Today’s Menu: Slow Cooker Honey Chipotle Chicken Tacos

For Breakfast this morning I heated up the remainder of the Potato and Ham Skillet along with the morning cup of Bigelow Decaf Green Tea. After Breakfast i went to the local Kroger here up the road. Wanted to go early before the rain returned. I didn’t need much but as always I picked up a few extra items. Back home finished up some laundry for Mom. Then later I took everything out of the fridge and gave it a good cleaning. My how time flies when you’re having fun! For Dinner tonight a new Chicken Dish. I prepared Slow Cooker Honey Chipotle Chicken Tacos.

 
The minute I saw this recipe I knew I had to try it! I seen it on Facebook and after checking on the net I found slow-cooker-honey-chipotle-chicken-tacos-001various sites that had it, all basically the same. I’m using the one from the with salt and wit website (http://withsaltandwit.com/). A very good website with a load of great recipes, check it out! To make the dish I’ll need the following; For the Chicken: – 2 pounds skinless and boneless chicken breasts, ⅓ cup honey. For the Honey Chipotle Marinade: – 1½ teaspoons chili powder, 2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free), 1 tablespoon ground cumin, 1½ teaspoons paprika, 1½ teaspoon garlic salt, 1 teaspoon onion powder, heaping ½ teaspoon ground coriander, and ½ teaspoon pepper. Just by the list of seasonings, you can tell that the Chicken will be packed with flavor!

 
I had the Chicken Breasts in the freezer so I sat them in the fridge and let them thaw overnight. To prepare the dish; slow-cooker-honey-chipotle-chicken-tacos-003Got the Slow Cooker out and lined it with a Slow Cooker Liner, then sprayed it with Pam Cooking Spray. Placed the chicken in the bottom of the Slow Cooker. Then mixed together the Chicken Rub Ingredients. Sprinkled the Rub evenly over the Chicken. Next take the Honey and pour over top the Chicken. Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart. I cooked mine on high for 4 hours. Once the Chicken was cooked, remove it from the slow cooker and shred it with two forks. Then return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and seasoned it with salt and pepper.

 
To serve them; I used Old El Paso Flour Tortillas. I wrapped the Tortillas in a paper towel and heated them up in theslow-cooker-honey-chipotle-chicken-tacos-005 microwave, 30 seconds. In the center of each Tortilla, added the Chicken mixture and topped with the other toppings. Toppings I used; Red Cabbage, Kraft 2% Shredded Colby/Jack Cheese, sliced Black Olives, and a light touch of Ortega Smokey Chipotle Taco Sauce. And these Soft Tacos are ready to serve! One huge problem I came across with this recipe, when you shred the Chicken, trying not to eat it as you shred it! The Chicken is incredible, just bursting with flavor! You have all the Spices, with heat from the Chipotle, and then the Honey giving it a sweet taste. Truly a “Keeper Recipe”. So if you love Chicken and Soft Tacos, you have to try this one! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. The original recipe and web link is below.

Slow Cooker Honey Chipotle Chicken Tacos

 

Slow Cooker Honey Chipotle Chicken Tacos are slightly sweet and slightly spicy! The slow cooked chicken is fall apart tender, juicy and full of chipotle and honey! Delicious in tacos or over lettuce for a lighter option!
Serves: 8 servings

Ingredients
2 pounds skinless, boneless chicken breasts
⅓ cup honey
Honey Chipotle Marinade:
1½ teaspoons chili powder
2 teaspoons chipotle in adobo sauce (or ground chipotle powder if gluten-free)
1 tablespoon ground cumin
1½ teaspoons paprika
1½ teaspoon garlic salt
1 teaspoon onion powder
heaping ½ teaspoon ground coriander
½ teaspoon pepper
Garnishes:
8 taco sized corn or flour tortillas
½ cup Pepper Jack cheese, shredded, if desired
Red Cabbage, diced
Avocados, sliced thin
Lime wedges

Instructions

Place chicken in the bottom of a slow-cooker.
Mix together the chicken rub ingredients. Sprinkle evenly over the chicken. Pour honey over top.
Cover and cook on high for 3 – 3½ hours or low for 5-6 hours or until meat is cooked through and easily falls apart.
Once the chicken is cooked, remove from the slow cooker and shred with two forks.
Return the shredded chicken back to the slow cooker to absorb the cooking liquid. Taste and season with salt and pepper, if desired.
You can either char your tortillas by placing over a gas grill until lightly charred or you can wrap them in a paper towel and microwave for 10 seconds.
In the center of each tortilla, add the chicken mixture and top with desired garnishes. Serve immediately.

