Today’s Menu: White Lake Perch w/ Tater Tots

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 80 degrees and partly cloudy today. More like a Spring Day instead of a Fall Day out there. Did a few light chores around the house and then headed outside to enjoy the beautiful Fall day. Got the cart out for most of the afternoon. For Dinner tonight its White Lake Perch w/ Tater Tots.

 

I had purchased the White Lake Perch at Meijer and had a bag in the freezer. Sit it in the fridge overnight to thaw. To prepare the fillets; I first took a large skillet and sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to the pan and heated it medium heat. With the pan heating I got the fillets ready. I’ll be seasoning them with Morton’s Lite Salt and Zatarain’s Seasoned Fish-Fri Seafood Breading Mix. First Salted them and then put the Fillets in a plastic bag and added the Breading. Shook the bag until the Fillets were covered.

 

Then added a few of them to the preheated skillet. I fried them 3 minutes per side. They came out a golden brown! The Perch was delicious, just love fresh water fish as I do all Fish. Meijer is about the only store that carries the White Perch and they also will have Yellow Lake Perch from time to time.

 

I also baked some Ore Ida Tater Tots as I was cooking the Fish. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

2. POUR Zatarain’s Seasoned Fish Fri onto plate or into plastic bag. Use 1/2 cup Fish Fri per 1 lb. fish. Roll or shake fish in Fish Fri until evenly coated. Discard any remaining Fish Fri mixture on plate or in plastic bag.
3. FRY fish, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels.

Note: For thicker coating, dip fish in 1/2 cup milk mixed with 1 lightly beaten egg, before rolling in Fish Fri.

PAN FRYING DIRECTIONS
1. POUR 1 inch of vegetable oil into large skillet. Heat oil to 350°F on medium heat.
2. COAT and fry fish as directed above.

BAKING DIRECTIONS
1. BRUSH 1 lb. fish fillets on both sides with oil. Pour Fish Fri onto plate. Roll fish in Fish Fri until evenly coated. Discard any remaining Fish Fri mixture on plate.
2. PLACE fish on shallow baking pan sprayed with no stick cooking spray. Spray top of fish with cooking spray.
3. BAKE in preheated 450ºF oven 15 minutes or until fish flakes easily with a fork.

Today’s Menu: Fried White Lake Perch w/ Sliced New Potatoes and Cut Green Beans

 

 

For Breakfast this beautiful morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. 77 degrees and sunny out today. After Breakfast I got the cart out of the shed and repaired the skirting around the back of the shed. Then I went around the yard and flower beds and sprayed for weeds. The raked the backyard, the leaves are falling! Took a spin around the neighborhood and enjoyed this beautiful Early Fall Day! For Dinner tonight I prepared Fried White Lake Perch w/ Sliced New Potatoes and Cut Green Beans.

 

I had purchased the White Lake Perch at Meijer and had a bag in the freezer. Sit it in the fridge overnight to thaw. A couple of weeks ago had this same combination of the White Perch and Potato Puffs. It was so good I’m having it again! To prepare the fillets; I first took a large skillet and sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to the pan and heated it medium heat. With the pan heating I got the fillets ready. I’ll be seasoning them with Morton’s Lite Salt and Zatarain’s Seasoned Fish-Fri Seafood Breading Mix. First Salted them and then put the Fillets in a plastic bag and added the Breading. Shook the bag until the Fillets were covered.

 

Then added a few of them to the preheated skillet. I fried them 3 minutes per side. They came out a golden brown! The Perch was delicious, just love fresh water fish as I do all Fish. Meijer is about the only store that carries the White Perch and they also will have Yellow Lake Perch from time to time.

 

For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.

 

 

Next I heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. Also baked up a couple of slices New York Bakery Texas Toast – Light. For Dessert I had a Jello Sugar Free Dark Cherry Jello.

To start my day off I Scrambled a couple of Eggs, fried a couple of Jennie – O Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Went out to grab the morning papers and it was about 47 degrees and a beautiful Fall dawn morning. A huge flock of Geese was flying southward overhead, the Season’s are a changing! Overnight I took a pretty bad fall. I guess I was sleep walking, or attempting to. I didn’t get to far without my walker. My entire right side is sore and cut my knee up. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. Excellent Potato Product, browned up perfect with excellent seasoning. For Dessert later a Sugar Free Cherry Jello Cup.

Only a high of 72 today with rain showers. Did some laundry, cleaned and straightened up both freezers, and cleaned the kitchen for my day. For Dinner tonight its White Lake Perch w/ Potato Puffs.

 

 

 

I had purchased the White Lake Perch yesterday at Meijer and had already cleaned it and had them in 2 bags. I kept 1 out for my Dinner tonight and froze the other bag. To prepare the fillets; I first took a large skillet and sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to the pan and heated it medium heat. With the pan heating I got the fillets ready. I’ll be seasoning them with Morton’s Lite Salt and Zatarain’s Seasoned Fish-Fri Seafood Breading Mix. For Breakfast I prepared some Simply Potatoes Shredded Hash Browns and fried 2 Jennie – O Turkey Sausage Mini white-lake-perch-w-3-cheese-potatoes-and-whole-baby-carrots-012Links. Also had my morning cup of Bigelow Decaf Green Tea. Wow, it poured the rain last night and then rained some more. Last night it was even thundering and lightening. If this had come in as snow we have got around 10 inches! But by morning the rains had stopped and it started getting windy and colder, cloudy out all day. Our new Hoover Cordless Sweeper came in yesterday, so I put that together and got it charged. While that was charging I used the old sweeper and vacuumed and dusted. Had everything done by Lunch so I could kick back and watch an afternoon of NFL Football. Then for Dinner tonight I prepared White Lake Perch w/ 3 Cheese Potatoes and Whole Baby Carrots.

I had purchased the White Lake Perch at Meijer and had already cleaned it and had it in the freezer. I laid the bag of Perch in the fridge overnight to thaw. Using a tin pie pan, I filled it with 3 tablespoons of the Zatarain’s Mix. Next I seasoned the Perch with the Lite Salt. Then rolled the fillets in the Breading mix, completely covering them. Then added a few of them to the preheated skillet. I fried them 3 minutes per side. They came out a golden brown! The Perch was delicious, just love fresh water fish as I do all Fish. Meijeris about the only store that carries the White Perch and they also will have Yellow Lake Perch from time to time.

 

 
For one side I prepared a package of the Little Potato Company, 3 Cheese Potatoes. While at Meijer I picked up a Cumin Spiced Pork Chops w Savory Herb Potatoes and Cut Green Bea 012package of the Little Potato Company 3 Cheese Potatoes. I had tried the Savory Herb a couple of times now and really enjoy them, being the Potato Freak I am! So tonight I gave the 3 Cheese a try and everyone enjoyed it. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have on hand! So easy to prepare and no clean up.

Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Pillsbury French Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.
