Savory Bread Pudding
The best of both worlds come together with this recipe for bread pudding; combining sweet apples, chicken and maple breakfast sausage for the ultimate fall flavor combo. A great dish if you’re attending a big family dinner or a potluck with friends, this recipe is sure to become a go-to this season!

Ingredients
1 tablespoon olive or vegetable oil
1 red bell pepper, diced
1 cup diced onion
3 large egg whites
2 cups low-fat (1%) milk
9 small links (6 ounces) fully cooked chicken, apple, and maple breakfast sausage, thinly sliced
8 slices whole wheat or multigrain bread, cut into 1-inch squares
1/2 cup shredded low-fat sharp Cheddar cheese

Directions
Yield:
6 servings

Serving size:
1/6 of recipe

Preheat oven to 350°F. Coat 11×7-inch baking dish or shallow casserole with nonstick cooking spray. Heat large skillet over medium heat until hot. Add oil, bell pepper, and onion. Cook 6 to 8 minutes or until vegetables are tender, stirring occasionally. Remove from heat; set aside.

Meanwhile, whisk together egg whites and milk in large bowl. Stir in sausage and bread; mix well. Add cooked vegetables; mix again. Transfer mixture to prepared baking dish, pressing down lightly. (At this point, dish may be covered and refrigerated up to 6 hours before baking.)

Bake, uncovered, 40 to 45 minutes or until puffed and center is set. Remove from oven. Sprinkle cheese over pudding. Return to oven; bake 2 minutes or until cheese melts slightly. Cut into 6 squares.

Easy Turkey Sausage Egg Bake
Treat yourself to breakfast by prepping this hearty, carb-conscious bake the night before — then just hop out of bed and pop it in the oven. Under 300 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® All Natural* Turkey Sausage
1 (15-ounce) carton Florentine flavored cholesterol-free real egg product
1 cup chopped spinach
2 cups skim milk
½ teaspoon ground mustard
5 slices whole grain 100% whole wheat bread, cut into cubes
1 cup shredded reduced-fat Cheddar cheese

DIRECTIONS
1) Cook sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Drain and set aside. Whisk together eggs, spinach, milk and mustard.
2) Lightly spray 8 ramekins or 10-ounce custard cups with non-stick cooking spray. Divide the bread among the ramekins. Top with sausage and pour egg mixture (about ½ cup) into each cup. Cover and refrigerate several hours or overnight. To bake, heat oven to 350°F. Place ramekins or cups on baking sheet. Bake, uncovered, 30 minutes or until a knife inserted into the center comes out clean.
* Always cook to an internal temperature of 165°F.

For Breakfast this morning I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and topped them with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Then at 11:00 I had to go to my family Doctor. My last visit for my Blood Work showed a increased Sugar count. So they are changing my increasing my Medication. The last few months have really been stressful so that didn’t help my readings any. And now it looks as though I’m losing my Supplement Insurance because I’m an Amputee, which I was when I first got the policy back in 2002. Then Thursday I have to be back at the Dentist Office for Dental Work. Too much going on, the bad way in my life right now. But it’s like they say “It could be worse”. So I didn’t really plan on anything for dinner but one thing kept sounding good with no prep by me, Izzy’s Lean Corned Beef Sandwich! So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Potato Chips.

 


I just love Izzy’s Sandwiches! I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Reduced Fat Potato Chips and their 80 calories and 17 carbs per serving, I had a 1/2 serving. For Dessert/Snack later some Honey Crisp Apple slices.

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. One of my favorite Breakfasts! 33 degrees out there this morning. Plenty of sunshine today and had a high of 46 degrees. Got the cart out of the shed along with the leaf blower. Took care of some final yard work for the year then used the leaf blower and cleaned off the deck and driveway areas. Nice to be outside taking in all the sunshine! So the Kitchen is closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips for Dinner tonight.

To start the morning off I toasted a Healthy Life Whole Grain English Muffin and Poached an Egg. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom and then it was on to house cleaning, vacuumed and dusted. Later on got the hand vacuum out and vacuumed my car and Mom’s car, both needed it! This morning it was about 32 degrees with a mix of rain and snow! Our first sign of the white 4 letter word! Only had a high today of 44 degrees. Did a few chores around the house and watched some College Football later in the afternoon. I’m shutting down the Kitchen today So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and had that morning cup of Bigelow Decaf Green Tea. Spent the day taking care of Mom and Dad. Both were sick today, very upset stomachs and not feeling too good. Also did a couple of loads of laundry for Mom. I made my parents Soup and a Grilled Cheese Sandwich for their Dinner. As for my Dinner, I shut the Kitchen Down! Tonight its a Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Reduced Fat Chips.

You would be hard pressed to find a more perfect Mid-August day out than what today was! About 50 degrees this morning and 78 and sunny with a light breeze through out the day! Was outside most of the day and didn’t really plan on anything for dinner but one thing kept sounding good, Izzy’s Lean Corned Beef Sandwich! So with the Kitchen closed tonight it was Izzy’s Lean Corned Beef Sandwich w/ Ruffle’s Light Chips.

 

 

Subway is good but their not a close second to Izzy’s. I would put Izzy’s Corned Beef up against any other. Plus with their “Lean’ version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full, as usual, along with a serving of Ruffle’s Light Potato Chips and their 80 calories and 17 carbs per serving. Spent one long day at the hospital today. I went for my yearly scans for my upcoming Melanoma Cancer check-up. This normally takes about 1 1/2 hours, max, and I’m home. Until today! They over scheduled and I went in at 7:30 and was there till 11:45! No excuses except they were over scheduled. The staff was none too happy over it either. They were working their tails off plus having to deal with a lot of complaining patients, I wasn’t one of those though. So the last thing I wanted to do later was to prepare a dinner so tonight it was a return to Izzy’s! I had an Izzy’s Lean Corned Beef Sandwich.

 

 

 

The sandwich was Izzy’s famous corned beef, 96% lean cut, on whole wheat bread, it comes with a small container of Pasta Salad. I also had some Ruffle’s Light Chips at 80 calories and 17 carbs per serving along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only do they look delicious, they are delicious! Izzy’s by far has the best and most tender Corned Beef there is! For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.
