SOUTHWEST BUFFALO BURGER
This fantastic burger was the winner and favorite in our buffalo burger cook off! This simple recipe makes one fantastic burger. (Makes 3 to 4 burgers or 8 to 10 sliders)

Ingredients:

1 Wild Idea 1 lb. Premium Ground Buffalo
1 Tb. olive oil +
1 tsp. salt
1 tsp. black pepper
1 tsp. cumin
1 tsp. garlic powder
1 cup pepper jack cheese, small cubes
½ cup (2) green chili’s, roasted, peeled coarse chopped
Pico de Gallo
Jalapeno Hollandaise
Buns of choice

Preparation:

1.) Mix meat, olive oil, spices, cheese and chili’s together in bowl with hands and portion into desired patty size.
2.) Refrigerate for ½ hour to assist with binding.
3.) Preheat clean grill to 500*+.
4.) Brush burgers with a little extra olive oil and place burgers on hot grill, grilling 2 minutes each side. Keep grill lid closed.
5.) Brush with olive oil and grill ½ minute each side to give burger a bit of a crust.

Serve on buns and top with Pico de Gallo and Jalapeno Hollandaise! Accompany with *Tequila, Lime Buffalo Chips. *Recipe included with purchase.

Pico de Gallo (makes 2 cups)

Ingredients:

1¼ cup finely diced cherry tomatoes
½ cup finely diced onion, white, red or green
¼ cup finely chopped cilantro
1 Tb. sugar
¼ tsp. cardamom
½ tsp. each: coriander, cumin, salt & pepper

Juice of 1 – Lime

*optional: pinch of cayenne

Toss all ingredients together. Season to taste.

Jalapeno infused Hollandaise

Ingredients:

2 organic eggs, yolks only
½ teaspoon coarse mustard
½ teaspoon garlic, chopped
2 tablespoons lemon juice
½ teaspoon black pepper
1 Jalapeno, roasted, peeled and seeded
1 stick salted organic butter, melted

1.) Place all ingredients in blender and puree.
2.) With blender going, slowly add melted butter. Blend until mixture becomes thick.

Place leftover hollandaise in container and store in refrigerator for up to 5 days. Use as a spread on sandwiches or as a dip for crudités.

BUFFALO SLOPPY JOE’S
There is something about a Sloppy Joe that makes me feel like a kid again. It brings back fond memories of county fairs and the smell of roaster pans filled with this barbecue concoction. I like to make a batch up and have on hand when a hot sandwich is in order.

Ingredients:
2 – teaspoons olive oil
1 – onion, diced fine
2 – pounds Wild Idea Ground Buffalo
2 – teaspoons each: black pepper, cumin, mustard
1 – teaspoons each: salt, chili powder
2 – tablespoons brown sugar
1 – tablespoons garlic, chopped
¾ – cup ketchup
¾ – cup water
hamburger buns
pickles

Instructions:

1 – In heavy skillet over medium high heat, heat oil.
2 – Add chopped onion and sauté for 4 minutes.
3 – Crumble ground buffalo into pan, stirring together and breaking into smaller pieces. Add spices while meat is browning and stir in.
4 – When the meat is browned, add ketchup and water, stir to incorporate and let come to full heat.
5 – Season to taste with salt and pepper. Serve on hamburger buns or smaller slider size buns.

RED, WHITE, and BLUE BUFFALO BACON BURGERS
The quintessential Buffalo Burger, complete with Buffalo Bacon, Blue Cheese and a touch of fruit preserves! This – soon to be new favorite, will have you making it again, and again and again. Enjoy!

Ingredients:

2 – 1 lb. Premium Ground Buffalo
3 – tablespoons olive oil, plus a little more
1/2 – teaspoon mustard
2 – teaspoon ketchup
1/2 – teaspoon thyme
2 – teaspoon salt & pepper
1 – 10 oz. package Buffalo Bacon
6 – ounces blue cheese
½ – cup chokecherry or plum preserves, warmed
6 – hamburger buns

Preparation:

1) Mix 2 tablespoons olive oil, mustard, ketchup, thyme, salt and pepper together.
2) Mix above with Ground Buffalo until well incorporated.
3) Divide into 6 portions and at pat out into bun size patties.
4) In large skillet over medium high heat, add the other tablespoon of olive oil. Place buffalo bacon in pan and cook until crispy or desired doneness, turning once during cooking time.
5) Preheat grill to high heat, 500 degrees. Insure grill grates are clean.
6) Brush burgers with a little oil and place on grill. Close grill lid during grilling time. Grill for 2.5 minutes. Turn burgers and top with blue cheese. Close lid and grill for an additional 3 minutes.
7) Remove burgers from heat, and allow too rest for a few minutes.
8) Place Buffalo Blue Burgers on bun, drizzle with a little of the warmed preserves and top with Buffalo Bacon. Delicious!

