Arroz con Huevos

This hearty and satisfying dish, Mexican-style rice topped with poached eggs and garnished with shredded cheddar cheese, can be served anytime of the day.

Recipe Ingredients:
1 cup water
1/2 cup uncooked rice
1/4 cup chopped onion
1 clove garlic, minced
1/2 teaspoon salt
1/2 cup chopped green pepper
2 tablespoons bottled taco sauce or salsa
1/2 cup chopped tomato
4 large eggs
1/4 cup shredded cheddar cheese

Cooking Directions:

1 – In medium saucepan stir together water, rice, onion, garlic and salt, if desired. Cover. Over high heat, bring to boiling. Reduce heat to keep water simmering. About 10 minutes before rice is done (check rice package for total cooking time needed), stir in green pepper and taco sauce. Re-cover and cook until rice is tender, about 10 minutes longer. Stir in tomato. Remove from heat, cover and keep warm while poaching eggs.
2 – In saucepan or deep omelet pan, bring 2 to 3 inches of water to boiling. Reduce heat to keep water gently simmering. Break cold eggs, 1 at a time, into custard cup or saucer or break several into bowl. Holding dish close to water’s surface, slip eggs, 1 by 1 into water. Cook until whites are completely set and yolks begin to thicken but are not hard, about 3 to 5 minutes. With slotted spoon, lift out eggs. Drain in spoon or on paper towels and trim any rough edges, if desired.
3 – To serve, spoon 1/4 of the reserved rice mixture onto each of 4 plates. Top each with 1 of the poached eggs, sprinkle each egg with 1 tablespoon of the cheese.

Squash and Corn
Ingredients
Preparation time: 10 minutes
Cooking time: 20–25 minutes.

1 pound zucchini, sliced lengthwise
3 roasted green chilies, peeled and seeded (banana peppers were used in testing; alternatively, half a 4 1/2-ounce can of roasted, diced chilies can be used)
Cooking spray
1 teaspoon corn oil
1 small onion, finely chopped
1 teaspoon real bacon bits
2 cups frozen corn, thawed (fresh corn cut from the cob can also be used)
1/4 cup water
1/4 teaspoon salt

Directions
Yield: 4 cups
Serving size: 1/2 cup

1 – Dice zucchini into 1/2-inch pieces. Thinly slice chilies. Coat a large nonstick skillet with cooking spray, add oil, and warm over medium-high heat. Add onion and cook, stirring frequently, until translucent, about 3–4 minutes. Add bacon bits and corn and cook 2–3 minutes more, stirring frequently. Add water, squash, chilies, and salt; stir to mix. Cover pan, reduce heat to medium, and simmer 10–15 minutes, or until corn and zucchini are tender; stir occasionally.

Strawberry Mousse
This perfectly portioned mousse is the ideal way to close out a lazy summer evening. It’s light on carbs, with only 8 grams per serving, but jam-packed with strawberry flavor!

Ingredients
1 package (4-serving size) strawberry sugar-free gelatin
1/2 cup boiling water
2 cups fresh sliced strawberries, divided
1/2 cup reduced-fat cream cheese
1/2 cup cold water
1/4 teaspoon almond extract
1 cup reduced-fat whipped topping, plus additional for garnish (optional)

Directions
Yield: 6 servings
Serving size: 1/2 cup

1. Place gelatin in small bowl. Pour boiling water over gelatin and stir until completely dissolved. Pour gelatin mixture into blender; add 1 cup sliced strawberries, cream cheese, cold water and almond extract. Blend 1 minute or until completely smooth.

2. Pour mixture into medium bowl. Thoroughly whisk whipped topping into mixture (make sure gelatin mix does not settle to bottom).

3. Pour mousse into 6 serving cups. Refrigerate at least 2 hours, or until mousse sets. Top mousse with remaining sliced strawberries and dollop of whipped topping, if desired.

Stir-Fried Green Beans
Garden-fresh green beans are quickly stir-fried with a sweet ginger sauce until tender-crisp in this Asian-inspired recipe.

Recipe Ingredients:
Stir-Fry Sauce:
1 1/2 tablespoons minced garlic
1 1/2 tablespoons minced fresh ginger
2 scallions (white and green parts) minced
2 tablespoons dry sherry
2 tablespoons Splenda® Granular
2 tablespoons soy sauce
1 tablespoon water
2 tablespoons peanut or vegetable oil

Stir-Fry:
1 1/2 pounds green beans, trimmed, and rinsed
2 tablespoons water

Cooking Directions:
1 – For Stir-Fry Sauce: Combine ingredients in a small bowl. Set aside.
2 – For Stir-Fry: In a large skillet or wok, heat the oil and stir-fry the green beans until they are barely crisp-tender, approximately 2 minutes.
3 – Add the water and continue stir-frying for another two minutes, until the beans are crisp-tender and water has evaporated.
4 – Add the sauce and continue stir-frying for five or six more minutes, until the beans are tender but not over cooked. Serve immediately.
Makes 6 (1 cup) servings.

