Today’s Menu: Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans
For Breakfast I Scrambled a couple of medium sized Eggs, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Not a bad November Day out there today, partly cloudy and 56 degrees. Ran an errand for Mom after Breakfast and stopped by McDonald’s and picked up Breakfast for her. Later on took her up to get it washed and I swept the inside out. Not much else going on today. For dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans.
I had a Wild Idea Buffalo 10 oz. New York Strip Steak left in the freezer so I grabbed it out of the freezer last night and let it thaw in the fridge overnight. What beautiful cuts of Buffalo these Steaks are, so lean and delicious. I first turned the oven on to 400 degrees. To prepare it all I’ll need is McCormick Grinder Sea Salt and Peppercorn Medley, Dried Rosemary, and Extra Virgin Olive Oil. I started by preheating a Cast Iron Skillet on medium high. Then rubbed a very light coat of the Extra Virgin Olive Oil on both sides of the Steak then seasoned both sides with the Rosemary, Sea Salt and Peppercorn Medley. Once the skillet is hot I added the Steak let it sear on the medium heat for about 2 minutes. Then turned it once and cooked for 2 more minutes. Then I put the skillet in the oven and finished the Steak in the oven. I had to keep it in the oven a bit longer than normal because it’s a thick Steak.
The Steak came out a beautiful Medium Rare! Served it with some Sauteed Mushrooms. These Steaks are every bit as delicious as they look! The taste is so fresh and has that slight sweet Grass Fed Buffalo taste to it. Moist and tender and so delicious! You just can’t beat these Wild Idea Buffalo Steaks, Bison or Beef. The Steak was plenty big so I saved some it for my Breakfast in the morning, Steak and Eggs!
For a side dish I baked a Russet Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a bowl of Skinny Pop – Pop Corn with a with Diet Mango/Tea Snapple to drink.

For Breakfast I had a toasted Healthy Life English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had a cup of my favorite Tea, Bigelow Decaf Green Tea. Not quite as cold as yesterday, about 39 degrees. And the day was a beautiful Fall Day, 70 degrees and sunny! So after Breakfast I headed out Meijer, and did some Christmas shopping while there, and then on to Kroger for Mom. Back home cleared out some leaves around the house. Then got the cart out for an afternoon of riding around the neighborhood and lake. A lot of Geese and Mallard Ducks out on the water today. Really a nice day out today. For Dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Steak Fries and Baked Vegetarian Beans.
I had ordered a couple of Wild Idea Buffalo 10 oz. New York Strip Steaks and had them in the freezer. So I grabbed one out of the freezer last night and let it thaw in the fridge overnight. I had tried these a while back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare the; just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Started my day off by Poaching an Egg and serving it on top of a toasted Healthy Life Whole Grain Muffin. Also had the morning cup of Bigelow Decaf Green Tea. Did a couple of loads of laundry for myself and Mom. Then after Lunch I headed up to the hospital for the afternoon to see Dad. Not been a good day for him, still sick to his stomach. They are having trouble finding the cause of it, all tests have come back negative. Hope turns it around soon. Back in the 90’s and a bit more humid out there today. For Dinner tonight a Buffalo 10 oz. New York Strip Steak and Sauteed Mushrooms w/ Baked Potato and Cut Asparagus.

Then I also prepared some Cut Asparagus with Bacon Bits. I had purchased the Asparagus at the local Kroger just the other day. I washed the Asparagus and trimmed off the stalk ends. I then cut the Asparagus into 3 pieces. Heated up a medium size skillet that I had sprayed with Pam Cooking Spray. I had placed the Asparagus pieces in a bowl and seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley, Garlic Salt, Smoked Real Bacon Bits, and Extra Virgin Olive Oil. Mixed well. Then added the Asparagus to the preheated skillet. Cooked them for about 8 minutes. Removed from the heat and served. Sprinkled Kraft Reduced Fat Grated Parmesan Cheese and done. Excellent Dinner Tonight! For dessert later a bowl of Dole Sliced Peaches.

