Turkey Tacos with Lime Yogurt Topping
Set your weeknight dinner apart from the rest with this tasty turkey taco recipe: Lean ground turkey, shredded Cheddar and a zesty Lime Crema topping. Under 500 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
½ small sweet yellow onion, diced
1 tablespoon chili powder
1 tablespoon tomato paste
1 teaspoon garlic powder
½ cup chicken broth
LIME YOGURT TOPPING
1 cup plain Greek yogurt
1 teaspoon fresh lime juice
1 teaspoon fresh lime zest
1 teaspoon honey
1 tablespoon freshly chopped parsley
salt and freshly ground pepper, if desired
12 hard taco shells
½ cup shredded Cheddar cheese
1 (8-ounce) package shredded lettuce
HERDEZ® Salsa Casera, if desired
Original WHOLLY GUACAMOLE® dip, if desired

DIRECTIONS
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion, chili powder, tomato paste, garlic powder and broth. Stir, simmering 10 minutes or until onion is tender.
2) To make lime yogurt topping, combine yogurt, lime juice, zest, honey, parsley and salt and pepper, if desired; whisk until smooth.
3) To serve, set out taco bar with turkey mixture, Lime Crema, taco shells, cheese, lettuce, salsa casera and dip, if desired.
* Always cook to an internal temperature of 165°F.

Mexican Turkey Potato Skins
This weeknight dinner recipe uses potato skins as a tasty and nutritious stand-in for taco shells. Enjoy them filled with ground turkey, veggies and melted cheese. Under 500 calories per serving!

INGREDIENTS
6 small baking potatoes, scrubbed clean and dried
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 garlic clove, minced
1 cup canned black beans, rinsed and drained
1 cup canned or frozen corn kernels
1 large diced tomato
1 teaspoon ground cumin
¼ cup chopped fresh parsley or cilantro
1 tablespoon olive oil
1 cup shredded Mexican blend cheese
1½ cups HERDEZ® Salsa Casera
1 cup Original WHOLLY GUACAMOLE® dip
½ cup fat-free sour cream
¼ cup chopped green onions

DIRECTIONS
1) Pierce each potato with fork a few times and cook in microwave or oven until tender and cooked through. Allow potatoes to cool, then cut in half horizontally. Scoop out inside of each potato (save potato filling for mashed potatoes), leaving about a ¼-inch thick wall.
2) Cook the turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add garlic and cook 3 minutes. Add black beans, corn, tomato, cumin and parsley or cilantro; stir to combine. Cover and simmer 5 minutes.
3) Heat oven to 400°F. Place potato skins on foil lined baking sheet and brush interior of each potato with olive oil. Bake potato skins 5 minutes to crisp slightly.
4) Remove potato skins from oven and add ¼ cup of turkey filling to each potato skin. Top with cheese bake 5 minutes or until cheese melts.
5) Top each potato with salsa casera, guacamole, sour cream and green onion.
* Always cook to an internal temperature of 165°F.

For this week’s 2nd Jennie – O Turkey Recipe its a recipe for Mexican Turkey Meatball Subs. To make this dish you’ll need one of my favorites that I use quite often, JENNIE-O® Extra Lean Ground Turkey Breast. Your nomemade Turkey Meatballs simmered in Chipotle Salsa and Mexican Spices. Mexican Turkey Meatball Subs
Turkey meatballs simmered in Chipotle salsa and Mexican spices bring a lot of flavor to this sandwich recipe. Ready in under 30 minutes, it’s an easy weeknight dinner you’ll definitely want to try.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
2 tablespoons olive oil
¼ cup egg substitute or 1 egg, beaten
½ cup panko breadcrumbs
2 garlic cloves, minced
¼ cup chopped fresh cilantro
1 teaspoon ground cumin
salt and freshly ground pepper, if desired
4 ounces HERDEZ® chipotle salsa
4 sub rolls
8 tablespoons WHOLLY GUACAMOLE® dip
½ cup crumbled feta cheese

DIRECTIONS
1) Heat oven to 425°F. In large bowl, combine ground turkey, oil, egg, breadcrumbs, garlic, cilantro, cumin and salt and pepper, if desired. Mix until combined, do not pack meat too tightly while mixing. Roll mixture into 1½-inch meatballs using wet hands to reduce sticking (yields 16 meatballs). Place meatballs on silicone baking mat or parchment paper-lined baking sheet. Bake 15 minutes or until well-done, 165°F as measured by a meat thermometer.
2) In a large sauté pan bring chipotle salsa to simmer. Add cooked meatballs; stir. Simmer 10 minutes or until hot.
3) To assemble sandwiches, toast rolls until golden. Spread guacamole on top and bottom of each roll. Fill each roll with 4 meatballs and sprinkle with cheese.
* Always cook to an internal temperature of 165°F.

