Pimento cheese on crackers

In the cuisine of the Southern United States, pimento cheese is a spread or relish made with cheese, mayonnaise and pimentos. Elsewhere, different ingredients may be used. It is served on bread, crackers and vegetables, or in sandwiches.

Pimento cheese has been referred to as the “pâté of the south”, “Carolina caviar” and “the caviar of the South.”

The basic recipe has few ingredients: sharp cheddar cheese or processed cheese (such as Velveeta or American cheese), mayonnaise or salad dressing, and pimentos, blended to either a smooth or chunky paste. Regional ingredients include horseradish, cream cheese, salt and pepper, Louisiana-style hot sauce, Worcestershire sauce, cayenne pepper, paprika, jalapeños, onions, garlic, and dill pickles.

Pimento cheese can be served as a spread on crackers or celery, scooped onto corn chips or tortilla chips, mixed in with mashed yolks for deviled eggs, added to grits, or slathered over hamburgers or hotdogs.

A pimento cheese sandwich can be a quick and inexpensive lunch, or it can be served as a cocktail finger food (with crusts trimmed, garnished with watercress, and cut into triangles) or rolled up and cut into pinwheels. It is also a common snack in the Philippines, where it is referred to as cheese pimiento.

Pimento cheese sandwiches are a popular item at the Masters Tournament. Minor controversy ensued in 2013 when the Augusta National Golf Club switched food suppliers for the Masters and the new supplier was unable to duplicate the recipe used by the previous supplier, resulting in a sandwich with a markedly different taste.

Velveeta

Velveeta is a brand name for a processed cheese product that tastes like an American cheese, with a softer and smoother texture than non-processed cheese. When melted, Velveeta keeps a fully integrated and evenly clump-free liquid texture. It was invented in 1918 by Emil Frey of the Monroe Cheese Company in Monroe, New York. In 1923, The Velveeta Cheese Company was incorporated as a separate company, and sold to Kraft Foods in 1927.

The product was advertised as a nutritious health food. In the 1930s, Velveeta became the first cheese product to gain the American Medical Association’s seal of approval. It was reformulated in 1953 as a “cheese spread”, but as of 2002 Velveeta must be labeled in the United States as a “Pasteurized Prepared Cheese Product.”

The name Velveeta was intended to connote a “velvety smooth” edible product. Smoothness and melting ability are promoted as properties that result from reincorporating the whey with the curd. The brand has been successfully expanded into a line of products including cheesy bites, macaroni and cheese, and cheesy skillets. As with most processed cheeses, the manufacturer recommends Velveeta be refrigerated after opening.

Kraft Foods has listed Velveeta’s ingredients as follows: milk, water, whey, milk protein concentrate, milkfat, whey protein concentrate, sodium phosphate, and 2% or less of salt, calcium phosphate, lactic acid, sorbic acid, sodium citrate, sodium alginate, enzymes, apocarotenal, annatto, and cheese culture.

Kraft Foods has marketed Velveeta as an ingredient in chile con queso and grilled cheese sandwiches. It is currently sold in the United States, Canada, Panama, Hong Kong, the Philippines, and South Korea. In the 1930s and 1940s, it was sold in the United Kingdom and Germany as “Velveta”.

In the 1980s, Velveeta used the advertising jingle, “Colby, Swiss and Cheddar, blended all together” in its US television commercials to explain its taste and texture because real cheese was used in the product at that time.

Today’s Menu: Skillet Ultimate Cheeseburger (Turkey) Mac One Pan Dinner w/ Baked Garlic Loaf Bread

 

For Breakfast on this very hot and humid Sunday Morning I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. I love combinations of Potatoes and Ham , especially for Breakfast! 98 degrees, HUMID, and a heat index of 105 out today. Even worse than yesterday. Went to Kroger for Mom after I ate and stopped by McDonald’s and picked up Breakfast for her. Mom went on to Church after she ate. I got the leaf blower out and cleaned off the deck and driveway areas. Then got out the hedge clippers and trimmed some vines and a couple of bushes. Started getting way too hot I headed in for the day. Did some laundry and cleaned the house. For Dinner tonight its a Skillet Ultimate Cheeseburger (Turkey) Mac One Pan Dinner w/ Baked Garlic Loaf Bread.

 

I used Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey Breast instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the Seasoning Packet and Pasta. Simmer for 11 – 13 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 370 calories and 26 carbs but you can lower the calorie count by using the Ground Turkey as I did!

 

This always comes out so good, a real Comfort Food! The Velveeta Cheese along with the Pasta and Jennie- O Extra Lean Ground Turkey Breast are perfect together! And it’s Parent Approved, my Mom loved it! I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Trop -A – Rocka Diet Snapple.

Velveeta Cheesy Skillets Ultimate Cheeseburger

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Today’s Menu: Cheesy Skillet Classic Lasagna w/ Baked French Bread

 

 

For Breakfast on this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. The hot weather has kicked in again, 88 degrees and humid along with some heavy rain on and off through the day. Mom wanted a McMuffin for Breakfast so I went to McDonald’s and picked it up for her. Back home did a load of laundry for Mom. After Lunch went over to see Dad. For Dinner tonight I prepared a Cheesy Skillet Classic Lasagna w/ Baked French Bread.

 

 

Second time using the Kraft/Velveeta Cheesy Skillets Classic Lasagna. The box contains the Pasta, Seasoning, and Velveeta Cheese Sauce. I added the Jennie – O Extra Lean Ground Turkey Breast, Water, and Sargento Shredded Mozzarella Cheese. The instructions call for Ground Beef but as usual I substitute the Ground Beef with the Jennie – O Extra Lean Ground Turkey Breast. Much healthier option with fewer calories, fat, and carbs.

 

 

 

To make the dish; You will need the 1 lb. Jennie – O Extra Lean Ground Turkey Breast and 2 cups water. Cook the 1 lb. Ground Turkey in large skillet, until no longer pink. Add 2 cups water, Pasta and Seasoning; stir. Bring it to a boil. Reduce heat. Cover; simmer 11 min. or until most of the water is gone, stirring frequently. Remove from heat. Stir in the Velveeta Cheese Sauce. Top it off with a cup of Shredded Mozzarella Cheese before serving.

 

 

 

The Lasagna came out fantastic, hot and cheesy! The Seasoning and Cheese was perfect and the Pasta was excellent. Made a very good and hearty Dinner Dish! I also baked a Pillsbury French Bread Loaf. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast on this sunny morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. About 2:00 I went to the Cincinnati Airport and picked up a friend of mine that was coming to town for a week or so. I took him on to Fairfield and dropped him off at his brother’s place. Good catching up with him. For Dinner tonight I prepared a Cheesy Skillet Classic Lasagna w/ Baked French Bread.