For Breakfast I fried up 2 slices of Smithfield Sliced Ham. So I fried the slices up and toasted a Healthy Life Whole Grain English Muffin. Together it makes one good Breakfast Sandwich! Not much going on today, very quiet day. After lunch I headed over to spend the afternoon with Dad at the rehab center. He’s wanting to come home but he’s just not ready. It was Biscuits and Gravy to start my day! As usual I used Pillsbury Grands Jr’ Biscuits and for the gravy Pioneer Peppered White Gravy. Finished up some house cleaning and stayed outside most of the day. Did some cleaning around the outside and got the cart out for the afternoon! A bit cool to start the day but sunny all day and warmed up to near 70 degrees! For dinner tonight my favorite Steak, Wild Idea Buffalo Steak! I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans.

It was a Poached Egg, Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. They said high’s would be in the mid 50’s but I don’t think we reached that today. Mostly cloudy and windy out today. Swept up outside on the driveway and out on the wooden deck. Then back inside it was laundry and some light cleaning. Then I repaired a wheelchair that I keep out in my car trunk, just tightened everything up. For dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Baked Potato and Cut Green Beans.

The Fall Season is trying to push into our area. A beautiful Fall day out there today! This morning the sun was out and it was 49 degrees, a daytime high of 73 degrees. After Breakfast, a morning workout, and shower I headed over to spend some time with Dad at the rehab center. He’s breathing a lot better and feeling a lot better, he’ll start rehab tomorrow and hopefully home soon! Back at home it was an afternoon of Football! For dinner tonight I prepared a Buffalo 10 oz. New York Strip Steak w/ Sugar Snap Peas and Steakhouse Seasoned Diced Potatoes.

For one side I prepared some Sugar Snap Peas. They are from Kroger and come packaged fresh. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a medium saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender.
For another side I prepared some Simply Potatoes Steakhouse Seasoned Diced Potatoes. Just love using all the Simply Potatoes Products, always fresh and always and delicious Potato Dish. These come seasoned with Steakhouse Seasoning, I added some Sea Salt and a bit of Ground Pepper. For dessert later a bowl of Del Monte Sliced Peaches.

Made a Scrambled Egg, 2 Jennie – O Breakfast Sausage Links, 2 Toasted Slices Klosterman Wheat Bread, and a cup of Bigelow Decaf Green Tea for Breakfast this morning. Another one of those hot and humid days outside again. Gave the house a quick cleaning and then off to Micro Center with my best buddy. My printer conked out on me last night so it was time for a new one. Love going to Micro Center, incredible store for Computers and such. It’s impossible to go there and leave with just the item you were looking for. We call Nerdvana, a computer geek’s paradise! Good seeing my best friend, we go way back and he’s more like a brother that I never had. So for dinner tonight it’s a Buffalo 10 oz. New York Strip Steak w/ Mashed Potatoes and Cut Green Beans.
I had the Steak in the freezer so I let it thaw in the fridge overnight. What beautiful cuts of Buffalo these Steaks are. To prepare it all I’ll need is McCormick Grinder Sea Salt and Peppercorn Medley, Dried Rosemary, and Extra Virgin Olive Oil. I started by preheating a Cast Iron Skillet on medium high. Then rubbed a very light coat of the Extra Virgin Olive Oil on both sides of the Steak then seasoned both sides with the Rosemary, Sea Salt and Peppercorn. Once the skillet is hot I added the Steak let it sear on the high heat for about 4 minutes. Then turned it once and cooked for 4 more minutes then into a preheated oven (400 degrees) to a perfect medium rare. The Steak is every bit as delicious as it looked! The taste so fresh and has a slight sweet Grass Fed Buffalo taste to it. Moist and tender and so delicious! You just can’t beat these Wild Idea Buffalo Steaks, Bison or Beef. Steak was plenty big so I saved some it for my Breakfast in the morning.
For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Then I also heated up a can of Del Monte Cut Green Beans and Baked a loaf of Pillsbury Rustic French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