Spicy Turkey Bagel
Kick your sandwich up a notch. This TLT (turkey, lettuce, tomato) is covered in spicy bell peppers, fresh onion and guacamole.

INGREDIENTS
2 whole wheat bagels, split
2 (1-ounce) packages WHOLLY GUACAMOLE® dip
2 slices low-fat Cheddar cheese
4 slices tomato
4 pickle slices
4 ounces sliced JENNIE-O® Tender Browned Turkey Breast
2 red onion slices, separated into rings
2 tablespoons sliced banana peppers

DIRECTIONS
1) Spread cut sides of bagels with guacamole.
2) Top bottom half of bagel with cheese, tomato, pickle, turkey, onion and peppers.
3) Replace bagel top.

Loaded Turkey Breakfast Burritos
Loaded with veggies, protein and flavor, these breakfast burritos are the key to wrapping your morning up right. A filling, fantastic meal at under 500 calories per serving!

INGREDIENTS
2 teaspoons olive oil
2 teaspoons butter
1 medium red potato, unpeeled and diced into ½-inch pieces
salt and freshly ground pepper, if desired
½ (16-ounce) package JENNIE-O® Lean Ground Turkey Roll
1½ cup egg substitute or 6 eggs, beaten
1 cup HERDEZ® Salsa Verde
6 slices JENNIE-O® Turkey Bacon, cooked until crisp and crumbled
¾ cup shredded pepper jack cheese
6 flour tortillas
¾ cup shredded Cheddar cheese
1 cup Original WHOLLY GUACAMOLE® dip

DIRECTIONS
1) In medium skillet, heat oil and butter over medium-high heat. Add potato, season with salt and pepper, if desired and cook, stirring 5 minutes or until golden brown stirring frequently. Cover. Cook 10 minutes longer or until tender.
2) Cook turkey sausage as specified on the package. Add eggs and cook, stirring, until scrambled. Add salsa verde, cooked bacon and pepper Jack cheese. Stir gently until cheese is melted. Always cook to well-done, 165°F as measured by a meat thermometer.
3) Wrap tortillas in a damp paper towel and microwave on HIGH (100%) 10 to 15 seconds or until warm and pliable. Lay each tortilla on work surface and evenly distribute scrambled egg mixture on tortillas. Sprinkle Cheddar cheese over egg mixture and top with guacamole dip. Roll burritos.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
4 JENNIE-O® Turkey Burgers – All White Meat
4 burger buns
2 ounces cotija cheese, if desired
¼ cup pico de gallo
8 large leaf lettuce
4 teaspoons fresh chopped cilantro
squeeze of fresh lime juice
4 ounces non-fat Greek yogurt
4 ounces WHOLLY GUACAMOLE® dip, if desired
4 ounces HERDEZ® salsa, if desired

DIRECTIONS
1) Cook turkey burgers as specified on the package. Always cook until well-done, 165°F as measured by a meat thermometer.
2) Toast buns and top with turkey burger, cheese, if desired, Pico de Gallo, lettuce, cilantro and squeeze of fresh lime. Spread yogurt on the bottom side of top bun. Serve dip and salsa, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Ham & Egg on English Muffin

IngredientsTurkey Ham & Egg on English Muffin
2 slices tomato
2 tablespoons Italian dressing
4 slices JENNIE-O® Turkey Ham
2 eggs or ½ cup egg substitute
2 tablespoons water
1 tablespoon chopped fresh chives
2 English muffins, split and toasted
⅓ cup WHOLLY GUACAMOLE® guacamole
Directions
1 – Marinate tomato slices in dressing 10 minutes.

2 – Sauté turkey ham over medium heat 1 minute on each side.

3 – In bowl whisk eggs, water and chives. In non-stick skillet over medium heat, cook egg mixture.

4 – Spread muffin half with guacamole. Top with turkey ham, scrambled eggs, marinated tomato and remaining muffin half.

Ingredients
4 JENNIE-O® ⅓ lb. Turkey BurgersSalsa Guac Turkey Burger
4 burger buns, split
½ cup WHOLLY GUACAMOLE® dip
½ cup HERDEZ® salsa
fresh lime
2 ounces cotija cheese, if desired

Directions