What’s a Super Bowl Party without a big bowl of Chili at halftime! From the Wild Idea Buffalo website its a recipe for 4 BEAN BISON CHILI! Chili is so delicious and so many ways and ingredients to prepare it with. But using Ground Bison takes it to a new level! You’ll be using Wild Idea Buffalo Premium Ground Buffalo along with Spices (many spices), Stewed Tomatoes, Golden Pepperoncini, and 4 different types of Beans (butter beans, black beans, kidney beans, and pinto beans). The recipe calls for preparing it in a heavy stew pot but I think this one would be great preparing it in a slow cooker! Start it earl on low heat and let it cook until served at halftime of the game! This makes my mouth-water just talking about it!

4 BEAN BISON CHILI
If you are looking for a great chili to bring to your next chili cook-off or football game, then try this recipe and let the compliments roll in. Even better the second (or third) day – if there’s leftovers. (Makes 10 servings)

INGREDIENTS:

2 1 lbs. Premium Ground Buffalo (https://wildideabuffalo.com/collections/premium-ground-bison-burgers/products/5-lb-ground-buffalo)
2 tablespoons olive oil
1 onion, chopped
2 tablespoons fresh garlic, chopped
2 tablespoons cumin
2½ tablespoons chili powder
½ tablespoon oregano
½ tablespoon thyme
2 teaspoons coriander
½ teaspoon each smoked paprika and cayenne
1 tablespoon black pepper
2 teaspoons salt
1 Quart stewed tomatoes
1 Quart tomato sauce
8 golden pepperoncini, diced + juices
1 15oz can each: butter beans, black beans, kidney beans, and pinto beans, (drained – but not rinsed)
1 lemon, juiced
2 cups water

PREPARATION:

1) Mix all dry spices together.
2) In heavy stew pot, over medium high heat, heat olive oil.
3) Add Wild Idea bison meat, crumbling into small pieces. Lightly brown, stirring constantly for 4 minutes.
4) Add onion, garlic and seasonings. Continue to brown, stirring occasionally for 10 minutes.
5) Add remaining ingredients and bring to a full boil. Reduce heat and simmer uncovered for ½ to 1 hour, or until desired thickness is achieved.

Adjust seasoning to taste. Garnish with fresh lime or lemon wedges, fresh chopped cilantro, sour cream, or grated cheddar cheese. Serve with Cheesy Jalapeño Corn Bread, recipe included with purchase, upon request.

Started my morning off by making a Breakfast Sandwich. Toasted a Healthy Life Whole Grain English Muffin and as that toasted I fried up some Boar’s Head Deluxe Ham and as that was finishing I took a slice of Sargento Swiss Cheese and layered that on to top of the Ham while in the skillet. Love these English Muffin Breakfast Sandwiches! Heat, humidity, and showers throughout the day,seems to a holding pattern. We got a whole lot of rain overnight and into today. Helped out Mom on a couple of loads of laundry. Then had to do some minor repair on the Hoveround. For Dinner tonight I prepared some “Not So Sloppy” Buffalo Joe’s w/ Baked Crinkle Fries.

It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joe’s I used a 1 lb. package of Wild Idea Buffalo Premium Ground Buffalo, 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Hamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe’s a deeper and richer flavor.

 

 

 

“Not So Sloppy” Buffalo Joe's w Baked Crinkle Fries 005
Using a large skillet to brown the Buffalo in I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Healthy Life Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Super Soup Trio

With the Super Bowl just around the corner I wanted to share a trio of super soup recipes that can help you celebrate the big game with health and sustainability. Each of these recipes is easy to prepare, but guaranteed to be a huge hit.

