Smart Ones Fish and Chips

 

Well our Summer Weather has returned, mid 80’s and humid! But we did have a real nice streak of fantastic weather. Got out and stopped by some friends house for most of the day and then returned home to work on some computer problems I’m still having. I wish I knew more on working with and on computers. For dinner tonight Weight Watchers Smart Ones Smart Creations Fish & Chips.

 

 

 
I originally was going to have Panko Crusted Calamari w/ Brown and Wild Rice. I had prepped them and fried the first batch. Let it cool a bit and sampled it, and that’s as far as that got. Calamari is just not for me. So it was a last minute switch in menu, saved by Weight Watchers Smart Ones Smart Creations Fish & Chips. First time I had tried this one and it sure saved the day! The Fish was very good, good seasoning and breading. The Chips or Fries were very good also, I love any Fry! The dinner was only 310 calories and 34 net carbs per serving, and the serving size were just enough. Frozen dinners do come in handy! For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Weather wise more of the same, hot, hazy, and humid. When it’s like this i don’t have much on an appetite. Which leads to today, nothing sounded good. Mondays are the day if you have any leftovers in the fridge, it’s either use it or lose it! Garbage goes out in the morning so we usually clean the fridge of any leftovers. So for my dinner tonight it was Leftover Beans and Smoked Turkey Sausage (Beans and Weenies).

 

 

 
I had a nice size helping of the Beans and Smoked Turkey Sausage leftover and it was too good to go to waste so I heated that up for my dinner tonight. In case you missed it here’s how it’s prepared. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), a handful of Oscar Mayer Turkey Bacon Bits, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized Red Onion (Chopped), 1/2 teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 3/4 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour and then reduced it back down to medium low until it was time for dinner. So to reheat this I just put into a small sauce pan and set it on medium low until it was heated through. I also had a slice of Klosterman Wheat Bread. Then for dessert later a Weight Watchers Vanilla Bean & Dutch Chocolate Ice Cream Sandwich.

Smart Ones Chicken and Fries
Muggy day out there today, showers on and off and in the 80’s. Finished cleaning the shed today, finally. Took a lot of garbage out to the curb. Got the cart out and helped Mom spray wash the outside of the house siding also today. Life in a wheelchair can be real frustrating at times. Certain things you just can’t do, back when I had both legs I was able to do and help with everything. But all I can do is make the best of it. As my favorite saying says, “The world is what you make of it. If it doesn’t fit you make alterations.” It’s still frustrating at times though. For dinner tonight a new one Weight Watchers Smart Ones Smart Creations Chicken Strips & Fries.

 

 

 

While at Meijer the other day I bought a few Smart Ones Frozen Dinners. Meijer has a fantastic selection of these dinners. They’re produced by Weight Watchers with a nice variety of different dinners and desserts. So this one must be one their new dinners, Weight Watchers Smart Ones Smart Creations Chicken Strips & Fries. It heats up in the microwave in their new Crisping Tray, 3 minutes and 15 seconds. They’re 310 calories, 3g fat, and 28 net carbs. Nice size portions, seasoned good, and a good Chicken Strips and Fries meal all for under 400 calories! I did add a bit of Sea Salt to the Chicken and Fries. I also purchased a couple of other new Smart Ones Meals, Loaded Potato Soup and Fish and Chips. For dessert later a Weight Watcher’s Triple Chocolate Brownie Bliss, another new favorite of mine!

Very cold this morning. Went out and got the morning paper and I was around 13 degrees, Brrrr! Went to Kroger around 9 am this morning and it was a ghost town, everyone at the Malls and Walmart and such for their Black Friday shopping. I compared prices with the ads in the paper yesterday and checked on-line and the prices were the same, and some even cheaper, and most with free shipping. Plus I could do it in the comfort and warmth of my home! Doesn’t make much sense. For dinner tonight it was a lot of fantastic leftovers from yesterday! I prepared a Turkey Sandwich w/ Green Beans and Deviled Eggs.

 

 

 

The Turkey was from a Jennie – O Oven Ready Turkey Breast that we prepared yesterday. The leftover was just as good as it was for dinner last yesterday. I took some slices of the Turkey and put them on an Aunt Millie’s Reduced Calorie Whole Grain Bun. i topped it with a little of the French’s Yellow Mustard and Kraft Reduced Fat Mayo and it was set to go!

