WARM BROWNIE WEDGES WITH JAVA CREAM
Dense wedges of chewy chocolate are paired with a sweet coffee-flavored cream and fresh berries.

Ingredients

Wedges

Canola oil cooking spray
2/3 cup all-purpose flour, spooned into measuring cup and leveled
1/3 cup white whole-wheat flour, spooned into measuring cup and leveled
1/2 cup cocoa powder
1 1/2 teaspoons baking powder
1 tablespoon instant coffee granules
1/8 teaspoon salt
1/2 cup packed brown sugar substitute blend
1/3 cup canola oil
1/2 cup egg substitute
2 teaspoons vanilla extract

Cream
2 tablespoons water
1 teaspoon instant coffee granules
4 ounces fat-free whipped topping
1 cup fresh raspberries
1 cup blackberries or blueberries

Directions

1 – Preheat oven to 325F. Coat 9-inch, nonstick springform pan or cake pan with canola oil cooking spray.
2 – Combine flours, cocoa and baking powders, 1 tablespoon coffee granules and salt in medium bowl.
3 – Combine sugar, canola oil, egg substitute and vanilla in another medium bowl; mix well. Add sugar mixture to flour mixture, and stir until just blended. Batter will be very thick. Spoon into bottom of pan; spread evenly by coating the back of a spoon with cooking spray. Bake for 11 minutes or until slightly puffed. (Mixture will not be completely cooked at this point, but it will continue to cook while standing without overcooking and drying out.) Place pan on a wire rack, and let cool for 5 minutes. Remove sides of the pan and gently remove from bottom or leave on bottom and place on a serving plate. Serve warm or at room temperature. When cooled completely, store in an airtight container at room temperature.
4 – To make cream, combine water with 1 teaspoon instant coffee granules in a medium bowl, and stir until dissolved. Add whipped topping; whisk until a sauce consistency is reached. For thinner sauce, add 1 to 2 tablespoons water or milk. Refrigerate until needed. To serve, cut into wedges, spoon mocha cream on top, and sprinkle with berries.

NOTES:

Serving size 1/8 brownie, 2 tablespoons cream and 1/4 cup berries

Pumpkin Spice Mini Donuts
Perfect for Halloween, Thanksgiving and any time in between, these mini-donuts are jam-packed with cinnamon, ginger and pumpkin flavor!

Ingredients
Nonstick cooking spray
1 tablespoon granulated sugar
2 teaspoons ground cinnamon, divided
2 cups white whole-wheat flour
1/2 cup packed brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/2 cup canned solid-pack pumpkin
2 eggs
1/4 cup (1/2 stick) butter, softened
1/4 cup fat-free (skim) milk
1 teaspoon vanilla

Directions
Yield: 36 donuts
Serving size: 2 donuts

1. Preheat oven to 350°F. Spray 36 mini (1 3/4-inch) muffin cups with nonstick cooking spray. Combine granulated sugar and 1 teaspoon cinnamon in small bowl; set aside.

2. Combine flour, brown sugar, baking powder, remaining 1 teaspoon cinnamon, salt, ginger, nutmeg and baking soda in medium bowl; mix well. Beat pumpkin, eggs, butter, milk and vanilla in large bowl with electric mixer at medium speed until combined. Gradually add flour mixture, beating well after each addition. Spoon scant tablespoonful batter into each prepared muffin cup.

3. Bake 12 minutes, or until toothpick inserted into centers comes out clean. Cool in pans on wire racks 2 minutes.

4. Working one at a time, dip doughnuts into cinnamon-sugar mixture, turning to coat evenly. Return to wire racks; let stand until set. Serve warm or cool completely.

Apple-Cheddar Scones
Few flavors pair better than crisp apples and a sharp cheese. Get in an autumn state of mind with these hearty scones, which feature the apple-y goodness of Granny Smiths in combination with creamy cheddar.

Ingredients
1 cup all-purpose flour
1 cup white whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 Granny Smith apple, diced
1/2 cup (2 ounces) shredded reduced-fat sharp Cheddar cheese
1/3 cup natural or unsweetened applesauce
1/4 cup fat-free (skim) milk
3 tablespoons melted butter
1 egg
Nonstick cooking spray

Directions
Yield: 10 scones
Serving size: 1 scone

1 – Preheat oven to 425°F. Line baking sheet with parchment paper.

2 – Combine all-purpose flour, white whole wheat flour, sugar, baking powder, salt, cinnamon, and baking soda in large bowl; mix well. Stir in apple and cheese until well blended.

3 – Whisk applesauce, egg, milk and butter in small bowl until smooth and well blended. Stir into flour mixture until moistened. (Dough will be sticky.)

4 – Knead dough on floured surface 5 times. Pat and stretch into 8-inch circle. Slice diagonally into 10 pieces. Place on prepared baking sheet. Spray tops with cooking spray.

5 – Bake 15 minutes or until lightly golden. Remove to wire rack; serve warm or cool completely.
