Today’s Menu: Subway 6″ Sub and Chips

 

For Breakfast this morning I prepared Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom and Dad. In the 20’s this morning and a cold wind blowing! We only had a high of 36 degrees. So not a lot going on outside. Cleaned the fridge out, then the stove and oven, then on to the pantry. Took the brushes out of the vacuum and cleaned them. Well I got everything done so I watched some TV and read a couple of Food Magazines. Tonight I’m having a Subway 6″ Sub on 9 Grain Bun w/ Turkey and Black Forest Ham.

 

 

Didn’t feel like cooking tonight and I hadn’t had Subway in a while so it just sounded good for dinner! I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce. The total calories for the sub is 270 calories and 41 net carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Reduced Fat Potato Chips and a bottle of Diet Dr. Pepper. For dessert later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Subway 6″ Sub

 
Had an Eggo Waffle and a cup of Bigelow Decaf Green Tea. After Breakfast started some laundry for Mom and ran the vacuum real quick. Then it was off to the hospital to spend some time with Dad and visit my buddy who is up at the same hospital. Dad is doing somewhat better but awfully weak. As for my friend he is being moved to an Assisted Living Rehab Center here in West Chester. These hospital visits make for a long day, but I don’t mind. I haven’t been quite up to par lately, very tired. Which is why the Kitchen is shut down tonight. Tonight I’m having a Subway 6″ Sub on 9 Grain Bun w/ Turkey and Black Forest Ham.

Whew baby, we got one humid day out there today! You can just stand outside and have to go in and change shirts, it’s bad. After Breakfast and a morning workout I went to Kroger for a few items and then to McDonald’s to get Mom and Dad’s Breakfast for them. I’m not a huge fan of McDonald’s myself, Mom and Dad love eating there. Back home cleaned up around the house also repaired a couple of shelves that were loosened up a bit. Wanted and easy made meal tonight so nothing easier than Hot Dogs and Fries, Tonight I prepared Turkey Frank Dogs w/ Baked Steak Fries.

I used Ball Park Smoked White Meat Turkey Franks. I usually use Jennie – O but that’s another Jennie O Turkey Product hard to come by at local stores around here. Anyway I prepared the Turkey Franks by boiling them in water, boiled about 5 minutes and done. Delicious and Plump Turkey Franks! Only 45 calories and 3 net carbs per Frank. Served them on a Kroger Lite Wheat Hot Dog Bun and topped with French’s Yellow Mustard.

 
For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup

They hit our forecast on the nose! It started snowing a light snow about 11:00 last night and picked up in the early morning hours. It wasn’t one of those “Cabin Fever Snows” but we ended up with about 4″ or more. It was a wet snow and clung to every limb out there. Some really cold weather to follow the snow. So for dinner tonight I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.

I had this a while back and really enjoyed it, so I prepared it again. I used a Trio of Cold Cuts for my Baked Mini Sub; Kahn’s Deluxe Bologna, Kroger Private Selection Off – the Bone Smokehouse Ham, and Private Selection Roasted Turkey. You can use whatever your favorite cold cuts are to make this. For toppings Boar’s Head Sliced Muenster Cheese and Kraft Reduced fat Mayo w/ Olive Oil. For the Bun I used Perfection Deli Mini Wheat Sub Buns, I buy these at Meijer. To prepare it I spread the Mayo on the bottom bun and layered my Cold Cuts on top of that. Topped that with Cheese and spread more Mayo on the bottom of the top bun. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. I love using Muenster Cheese for when I melt Cheese on Sandwiches, it melts perfect for that. The Sub tasted great, all the Cold Cuts worked great together, then the with the Muenster Cheese and Mayo give it a perfect taste! I really enjoy these Subs!

Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Wow a perfect day out today! About 78 degrees, sunny, and a bit of a breeze. Had an early doctor’s appointment with dermatologist, just a 6 month check up, got the car washed, and ran a couple of errands, then home for the day. Cleaned up the grill a bit and then got the cart out to enjoy the rest of the day. For dinner tonight it’s a Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

 

 

 

 

Still using the bag of Tilapia I had purchased from Walmart. Good thing to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Meijer Bakery Perfection Deli Mini Wheat Sub Bun.