It’s a warm day out there today but with low humidity again. Had a Simple Truth Breakfast Sandwich with Canadian Bacon for Breakfast. After my morning workout went to Meijer, out of the Envy Apples. Leaving Meijer I was waiting to turn on to I-75 and there was 4 cars ahead of me. The light turned green and the cars ahead just sat there, the driver in front of me started honking his horn. Still no movement and the light turned red. So you can right turn on red if nothing is coming, but still the guy up front just sat there on his cell phone. Then several people were honking and he jumps out of his car, cell phone in hand, and starts yelling, “Shut up, I’ve got an important phone call.” I left out his exact words, it was littered with a lot 4 letter words. Anyway he jumps back in his car so cars started to go around him and when that starts he decides to turn himself. The line of traffic finally got on I-75 and everyone that passed this nut job he was flipping off! Takes all kinds I guess. Just another day in the life! For one side I prepared some baked Ore Ida Steak Fries, seasoned with Sea Salt and Ground Black Pepper with a side of Hunt’s Ketchup for dipping. Then I also prepared some Skillet Asparagus. To prepare this I heated a large nonstick skillet over medium-high heat. I trimmed and cut the Asparagus and set aside. Added Extra Virgin Olive Oil to pan; swirled to coat. Added the Asparagus to the pan and seasoned with Sea Salt, Black Pepper, and Garlic Salt; cooked about 3 minutes until the Asparagus was crisp-tender and browned and served. Wow, quite a meal! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Cold but not too bad out this morning. Had a light Breakfasty of Egg Beater’s Egg Whites, a Slice of Sargento Ultra Thin Swiss Cheese, on a Thomas Light While Grain English Muffin. After Breakfast ran to Kroger for Mom and stopped by Dunkin Donuts and picked them up a couple of Glazed Donuts, that’s where I get my love of Donuts from! I sadly did not have one. Also took a friend of mine a big slice of the Turkey Lasagna I made yesterday. Back home and cleaned up around the house and that was about it. For dinner tonight another good one, Wild Idea Buffalo 10 oz. New York Strip Steak w/ Baked Steak Fries and Chili Beans.
I’ve been wanting to try the Wild Idea Buffalo 10 oz. New York Strip Steak for sometime now. I finally ordered one on my last order to Wild Idea Buffalo. I had it in the freezer so I let it thaw overnight in the fridge. I cut the package open, and what a beautiful cut of meat! To prepare this was going to easy, needing some Extra Virgin Olive Oil and McCormick Grinder Sea Salt and Black Peppercorn. I broke out the cast Iron Skillet to fry this baby up! A Cast Iron Skillet will give it a nice even heat across the Fillet. I started by spraying the Cast Iron with Pam Cooking Spray and preheating the Skillet on medium heat. As that was heating up I rubbed extra Virgin Olive Oil all over the Fillet, making sure I covered the entire Fillet. I then seasoned it on all sides with the McCormick Grinder Sea Salt and Black Peppercorn. I then fried it in the Cast Iron about 5:00 minutes per side. Which is a whole lot of cooking time for Buffalo Meat but the Steak was really a thick Steak Cut. I timed it because I wanted my Steak medium rare, and Buffalo cooks a lot quicker than Beef (Tastes better and is healthier also). Pulled the Steak from the Skillet and let it rest for 5 minutes before slicing it. You could have cut this Fillet with a spoon, a light Pink center and a nice Char on the outside! Tender, Moist, and that incredible Wild Idea Buffalo flavor!
For one side I prepared Ore Ida Steak Fries, been a while since I’ve had these (Only 110 calories per serving). I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn along with a side of Hunt’s Ketchup for dipping. Then I also heated up a can of Bush’s Chili Beans – Kidney Beans in Mild Chili Sauce. Something new from Bush’s Beans that I came across at Meijer yesterday. Buffalo New York Strip Steak, Baked Potato, and Beans, one mighty fine dinner! For dessert later a Jello Sugar free Dark Chocolate Pudding Cup.