Basil-Tomato Bisque
Ingredients
Preparation time: 5 minutes
Cooking time: 15–20 minutes.

2 cans (10 3/4 ounces each) 98% fat-free, reduced-sodium, condensed tomato soup, undiluted (such as Campbell’s Healthy Request)
2 cups low-fat buttermilk
1 cup water
1/4 teaspoon coarse ground black pepper
1 teaspoon dried basil
1 can (14 1/2 ounces) diced tomatoes, undrained

Directions
Yield: 7 cups
Serving size: 1 cup

1 – In a 3-quart pan over medium heat, whisk together soup concentrate, buttermilk, water, pepper, and basil until smooth. Stir in tomatoes. Cook, stirring periodically, for 15–20 minutes, or until heated through. Serve right away (bisque may curdle with extended heating).

BISON CURRY
The flavors in curry can take you to faraway places right in your own kitchen. This super easy recipe will have you on a culinary journey in a snap! Approved by Dan & Jill. 😉

Ingredients:

1 – pound Ground Buffalo Meat
2 – tablespoons olive oil
3 – tablespoons red curry paste
3 – tablespoons water
1 – onion, chopped
5 – mini red peppers, sliced
2 – tablespoons fish sauce
1 – can coconut milk
½ – cup cilantro, chopped
2 – slices fresh ginger (or a pinch of ginger)
2 – teaspoons lemongrass paste
Chopped peanuts
Cilantro and/or fresh basil, chopped
Jasmine or Basmati rice

Preparation:

1 – In a heavy skillet or wok, over medium high heat add oil and crumble in the ground buffalo meat. Push around the pan occasionally to brown.
2 – Halfway through browning the meat, mix the curry paste with the water and drizzle over the meat.
3 – Add the chopped onion and stir to incorporate and continue to cook until the meat is nicely browned and onions are al dente.
4 – Add the sliced red peppers and stir to incorporate.
5 – Deglaze with the fish sauce, then add the coconut milk, lemongrass paste and ginger.
6 – Reduce the heat to medium low and simmer until desired consistency is achieved. If curry gets too thick, add a little water.
7 – To serve, place a scoop of rice in the center of a bowl and add the curry. Garnish with chopped peanuts, cilantro and/or basil leaves.

Chilled Fresh Tomato Basil Soup
Pay a visit to your local farmers’ market to snatch up fresh, in-season ingredients for this cool and refreshing summer soup! Once you’re ready, just combine and chill for peak flavors.

Ingredients
3 medium tomatoes, diced
1 cup finely chopped green bell pepper
1/2 medium cucumber, peeled, seeded and finely chopped
1/4 cup chopped fresh basil
1/4 cup finely chopped peperoncinis
1 cup water
3 tablespoons red wine vinegar
1/2 teaspoon salt
2 tablespoons chopped fresh parsley
2 tablespoons extra virgin olive oil

Directions
Yield: 4 servings
Serving size: 1 cup

1 – Combine all ingredients in medium bowl and chill 30 minutes for peak flavors.

Plenty of water………………………….

Pasta releases a lot of starch when cooking, so it’s important to use a large pot of water. If you were to cook pasta in a small pot of water, the starches would make the water thick and your pasta slimy. To prevent this, just use four quarts of water (aka a gallon) for every pound of pasta you use.

Irresistible Lemon Chiffon Pie
A quick and easy lemon pie bursting with lemon flavor. The perfect ending to a meal.

Recipe Ingredients:
1 cup evaporated milk
1 (0.25 ounce) envelope unflavored gelatin
1/2 cup water
3 tablespoons fresh lemon juice
3/4 cup Splenda® Granulated No Calorie Sweetener
3/4 teaspoon grated lemon rind
1/4 teaspoon lemon extract
1 (9-inch) graham cracker crust

Cooking Directions:
1 – Pour evaporated milk in a mixing bowl; place in freezer until ice crystals form (about 30 minutes).
2 – Sprinkle gelatin over water and lemon juice in a small saucepan; let stand 1 minute. Stir in Splenda® Granulated Sweetener and cook over medium heat, stirring constantly, 2 minutes or until gelatin dissolves. Stir in lemon rind and lemon extract.
3 – Beat evaporated milk at high speed with an electric mixer until soft peaks form (about 5 minutes). Gradually add gelatin mixture, beating at high speed until mixture is combined. Do not over beat.
4 – Pour mixture into crust; cover and chill 1 hour or until set.
Makes 8 servings.
