One type of item you can purchase at the Wild Idea Buffalo website (https://wildideabuffalo.com/) are CHARCUTERIE items. But wait you ask; What is Charcuterie? I wasn’t sure of the exact description myself!

Charcuterie (pronounced “shahr-ku-tuh-ree”) is the art of preparing and assembling cured meats and other meat products. But, many people use the term charcuterie to refer to an assortment of meats that are paired with different accompaniments, such as toast, fruit, cheese, and sauces. If you want to offer charcuterie on your menu, there are a handful of basics to understand first, from identifying some of the most popular types of charcuterie, to what makes a really impressive completed board.

This week’s Wild Idea Buffalo Recipe of the Week – BUFFALO PASTRAMI AND PEACH SANDWICH WITH ORANGE AIOLI. It’s made using the Wild Idea Buffalo Pastrami. One Delicious and Healthy Sandwich! BUFFALO PASTRAMI AND PEACH SANDWICH WITH ORANGE AIOLI
This sandwich is terrific grilled, but also great as a cold sandwich. Just slice, stack and serve! (Makes 4 servings)
Ingredients

2 – packages 8 oz. Buffalo Pastrami
2 – Peaches, halved and pit removed
1 – Red Onion, peeled and sliced, lightly oiled
4 oz. – White Cheddar, or mild cheese
8 – slices Artisan Whole Grain Bread
1 – Tb. Butter
2 – Tb. Orange Marmalade
8 – Tb. Orange Aioli *see recipe below

Make Orange Aioli, and refrigerate until needed.

1 – Preheat gas grill to medium high heat. Ensure grill grid is clean.
2 – Divide Pastrami into 4 piles.
3 – Spray grill with non-stick spray (I don’t usually use grilling spray, but it works great for grilling fruit).
4 – Place the piled Buffalo Pastrami, Red Onion, and Peach halves on grill, and heat for 1½minutes on the first side. Close grill lid during cooking.
Turn all items over. Divide cheese, and place on top of hot Buffalo Pastrami. Place a dollop of orange marmalade on top of each onion slice. Brush one side of bread with butter and place on grill, butter side down. Close lid and continue to grill for 1 minute.
5 – Remove items as they are ready, bread should be light grilled, cheese should be melted, and onions should be soft.
6 – Remove peaches, pull skin off and slice each half in two.
7 – Layer Buffalo Pastrami with cheese, grilled peaches and red onion on non- grilled side of bread. Spread on Orange Aioli and place remaining grilled bread on top.
8 – Pass with additional Aioli, and serve with green salad.

Orange Aioli:

2 egg yolks, blend until pale
1 Tb. orange juice concentrate, at room temperature
½ tsp. dry mustard
½ tsp. each, salt & pepper
¼ tsp. cayenne pepper
¾ cup olive oil

1 – In blender mix egg yolks until pale.
2 – Add, orange juice concentrate, and spices. Puree until blended.
3 – With motor running slowly add olive oil.
4 – Adjust seasoning to your taste.

Pour Orange Aioli into glass container and refrigerate until needed.

BUFFALO PASTRAMI and ZUCCHINI LINGUINI

Ingredients:

1/4 lb. Wild Idea Buffalo Pastrami, julienned
4 oz, linguini, cooked al dente
(reserve 1 cup pasta water)
1 medium sized zucchini
4 Tb. basil pesto
1/2 cup cherry or pear tomatoes
grated parmesan
Cooking Directions:

1 – Prepare Buffalo Pastrami and linguini as suggested. Using vegetable peeler, peel zucchini in flat ribbons and then slice ribbons in half, lengthways.
2 – In heavy bottomed pot, bring 1/2 cup of pasta water to gentle boil.
3 – Add zucchini and cook for two minutes. Remove zucchini from water and set aside.
4 – Add prepared pasta to pot, adding more pasta water if necessary. Cover and let heat through, about 2 minutes.
5 – Add basil pesto and toss lightly.
6 – Add zucchini back to pot and julienned pastrami. Gently toss together. Cover and let heat for an addition minute or two.
7 – Using large fork, twist pasta into desired serving and transfer to pasta dish. Garnish with tomatoes, and sprinkle with parmesan. Season with a pinch of salt and a twist of fresh cracked pepper.

With topping of Sauerkraut, Irish Cheddar Cheese, and Reuben Sauce then served on Pumpernickel Bread. The Reuben Sandwich just got better! REUBEN SANDWICH
The O’Brien household’s version of this pub favorite. So good, it will become a weekly request!

Serves 4

Ingredients:

1 package Buffalo Pastrami or Corned Buffalo Brisket
1 ½ cup “Bubbies” Sauerkraut (it’s really, really good)
4 ounces Irish Cheddar Cheese
6 slices Pumpernickel Bread
1 tablespoon Butter
*Reuben Sauce

Preparation:
1 – On flat top griddle or in a large sauté pan over medium heat place Buffalo Pastrami in lightly oiled pan to heat through. Turn while heating.
2 – Arrange Buffalo Pastrami in 4 equal piles and top with cheese. Add sauerkraut to the pan too. Cover and heat until cheese is melted, and sauerkraut is warm.
3 – Remove from pan and cover to keep warm.
4 – Spread butter on one side of the bread and grill bread until golden brown.
5 – Stack meat, cheese and kraut on inside of grilled bread and spread the other slice with *Rueben sauce (recipe below), and sandwich together.
Serve with Potato, Leek Soup.

*Rueben Sauce

Ingredients:

1/2 cup Mayonnaise
¼ cup Salsa
¼ cup Roasted and Peeled Red Peppers
Salt
Pepper

Preparation:
1 – Place all ingredients in food processor and puree.
2 – Season with slat & pepper to taste.

PASTRAMI and FENNEL SALAD
Super refreshing, while super satisfying and the ingredient combo is oh-so-delicious.

Salad Ingredients: (Serves 4)
1 – head butter lettuce or 4 handfuls spring mix
4 – ounces Wild Idea Buffalo Pastrami (about half the package)
1 – cup grapes, halved
¼ – cup fresh fennel, shaved or finely diced
2 – ounces Parmesan Reggiano, shaved

Vinaigrette Ingredients:
¼ – cup white wine vinegar
1 – teaspoon Dijon mustard
1 – teaspoon crushed fennel or fennel powder
½ – teaspoon salt
½ – teaspoon black pepper
½ – cup olive oil

Preparation:

1 – Slice pastrami into ribbons, about two slices per person
2 – Divide greens onto plates and top other salad ingredients.
3 – Place all vinaigrette ingredients into blender and blend until incorporated.
4 – Drizzle salad greens with vinaigrette and give each salad a grind of fresh cracked pepper.
