Today’s Menu: Buffalo Teres Major Steak and Sauteed Mushrooms w/ Baked Potato and Texas Light Toast
For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Cooler out and cloudy today, mid 50’s. Finished up the yard work and we have the yard looking good! A lot of hard work but well worth it. Later in the day went up to see Dad for a while. For Dinner tonight it’s Steak and Potato! I prepared an 8oz. Buffalo Teres Major Steak and Sauteed Mushrooms w/ Baked Potato and Texas Light Toast.
This is one of several Buffalo Steaks I ordered from Wild Idea Buffalo a while back. And this one is one my favorites, the Wild Idea Buffalo – 8 OZ. TERES MAJOR FILET. The Steak is so flavorful and perhaps the most tender cuts of Buffalo. Of course all the Wild Idea Buffalo Steaks are this way! I had the Steak in the freezer so I sit it in the fridge overnight to thaw.
I pan fried it in Extra Light Olive Oil and seasoned it with a bit of Crushed Dry Thyme along with McCormick Grinders Sea Salt and Peppercorn Medley. I fried it about 4 minutes on one side and about 3 1/2 minutes on the other side, it gets done very quickly because it’s so lean. The Fillet came out medium rare with a beautiful char on it! These Wild Idea Buffalo Teres Major Steaks are tender and delicious, love them! I also prepared some Sauteed Mushrooms to go with my Steak along with a sprinkle of Blue Cheese. I seasoned them with a Basil Pesto. I don’t think there’s a better partner for Steak than Mushrooms, except maybe a Baked Potato!
To go with the Steak I prepared a Baked Potato. I took a medium-sized Russet Potato and took a small knife and made small punctures all around the Potato. Put the Potato in a Microwavable Bowl and cooked for 7 minutes and 20 seconds on high heat. Served the Potato Seasoned with McCormick Grinders of Sea Salt and Peppercorn Medley and I Can’t Believe It’s Not Butter. Love a good Potato! I also baked a slice of the New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

So to start this day off I prepared a Poached Egg and a toasted Healthy Life Whole Grain English Muffin. And as always my morning cup of Bigelow Decaf Green Tea. Cool morning, 48 degrees. For the day it was around 68 degrees and partly sunny. There’s a few trees in the neighborhood that’s starting to turn on the Fall Colors already. After Lunch In went over to Dad for a while, he wasn’t feeling real good today. Not sure if he’s going to be able to come back home this time. Still hoping he can regain strength and be able to come home. For Dinner tonight Buffalo Teres Major Steak and Sauteed Mushrooms w/ Roasted Butternut Squash and Roasted Buffalo Cauliflower.
I used the Wild Idea Buffalo 8oz. Buffalo Terres Major Fillets that I had just ordered from Wild Idea. It’s sometimes tough to find these Steaks, they sell out as soon as they become available because they are so tender! Beyond any doubts one of the most tender cuts of any steak, Beef or Buffalo, you can find. Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! And this too has quickly become a favorite. I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.
To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash!
I also prepared some Roasted Cauliflower. I used a package of Kroger Packaged Cauliflower Florets. To prepare them I needed; 1 Package of Cauliflower Florets, 1 tablespoon of extra virgin olive oil, sea salt and pepper to taste, 1/4 cup or more) hot sauce, and blue cheese or ranch dressing for dipping. Then to make it is really easy I just tossed the cauliflower florets in the oil, seasoned with salt and pepper, arranged in a single layer on a baking sheet and roasted in a preheated 400 degree oven until lightly golden brown, about 20-30 minutes. Then, the good part, toss the cauliflower in the hot sauce! I served it with Litehouse Lite Bleu Cheese Dressing/Dip for dipping. It’s one delicious side dish! I also baked a slice of the New York Bakery Lite Garlic Texas Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast this morning I prepared a toasted Healthy Life Whole Grain English Muffin that I topped with some of my favorite Jam, Smucker’s Sugarless Blackberry Jam. Along with that morning cup of Bigelow Decaf Green Tea, I was set for the morning! A lot cooler morning than we’ve been having out there, 35 degrees. For the day it was around 58 degrees and showers on and off. After Breakfast I went to Walmart, needed some Bigelow Decaf Green Tea and printing ink for the copier. Stopped by the bank and dropped a couple of letters at the Post Office on the way back. Back at home did some light cleaning around the house. For Dinner tonight I prepared a Buffalo Teres Major Steak and Sauteed Mushrooms w/ Roasted Garlic Cauliflower and Mini Ears of Sweet Corn.

For one side I prepared a bag of Path of Life All Natural Roasted Garlic Cauliflower. I purchase this at our local Meijer here in West Chester. Love shopping at Meijer, great selection of products! I had purchased a couple of Bags of it and had used one earlier. So to prepare the Cauliflower; It comes in a microwavable steamable bag. Just heated for 4 minutes, let it stand for 1 minute and serve. I’ve got another keeper product here! Fantastic Roasted Garlic flavor and they’re only 80 calories and 3 net carbs.
Then I boiled some Green Giant Mini Ears of Sweet Corn. As good and sweeter than fresh Corn on the Cob. As all frozen Green Giant Products, the items always taste fresh when prepared. For Dessert later tonight I’ll be having a new one from Weight Watcher’s, Peanut Butter Caramel Ice Cream Candy Bar.