 

 
For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Our warmest day of the year so far, 80 degrees! It was even a bit humid (blah) and partly sunny. Went to the grocery early this morning and then back home. Then I worked on cleaning the shed out a bit. Mom and Dad has boxes packed with stuff they haven’t seen in 5 years or more, so it’s out with the old. I barely made a dent in all the boxes, this will take a while. For dinner something a little different, I prepared a Baked Cold Cut Trio Mini Sub w/ Creamy Tomato Soup.

As bad as the weather has been here it looks as though it’s even worse down South. I hope it improves for them, because they’re really not prepared for it in the South. No more snow here again, 2 days in a row! Still with that wind chill it’s around zero, but the temperature climbed to 18 today. They say the weekend will hit the mid forties, hope their right. For dinner tonight it’s an Italian Chicken Mini Sub w/ Roasted Carrots with Parsnips and Herbs.

 

 

 
I used a Perdue Perfect Portions Italian Style Chicken Breast, which I love using. Their individually wrapped and you can keep them in the fridge or freeze them and just grab one when your ready to use it. I baked a couple of them, one for dinner and one for lunch tomorrow. i preheated the oven to 350 degrees and baked the breasts for about 24 minutes, flipping it over one time. They came out delicious! I served them on a Meijer Bakery Mini Deli Wheat Bun and topped with a thin slice of Murray’s Muenster Cheese and Ice Berg Lettuce.

 

 

 
I usually have Baked Ore Ida Fries with sandwiches but I picked up some great looking Carrots and Parsnips while at the store yesterday so it was Roasted Carrots with Parsnips and Herbs. I used a real easy and simple recipe for them. Besides the Carrots and Parsnip I needed; 3 tablespoons Extra Virgin Olive Oil, 1 teaspoon Sea Salt (or to taste), 1 teaspoon Black Pepper (or to taste), 2 teaspoons Rosemary, 2 teaspoons Thyme, 2 teaspoons Sage, and 2 tablespoons Water. To prepare them I heated the oven to 350 degrees. Halve each parsnip crosswise where it becomes narrow. Diagonally cut the narrow portions into 3/4-inch thick slices. Quarter the wider portions and diagonally cut them into 3/4-inch thick slices. Then in a large bowl, tossed the parsnips and carrots with olive oil, salt, pepper, rosemary,thyme, and sage. Spread mixture in a large shallow baking pan and pour in the water. Roast vegetables in lower third of oven until tender, about 30–35 minutes. These are too good! The vegetables with the added herbs make a perfect side dish. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Roasted Carrots with Parsnips and Herbs Recipe

Ingredients:

4 Parsnips, peeled (see cutting directions below)
5 Carrots, peeled and cut diagonally into 3/4-inch thick slices
3 tablespoons Extra Virgin Olive Oil
1 teaspoon Sea Salt, or to taste
1 teaspoon Black Pepper, or to taste
2 teaspoons Rosemary
2 teaspoons Thyme
2 teaspoons Sage
2 tablespoons Water
Preparation:

Heat oven to 350 degrees. Halve each parsnip crosswise where it becomes narrow. Diagonally cut the narrow portions into 3/4-inch thick slices. Quarter the wider portions and diagonally cut them into 3/4-inch thick slices.

In a large bowl, toss parsnips and carrots with oil, salt, pepper, rosemary,thyme, and sage. Spread mixture in a large shallow baking pan and pour in the water. Roast vegetables in lower third of oven until tender, about 30–35 minutes.

Directions

From Frozen: Preheat oven to 350 degrees F. Place frozen breasts on foil-lined baking sheet and cook 22 – 26 minutes, or until internal temperature reaches 170 degrees F. Safe Handling: This product was prepared from inspected and passed meat and/or poultry. Some food products may contain bacteria that could cause illness if the product is mishandled or cooked improperly. For your protection, follow these safe handling instructions. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods.
