison steak strips and pat them dry. Place them in a glass dish and drizzle with
1/2 cup of the dressing. Marinade for 2 to 4 hours.
2) Place red cabbage in a bowl and sprinkle with a little salt. Squeeze cabbage to tenderize. Add the red onion and toss together.
3) Mix cucumber, mint, and basil together. Add ¼ cup of dressing to the cucumber mixture and set aside to marinade.
4) Arrange julienned or ribbon vegetables on 4 plates.
5) Remove the bison steaks from the marinade, shacking off the excess.
6) Over high heat, heat the olive oil and sauté the bison strips for about 4 minutes, tossing to turn occasionally
7) Place the seared steaks on top of the julienned vegetables, drizzle with desired amount of dressing, and sprinkle with the cucumber mixture.

Today’s Menu: Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad

 

 

To start my Sunday off I had a Poached Egg that I served on a toasted Jennie – O Whole Grain English Muffin. I also made a cup of Bigelow Decaf Green Tea. After Breakfast I headed to Kroger for a few items I need for Dinner tonight. I also stopped by McDonald’s and picked up Breakfast for Mom. Mom went on to Church and I cleaned the house, cleaned the oven, and did a load of laundry. It’s a bit hotter and more humid out but still beautiful outside, a high of 85 degrees. Later in the day i went over to see Dad. He was having a pretty good day today, just wish he could come home. He’s been in the Hospital and Rehab Units more often than he’s been home this year. Back home, For Dinner tonight its a Marinated Bison Strip and Provolone Steak Hoagie w/ Tossed Salad.

 

 

 

I had seen on the Wild Idea Buffalo website that they had Buffalo Premium Steak Strips and had been wanting to try them. So on my latest order that I placed with Wild Idea Buffalo I ordered a package, and having them for Dinner tonight. I’m preparing them and having them as a Buffalo Steak Hoagie.

 

 

 

 

I had the package in the freezer so I let thaw overnight in the fridge. I opened the package up this morning and what beautiful cuts of Meat! The Slices were a dark red and just made your mouth water looking at them! Washed the Slices off in water and patted them dry. Then put them in a sealed plastic container where I added Kraft Lite House Italian Dressing to let them marinate until I was ready to prepare them.

 

 

 

When I was ready to start Dinner I first grabbed a skillet, sprayed it with a light coat of Pam Cooking Spray, added 2 tablespoons of Extra Light Olive Oil, and heated the skillet on medium heat. I got the container of Buffalo Strips out of the Fridge. I pulled the Strips out of the Marinade, shaking off the excess and added them to the preheated skillet. I sautéed the Buffalo Strips for about 4 minutes, tossing to turn occasionally. Removed them from the heat and put the Strips in a bowl. As the Steak was finishing I Sauteed some Mushrooms to go with the Steak Strips.

 

To make my Hoagies I’ll need; Kroger Brand 100% Whole Wheat Hoagie Rolls (these always taste so fresh), the Buffalo Strips, Sargento Provolone Sliced Cheese, Kraft Lite Italian Dressing, Emeril’s New York Deli Style Mustard, Sauteed Mushrooms, and Shredded Lettuce.

 

 

 

 

To start I split the Hoagie Roll open. On the bottom bun I added the Provolone Cheese, then the Buffalo Steak Strips, added a little of the Italian Dressing, Sauteed Mushrooms, then the Shredded Lettuce, and finally on the bottom of the bottom of the top Bun I spread some of the Emeril’s New York Deli Style Mustard. Done and ready to eat! The Buffalo Strips were even better than they looked, and look incredible! So tender and they have that incredible Wild Idea Buffalo taste. Paired with all the toppings, we have another keeper recipe! I’ll be ordering another package of the Wild Idea Buffalo – 1 LB. PREMIUM STEAK STRIPS again! They make a fantastic Steak Hoagie!

 

 

To go with the Hoagie I had a Tossed Salad topped with Kraft Classic Fat Free Catalina Dressing, I got the Salad from the Kroger Salad Bar. For the longest time my body was having trouble digesting leafy green vegetables, they would leave me with upset stomach. But as late I haven’t had any problems, which I’m glad I love Salads! Then later on for Dessert/Snack I’m having a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.
