Summer Fruit Dip
Fresh fruits of the summer are puréed and combined with yogurt and mascarpone cheese for a delightful summertime fruit dip.

Recipe Ingredients:
2 cups fresh fruit (sliced berries, sliced peaches, melon chunks, etc.)
1 tablespoon honey
1/2 cup vanilla yogurt
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1 cup (8 ounces) Wisconsin Mascarpone Cheese, softened
Additional assorted fruit cut into slices for accompaniment: cantaloupe, honeydew melon, pineapple, apples, berries, etc.

Cooking Directions:
1 – In food processor or blender, pulse together 2 cups fruit and honey, until coarsely chopped.
2 – Add yogurt and extracts; pulse until desired consistency.
3 – Stir in Mascarpone.
4 – Serve with additional sliced fruit for dipping. Store leftover dip in airtight container up to 3 days in refrigerator.
Makes 2 3/4 cups.

Variation: For winter fruit dip, prepare as above using fruits available in winter. Consider combining tangerines and dried cherries, apples with cinnamon, or oranges and grapefruit. When choosing citrus, you may wish to increase honey.

Diner Griddle Cakes
The vanilla yogurt and buttermilk contributes to the tenderness of these pancakes as well as giving them a subtle sourdough-like flavor that goes well with butter and warm maple syrup.

Recipe Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoons baking soda
2 tablespoons granulated sugar
1/4 teaspoons salt
2 large eggs
1 cup vanilla yogurt
2 cups buttermilk
1/4 cup butter, melted
2 to 4 tablespoons butter to grease griddle

Cooking Directions:
1 – In a large bowl, stir together flour, baking powder, baking soda, sugar and salt; set aside.
2 – In a small bowl, beat eggs; add yogurt and mix well. Stir in buttermilk and melted butter.
3 – Pour liquid ingredients into dry ingredients all at once and whisk just until moistened.
4 – Heat griddle and 2 tablespoons butter over medium heat (300ºF / 150ºC for electric griddle).
5 – Pour 1/4 cup batter into griddle for each pancake. Cook 2 to 3 minutes until underside is golden, then flip. Cook 3 to 4 minutes more, until center springs back when gently pressed. Use additional butter, if necessary to prepare remaining batter.

Makes 24 pancakes.

Cantaloupe Cooler
Full of the flavors of in-season, juicy cantaloupes, this refreshing drink is ready in just 5 minutes!

Yield: 1 serving
Serving size: 1 cooler
Preparation time: 5 minutes

Ingredients
1 cup cubed cantaloupe
1/2 cup nonfat, no-sugar-added vanilla yogurt
1/4 teaspoon lemon juice
1 packet NutraSweet
Dash cinnamon

Directions
Combine all ingredients in a blender and blend until smooth.

Banana-Berry Smoothie Recipe for Diabetics
You only need five minutes and five ingredients to whip up this refreshing drink!

Ingredients
Preparation time: 5 minutes

1 cup ice cubes
1 medium banana (approximately 6 inches long), sliced and frozen
1/2 cup frozen blueberries (not thawed)
1 container (8 ounces) nonfat, artificially sweetened vanilla yogurt
1/4 cup skim milk

Directions
Yield: 2 1/2 servings
Serving size: 1 cup

1 – Place ice cubes at the bottom of the blender and add banana slices, blueberries, yogurt, and milk. Cover and blend in pulses until smooth, stopping frequently to stir down the ice. Serve right away. Freeze leftovers in an airtight, microwave-safe container and thaw in the microwave until slushy.
