Deep Dish Potato Torta with Peppers and Olives
Recipe Ingredients:
2 pounds peeled white potatoes, halved
3 bell peppers
1 small onion, peeled and thinly sliced
1 cup thinly sliced, coarsely chopped fennel (white bottom part only)
1/2 tablespoon olive oil
3 tablespoons basil pesto
3/4 pound thinly sliced part skim mozzarella cheese – divided use
1/4 cup freshly grated Romano or Parmesan cheese – divided use
3 tablespoons kalamata olives, pitted and chopped
Cooking Directions:
1 – Preheat oven to 375°F (190°C).
2 – Place potatoes in a steamer basket with a small amount of water. Bring to a boil; cover and steam for 20 to 30 minutes or until tender. Let cool, then cut into thin slices
3 – Cut peppers in half, discard stems and seeds. Place peppers on foil-lined baking sheet and flatten with hand. Bake for 20 minutes or until browned and blistered. Wrap peppers up in foil to steam for 10 minutes Remove skin from peppers and cut into strips. Press between several layers of paper towels to remove excess moisture.
4 – Sauté the onion and fennel in olive oil for about 20 minutes or until very soft, stirring frequently. Stir in the pesto and cook for several minutes more.
5 – Spray a 9-inch deep dish pie plate or springform pan with non stick cooking spray and place on a foil lined baking sheet.
6 – Cover the bottom with 1/3 of the potatoes, 1/2 the peppers and 1/2 the cheese. Spread the onion mixture evenly over the top and cover with another layer of potatoes and peppers. Cover the top with the remaining cheese and sprinkle with olives.
7 – Bake for 45 to 50 minutes, tenting the top with foil after 30 minutes.
Makes 6 to 8 main dish servings; 16 appetizer servings.

Potato and Carrot Kugel
This hearty dish is light on calories and carbohydrate. Featuring carrots, white potatoes and Granny Smith apples, this casserole will put a good base in your stomach for your Passover celebrations.
Ingredients
Preparation time: 15 minutes
Cooking time: 40 minutes.
Nonstick cooking spray
2 large carrots (1/2 pound), peeled and grated
8 ounces white potato (2 small), peeled and grated
1 large Granny Smith apple (3–4 inches in diameter), peeled, cored, and grated
1/4 cup chopped onion
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon onion powder
1 tablespoon sugar
1/3 cup all-purpose flour
1 cup liquid egg substitute
3 tablespoons reduced-calorie margarine, melted
Directions
Yield: 8 servings
Serving size: 1/2 cup
1 – nonstick skillet, spray nonstick cooking spray, then add carrots, potato, apple, and onion. (Spray with additional cooking spray or add 1–2 tablespoons water to prevent sticking if necessary.) Stir constantly, and cook only until vegetables have softened slightly. Spoon vegetable mixture into casserole dish. Combine black pepper, salt, onion powder, sugar, flour, egg substitute, and melted margarine in a small bowl and whisk together. Pour liquid over vegetables, and stir gently to make sure mixture is evenly distributed in dish. Bake for 35–40 minutes or until kugel is firm to the touch in center and lightly browned.

Cumin Spiced Pork Chop w/ Cut Savory Green Beans with Mushrooms and White Potatoes

Today’s Menu: Cumin Spiced Pork Chop w/ Cut Savory Green Beans with Mushrooms and White Potatoes
Cold Morning around here, around 9 degrees this morning when I ventured out to get the morning papers. With colder weather all week they say. For Breakfast I had 1 medium size Egg (Sunnyside Up), 2 Jennie – O Turkey Breakfast sausage Links, a Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. A healthy and delicious start of the day! Caught up on all the major housework and laundry so it gave me time to take care of some odd and end jobs around the house. Cleaned rearranged the spare room, replanted a couple of Mom’s plants, and cleaned and straightened some of the Kitchen shelves. For dinner tonight I prepared a Cumin Spiced Pork Chop w/ Cut Savory Green Beans with Mushrooms and Whole White Potatoes.
I’m using Pork Chops from the freezer that I had purchased from Costco. I got 1 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork. Hard to beat these Costco Pork Chops, always top quality.
For 1 side I prepared a new one, Del Monte Cut Savory Green Beans With Mushrooms. First time I tried it, came across it at Meijer a while back and grabbed a can of it. To prepare just empty the contents into a small sauce pan and heat on medium until the liquid is boiled down and serve! I like this, good combo of the Cut Green Beans and Mushrooms. Makes a good side!
Then for another side I heated up a can of Kroger Brand Whole White Potatoes. Another just heat and serve item. I also had a slice of Healthy Life Whole Grain Bread topped with a little I Can’t Believe It’s Not Butter. Had a Snapple Diet Peach Tea to drink. For dessert later a Skinny Cow Chocolate Truffle Ice cream Bar.