Black Bean, Yam, & Buffalo Andouille Stew

A healthy, hearty, super tasty combination that is also quick and easy to put together! Now that’s a touch down! (Makes 4 to 6 servings)

Ingredients:

SUPER SOUP TRIO

Super Soup Trio

1 – tablespoon unsalted butter
1 – tablespoon olive oil
1 – yam (about 3 cups), peeled and diced
1 – teaspoon cumin
½ – teaspoon cardamom
1 – teaspoon chili powder
3 – cups vegetable broth
1 – 10 oz. can chopped tomatoes
½ – pound Wild Idea Buffalo Andouilli Sausage
2 – cans black beans, drained & rinsed
Crumbled Feta cheese

Preparation:

1) In heavy stockpot, heat butter and olive oil over medium high heat.

2) Add chopped onions, yams, and spices, stirring to incorporate, and sauté for 7 minutes.

3) Add broth, stewed tomatoes, and Andouille sausage and bring to a full boil. Reduce heat to simmer and cook for about 10 minutes.

4) Add black beans, stir to incorporate, and allow to come to full heat.

5) Ladle hot soup into bowls and garnish with crumbled feta or goat cheese! Yum!

Creamy Buffalo & Mushroom Soup

I am just going to come right out and tell you that this recipe is super delicious! It has an earthy, elegant flavor, and you will love the texture. (Serves 6 or 12 as a first course)

Ingredients:

5 – tablespoons butter
10 – ounces Cremini mushrooms, stemmed & chopped (reserve 3)Wild Idea
1 – tablespoon fresh rosemary, finely chopped + 1 small sprig
3 to 5 – garlic cloves, chopped
½ – onion, chopped, about half a cup
3 – cups buffalo or organic beef broth
8 – ounces cream cheese, cut into cubes
1 – pound package Wild Idea Premium Ground Buffalo
1 – teaspoon salt
1 – teaspoon pepper
2 – tablespoons fresh squeezed lemon juice

Preparation:

1) In a heavy bottom stockpot over medium high heat, melt 3 tablespoons of the butter. Add chopped mushrooms, rosemary, onions, and garlic and sauté until tender, about 7 minutes, stirring occasionally.

2) Add broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.

3) Add cream cheese cubes and transfer all of the ingredients into a blender.

4) Return pot to the stove over medium high heat and melt another tablespoon of butter. Crumble the ground buffalo in the hot pan breaking up further with a spatula end, stirring continuously until lightly browned. Do not overcook or allow the meat to become hard.

5) Add browned meat to the blender or food processor and puree until smooth. *For a silkier texture I process soup again in my “smoothy”, or smaller blender.

6) Return soup to pot and re-warm over medium heat, stirring occasionally.

7) Take remaining 3 mushrooms and finely dice, and mince short sprig or head of a rosemary sprig. In a small sauté pan over medium high heat, melt remaining tablespoon of butter. Add mushrooms and sauté until dark brown, adding the rosemary right at the end. Drain onto a paper towel.

8) Add lemon right before serving. To serve, ladle desired portions into bowl and sprinkle with crunchy mushroom bits. Accompany with crusty bread. So good!

Potato, Chorizo, and Spinach Chowder

Wild Idea’s sausage are so flavorful they turn can turn and average recipe into an extraordinary recipe. Simple preparation and it’s packed with flavor! (Makes 6 servings)

Ingredients:

1 – pound Wild Idea Buffalo Chorizo
1 – small onion, chopped
1 – pound potatoes, chopped
3 – cups buffalo or organic beef broth
1 – teaspoon each; salt, pepper, and Italian seasoning
1 – cup cream
5 – ounces baby spinach, chopped
Grated Parmesan

Preparation:

1) In a stockpot over medium high heat, coarse crumble Chorizo sausage into heated pan. *The fat will release from the sausage shortly, so additional oil is not necessary.

2) Add onions and garlic. Stir in to incorporate and sauté until the meat is browned.

3) Add the chopped potatoes and stir to incorporate. Continue to cook, stirring occasionally for 5 minutes. *This will help absorb some of the oils form the sausage.

4) Add the broth and bring to a boil. Reduce the heat and simmer for 10 minutes.

5) Increase heat back to medium high and add the cream. Bring to full heat.

6) Add the spinach and stir to incorporate, cooking only about 2 minutes, and shut the heat off.

7) To serve, ladle desired portions into bowls and top with grated cheese. Super good!