 

 

 

I also warmed up some of the Green Beans. The Beans were some of the Canned Green Beans that we canned earlier this year. I also had a couple of Deviled Eggs that my Mom had prepared. I’ve had many Deviled Eggs but non as good as Mom does! Then for dessert later some more of the melt in your mouth Apple Pie. Mom made this also and used Splenda to make it with, you can’t tell the difference between a Sugar made pie and the Splenda made pie that she made. I had a slice topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we’ve really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50’s. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it’s purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

 

 

 

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I’ll make a sandwich with it for lunch tomorrow.

 

 

 

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I’m not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it’s only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Ingredients:
1 lb Cod Fish Fillets
1/4 cup I Can’t Believe It’s Not Butter, melted
2 tablespoons Lemon Juice
1/4 cup all-purpose Flour

Paprika

 

Directions:
*If fish fillets are large, cut into serving pieces.

Today’s Menu: Shredded Buffalo Chuck Roast BBQ Sandwich w/ Baked Potato

A rainy morning turned into a beautiful and sunny day, with a beautiful weekend in store! Went to Walmart for milk, bread, and some chicken thighs to grill for tonight but choose to have some leftovers I had in the fridge. I still had some of the Wild Idea Buffalo Chuck roast left so for dinner I prepared a Shredded Buffalo Chuck Roast BBQ Sandwich w/ Baked Potato.

 
I hated to waste any food especially the Buffalo Chuck Roast! It’s so tender and with such an incredible flavor. I warmed it up and then shredded what was left. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun and topped it with JB’s Fat Boy Chipotle BBQ Sauce. What a great trio; Wild Idea Buffalo, JB’s Fat Boy Sauce, and Aunt Millie’s. I also had a Baked Potato topped with Sea Salt, Ground Black Pepper, and I can’t Believe It’s Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Grilled Steak Hoagies on Whole Grain Sub Buns w/ Baked Crinkle Fries

 

 

It was back to the family Doctor this morning. He wanted to go over a few things from the blood work. He took a bit more blood to JTM Hoagie 005check my Iron count and a few other things, still hoping it’s nothing serious. It really upsets me and troubles me when something comes back from testing out of whack. With everything I’ve been through I just get real jittery. Got to stay positive though! For dinner another one of the J.T.M. Hoagies along with some baked Ore Ida Crinkle Fries.

 

I used the J.T.M. Beef Steak Hoagies I had used the other day. They come pre-cooked and frozen so all you have to do is warm them back up. You bake them pan fry them or grill them, I pan fried them this time. It took about 3– 4 minutes per side and they were ready. J.T.M. is one of the better tasting prepared Hoagies and they have a whole line of Hoagies, Hamburgers, and such. I served them on Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. For toppings I Sauteed some Baby Bella Mushrooms, Ragu Original Pizza Sauce, and Sargento Ultra Thin Provolone Cheese. For a side to go with my Hoagie I baked some Ore Ida Crinkle Cut Fries. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Type 2 Diabetes: 8 Steps to Weight-Loss Success
Losing weight has many benefits for people with type 2 diabetes, including better control over blood sugar levels.

Losing weight is at the top of many people’s to-do lists. But for those with type 2 diabetes, weight control is especially important. “Carrying excess weight makes managing blood sugars more difficult, and 80 percent of people with type 2 diabetes are overweight,” says dietitian Sue McLaughlin, RD, CDE, diabetes educator and president of health care and education for the American Diabetic Association. In fact, a study published in the Archives of Pediatrics & Adolescent Medicine found that the longer someone has a high body mass index or BMI (a common measure of being overweight or obese), the greater their risk of developing type 2 diabetes.

It’s no secret that losing weight — and keeping it off — isn’t easy. But it is possible, and the benefits for those with diabetes are great. So how do you get started? Experts say the right way to lose weight is to incorporate a healthful diet into your overall diabetes management plan.
Diabetes Diet Control: Steps to Success

Here’s how to get started on the path to weight-loss success:

Get physical. Exercise keeps off the weight. “Research shows that people who increase physical activity along with reducing calorie intake will lose more body fat that people who only diet,” says McLaughlin. For confirmation, look at the National Weight Control Registry (NWCR), a database of 4,000 men and women who have lost 30 or more pounds and kept it off. Only 9 percent reached and maintained their weight-loss goal without exercise. Most people in the register chose walking as their form of exercise.