Ingredients
½ (20-ounce) package JENNIE-O® Lean Ground Turkey
2 teaspoons chili powder
2 teaspoons BUFALO® salsa picante classic hot sauce
2 cups HERDEZ® yellow and white corn masa tortilla chips
⅓ cup WHOLLY SALSA® roasted tomato salsa
½ cup drained canned corn kernels
½ cup rinsed and drained canned black beans
⅓ cup WHOLLY GUACAMOLE® spicy dip
¼ cup finely chopped red onion
lime, if desired

 

Jennie O Make the Switch
Directions
Cook turkey according to package directions. Always cook to well-done, 165°F as measured by meat thermometer. Add chili powder. Cook 1 minute or until fragrant. Stir in hot sauce.

Arrange chips in three disposable leak-proof bags. Spoon turkey over chips.

Top with salsa, corn, black beans, guacamole and onion. Garnish with lime, if desired.
* Always cook to an internal temperature of 165°F. Learn how to safely handle turkey.

Bacon Wrapped Turkey Franks with Guac
Ingredients
6 ounces WHOLLY GUACAMOLE® guacamoleBacon Wrapped Turkey Franks with Guac

3 teaspoons Sriracha sauce

6 slices JENNIE-O® Turkey Bacon

6 JENNIE-O® Turkey Franks

1 heirloom tomato, sliced and cut into half circles

6 hot dog buns

 

Directions
Heat grill to medium high heat. In small bowl, mix guacamole and Sriracha sauce together. Wrap 1 slice turkey bacon around each frank. Secure with 2 wooden picks at each end of frank. Add wrapped frank to grill and cook 5 to 6 minutes or until golden brown.

Place tomato on bun bottom. Place frank on tomato and top with guacamole.

A sunny morning quickly turned into a cloudy afternoon. Some rain and cooler temperatures moving in tonight. Went to Kroger early this morning and picked up a couple of items and back home. Did laundry and went outside and stored the outdoor water hose and a couple of tables and grill in the shed for the upcoming winter, that’s about it for the day. For dinner tonight it’s Turkey Tacos, one of my favorites!

 

 

 

As usual when making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Canola Oil. I then added a can of Light Red Kidney Beans, stirred until well mixed with Turkey. I seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. I then added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 7 minutes. Jennie -O and Old El Paso together make one fine Taco!

For toppings I’ll be using; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Wholly Guacamole, Old El Paso Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used Ortega Whole Grain Corn Taco Shells. Loving taco Night! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

We had quite a light show going on outside early this morning before dawn. Lot of rain, wind, and thunder and lightning. I heard some areas lost power but ours stayed on. Started the morning off with a bowl of Cheerios. Then caught up on laundry and housework for Mom. She spends most of the day helping Dad out at the rehab center. She loves Tacos so that’s what I prepared for dinner tonight. I prepared Turkey Tacos for dinner tonight.

It was a long day today, as my Dad fell early this morning again. Luckily he didn’t break anything but his neck area is very sore and he has a couple of cuts on his arm. They are going to keep him in the hospital for 3 – 4 days and then to rehab to build his strength up. I hope he pulls through this but he is very weak and at almost 93 It’s harder to overcome things like this. Hoping for the best! It was cool morning here this morning, about 47 degrees. Very unusual for August around here. After getting back from the hospital I caught up some housework for Mom. Dinner tonight I prepared Turkey Tacos.

It’s been one gorgeous July 4th day out today! Sunny and a high of 75 degrees, beautiful. Going to go later and watch some local fireworks, it’s a tradition. Had the cart out all day just riding around enjoying the day. For dinner tonight I prepared Turkey Tacos.

Today’s Menu: Turkey Tacos!

If it could just be like this year around! Another sunny day out today, high of about 72 and gorgeous out. Went to a local Park for a while and then got the cart out and went fishing for a couple of hours. Caught a few little ones and some sun. For dinner tonight it’s Taco Night!

 

 
When it’s Turkey Tacos it’s made with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. The aroma is so good you just want to grab a spoon and start eating it now.

For toppings I’ll be using; Sliced Black Olives, Sliced Green Olives, Dean’s Guacamole, Old El Paso Taco Sauce, Wholly Guacamole, Sargento Reduced Calorie 4 Cheese Mexican Shredded Cheese , and Shredded Lettuce. For my Taco Shells I used Ortega Fiesta Flats. Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love Taco Nights. For dessert/snack
