Red Beans and Rice
Inexpensive and delicious, Red Beans and Rice is a Louisiana classic!

Ingredients
Preparation time: 2–3 hours

2 cups dried red beans
1 quart water
1 cup chopped extra-lean ham
1 carrot, chopped
1 onion, chopped
1 bay leaf
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
4 cups prepared white rice

Directions
Yield: 8 servings
Serving size: 1 cup beans with 1/2 cup rice

1 – Soak the beans overnight in enough cold water to cover them. Drain and place in large pot with 1 quart fresh water. Add ham, carrot, onion, bay leaf, black pepper, and cayenne pepper and bring to a boil. Cover, reduce heat, and let mixture slowly simmer for 2–3 hours, or until beans are very soft. Mash beans slightly and serve over hot rice.

Turkey Chop Suey
Made with extra lean ground turkey and filled with veggies, this classic Asian dinner is a tasty way to chop the guilt without chopping the flavor. Turkey Chop Suey is ready in under 30 minutes!
Total Time 30 Minutes
Serving Size 4 Servings

Ingredients
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast

2 cups sliced mushrooms

2 teaspoons minced garlic

2 carrots, peeled and sliced

3 tablespoons less-sodium soy sauce

1 (8-ounce) can sliced water chestnuts, drained

4 green onions, cut diagonally into 0.5-inch slices

1 cup low-sodium chicken broth

1 ½ tablespoons cornstarch

3 cups hot cooked white rice

½ cup chow mein noodles, if desired

Directions
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

3) Add mushrooms, garlic and carrots; stir-fry 2 minutes.

4) Add soy sauce. Cook 3 minutes, stirring occasionally.

5) Add water chestnuts and green onions.

6) Combine broth and cornstarch, mixing until smooth.

7) Add to skillet; simmer uncovered 5 minutes or until thickened.

8) Serve over rice; top with chow mein noodles, if desired.

Upside-Down Taco
Ingredients
Preparation time: 20 minutes
Baking time: 20 minutes
Cooling time: 10 minutes

1 can (16 ounces) fat-free refried beans
1 tablespoon dry taco seasoning mix
Cooking spray
2 cups cooked white rice (warm slightly if using leftover rice)
1 can (4 1/4 ounces) chopped green chilies
1 cup (4 ounces) finely shredded, reduced-fat, mild Cheddar cheese
Toppings:
2 cups shredded lettuce
1 cup diced tomato
1/4 cup chopped purple onion
2 cups crumbled baked tortilla chips (about 30 chips)
4 tablespoons fat-free sour cream
4 tablespoons salsa

Directions
Yield: 4 servings
Serving size: 1/4 of recipe

* Preheat oven to 350°F. In a small bowl, stir together beans and taco seasoning until mixed well. Set aside. Coat an 8″ x 8″ pan with cooking spray. Layer rice in bottom of pan. Dollop on seasoned refried beans and spread over rice. Spoon on green chilies. Sprinkle evenly with cheese. (At this point, the casserole can be refrigerated for baking later.) Bake uncovered for 20 minutes, or until cheese is melted and beans are heated through. Remove from oven and allow to cool about 10 minutes. Top with lettuce, tomato, onion, and crumbled tortilla chips. (If all of the casserole will not be eaten at one time, then add these toppings to each individual serving, because they will not reheat well when the rice/bean portion of the casserole is reheated. Store remaining toppings in individual zip-top bags.)

Use a large spatula to serve. Each serving may be garnished with 1 tablespoon sour cream and 1 tablespoon salsa.

This recipe can be doubled to make a 9″ x13″ casserole.

Turkey Sausage and Rice Soup
Simmer smoked turkey sausage, leeks and carrots together with bell peppers, fresh thyme and white rice in this colorful, delicious soup. Ready in under 30 minutes.

INGREDIENTS

2 tablespoons butter
1 large or 2 medium sliced leeks, white and light green parts
2 carrots, thinly sliced
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage
2 cups diced mixed bell peppers, preferably red and yellow
3 (13¾-ounce) cans reduced-sodium chicken broth
¾ cup uncooked quick cooking brown rice
¼ teaspoon freshly ground black pepper
1 tablespoon chopped fresh thyme
chives, if desired

DIRECTIONS

1) In a large saucepan, melt butter over medium heat. Add leeks and carrots; cook 5 minutes, stirring occasionally.
2) Cut sausage into ½-inch slices. Add sausage to saucepan; cook 5 minutes, stirring occasionally.
3) Add bell peppers, chicken broth, rice and pepper; bring to a boil over high heat. Reduce heat; simmer uncovered 15 minutes or until rice is tender.
4) Stir in fresh thyme. Ladle into bowls. Top with chives, if desired.

Vegetable Paella

A hearty and flavorful vegetarian version of the classic Spanish dish.

Recipe Ingredients:
1 large Spanish onion, finely chopped
2 cups long-grain white rice
4 cups vegetable stock
1 large pinch saffron
1 medium carrot, sliced
2 medium celery sticks, sliced
8 plum tomatoes, quartered
1 medium green bell pepper, chopped
1 small eggplant, cut into 1-inch chunks
1 medium zucchini, cut into 1-inch chunks
10 garlic cloves, finely minced
3 tablespoons olive oil
1 cup fresh or frozen peas
Salt and freshly ground black pepper to taste

Cooking Directions:
1 – In a large saucepan, cook the onion over a medium heat, stirring until translucent. Stir in the rice and cook for a few more minutes. Add the vegetable stock and saffron, bring to a boil, reduce heat; cover and simmer for 20 minutes. Remove from heat and set aside.
2 – In a separate pan, steam the carrot and celery until slightly tender, about 5 minutes. Remove the celery and carrot, reserving the water.
In a large bowl, toss the carrot, celery, tomatoes, bell peppers, eggplant, zucchini, garlic, olive oil, salt and ground black pepper. Transfer vegetables to a lightly greased baking sheet and place in the oven at 450°F (230°C). Roast the vegetables until they are brown on the edges. Remove from oven. Reduce oven temperature to 400°F (205°C).
3 – Meanwhile, in the same pan you steamed the carrot and celery, steam the peas until they are just tender.
4 – Toss the roasted vegetables with the rice. Stir in the peas. Transfer mixture to a greased casserole dish. Cover with aluminum foil and bake for 15 minutes. Serve.