Eat breakfast. The most effective diabetes diet includes breakfast. Skipping breakfast can lead to overeating later in the day when you become ravenous. This can sabotage weight-loss plans and cause blood sugar levels to surge. Studies show that eating breakfast, especially if it’s cereal, is associated with better weight loss. A common characteristic among the NWCR participants is that most of them ate breakfast.

Cut calories. The exact number of calories that people on a diabetes diet should consume depends on a number of factors, including age, gender, current weight, activity level, and body type. A reasonable goal for people with type 2 diabetes is between 1,200 and 1,800 calories per day for women and between 1,400 and 2,000 calories per day for men. Your diabetes educator can help you fine-tune the ideal calorie range to achieve weight loss while managing your blood sugar levels.

Feast on fiber. Does your diabetes diet include lots of fiber? If so, you’re doing your type 2 diabetes a favor. Generous amounts of fiber help lower blood sugar levels and speed weight loss. In one study, adults who consumed the most fiber-rich foods had the least amount of body fat. Aim for three servings per day of fiber-loaded fruits, vegetables, beans, and whole grains. Toss fiber-rich legumes, like chickpeas and black beans, into salads, chili, and soups.

Eat mini-meals. A diabetes diet structured with three or more small meals daily is better than a diet plan that includes only one or two big meals. Large meals can cause blood sugar levels to surge, while eating smaller meals more frequently will keep glucose levels lower after eating. Plus, a diabetes diet consisting of mini-meals spread through the day will help control hunger and calorie intake, leader to faster weight loss.

Set small goals. “Don’t try to transform your body all at once,” advises McLaughlin. “That can be a recipe for failure.” Instead set small, realistic goals, such as walking around the block four times a week and decreasing desserts from daily to only on weekends. After these goals become habits, move on to your next objective. You’ll gain a feeling of accomplishment, while inching towards your ultimate weight loss goal.

Get support. Staying motivated to stick with a weight-loss plan can be difficult when you’re going it alone. Connecting with others can provide the emotional support you need to avoid giving up. Weight-loss programs such as Weight Watchers are founded on the concept that support networks aid motivation. Keep in mind that support comes in many different forms. “For some people, online support groups can be just as effective, as well as more convenient and less costly,” says McLaughlin.

Use tricks to prevent overeating. Sometimes sneaky strategies can help pare pounds and prevent going hog wild on diet-damaging foods. Try the following tricks:

* Fill up on low-calorie foods first. “Start every meal with the foods on your plate that are lowest in calories,” suggests McLaughlin. By the time you get to the other foods, you won’t be so hungry.
* Change your salad dressing system. Instead of sprinkling or pouring dressing over your salad, dip your fork into a side dish of dressing and then your salad before each bite.
* Take up a busy-hands hobby. If you’re idle, you’ll be more prone to eating. Keep busy with knitting, scrapbooking, crossword puzzles, or gardening.
* Carry a toothbrush and toothpaste. Keep them in your purse or briefcase. When cravings hit, brushing your teeth with peppermint-flavored toothpaste will dampen your desire to eat.
* Arrive fashionably late to parties. Without as much time near the buffet table, you’ll eat less.

It’s important to continue healthy eating and regular exercise even after reaching your weight-loss goal. Weight control should last a lifetime.

Another beautiful Spring Day out again. I think everyone is thankful that it’s finally arrived! Spent part of the day riding around on the 4 wheel mobility cart and down around the lake, its beautiful out. For dinner I wanted something light so I prepared a Blackened Turkey and Salami Mini Sub Hogie w/ Baked Fries.

 

I used an Aunt Millie’s Whole Grain Mini Sub Bun. Then for my toppings I used Boar’s Head Blackened Turkey, one of my new favorite Boar’s Head Meat Selections. It has a fantastic flavor with some nice heat. Along with the Turkey I also had Kroger Brand Private Selection Hard Salami and a slice of Sargento Ultra Thin Swiss Cheese. For a side I Baked some Ore Ida Crinkle Fries topped with a little Hunt’s Ketchup. For dessert later a bowl of Del Monte No Sugar Added Sliced Peaches.
