Today’s Menu: 8 oz. Top Sirloin Buffalo Steak w/ Sauteed Mushrooms, Baked Potato, and Cut Green Beans
It’s amazing what a few warm days and a couple of rain showers does to the plants and trees in the Spring. We went from barren flower beds and leafless trees to flowers sprouting all over and trees full of buds! I love the Spring, not the pollen that comes with it though. Parents are both still suffering with head colds and I’ve been lucky so far to avoid it. For dinner I prepared them both Soup and a Salad, neither has much of an appetite. For myself; an 8 oz. Top Sirloin Buffalo Steak w/ Sauteed Mushrooms, Baked Potato, and Cut Green Beans. My appetite is fine!
My order from Wild Idea Buffalo arrived yesterday afternoon and I couldn’t wait to have one of the 8oz. Buffalo To Sirloins! As I’ve said before there are no better tasting Buffalo, or Bison if you prefer, than Wild Idea Buffalo. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. To prepare it I pan fried it in Canola Oil, about 4 1/2 minutes per side to a beautiful and delicious Medium Rare. This order is just as mouth watering as the other orders, it almost just melts in your mouth and the taste just incredible! I topped it with a side of Sauteed Baby Bell Mushrooms.
For side dishes I prepared a Baked Potato, that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with Newman’s Own Pineapple Salsa. I also heated up a single serving can of Del Monte Cut Green Beans. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Fried Crappie w/ Baked Potato, Green Beans, and Whole Grain Bread
I just got my yearly supply of Lake Okeechobee Crappie, or as they call them there Specks, and the first bags last week and just couldn’t wait no longer to break that second bag out! So easy to fry up and so delicious. Dinner tonight; Fried Crappie w/ Red Potatoes, green Beans, and Whole Grain Bread.
I seasoned them with Sea Salt and Ground Black Pepper. I then rolled each fillet in Italian Bread Crumbs. I lightly fried them in Canola Oil about 3 minutes per side, golden brown. the taste of Crappie is just incredible! I could eat these at every meal. To go with the Crappie I had a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with I Can’t Believe It’s Not Butter, Del Monte Cut Green Beans and Aunt Millie’s Light Whole Grain Bread. For dessert a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Christmas Dinner: Prime Rib w/ Mashed Potatoes, Brown Mushroom Gravy, Green Beans, and Baked Rustic French Bread
First off Merry Christmas Everyone! Now let’s talk about our Christmas Dinner Feast. I prepared a Prime Rib w/ Mashed Potatoes, Brown Mushroom Gravy, Green Beans, and Baked Rustic French Bread.
We purchased our annual Christmas Prime Rib Roast a couple a weeks ago from the local GFS Store. We always purchase one there and have never had a bad one. I put the Prime Rib in the oven at 1:30 PM at 250 degrees. At 3:30 I checked the temperature and it was spot on at 120 degrees, rare. I pulled it out of the oven and let it sit for 15 minutes before slicing. Letting it sit lets it finish cooking and absorb some of the delicious juices. When I sliced it the juices just flowed! Moist, tender and delicious!
For sides I prepared Bob Evans Mashed potatoes, Heinz Savory Mushroom Brown Gravy, 2 large cans of Del Monte Low Sodium Cut Green Beans, and baked a loaf of Pillsbury Rustic French Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Today’s Menu: Herb Crusted Pork Roast w/ Smashed Red Potatoes, Green Beans, and Whole Grain Bread
Coming back with the Herb Crusted Pork Roast for dinner tonight. This is my favorite recipe for a Pork Roast. The herb mixture makes a fantastic and flavorful crust for the roast while the roast comes out moist and tender.With Rosemary, Thyme, Basil, Garlic, and Sea Salt as your seasonings you know it’s got to be good! I left the full recipe at the end of the post. As good as the Pork is the leftovers are just as awesome the next day!
For sides I quartered 4 Red Potatoes seasoning them with Dill, Sea salt, Ground Black Pepper, and Extra virgin Olive Oil. I then boiled them in water until they were fork tender. Then serving them by partially fork smashing them reseasoning with Sea Salt and Ground Black Pepper, topped with I Can’t Believe It’s Not Butter. I also heated up a single serving can of Del Monte Cut Green Beans along with two slices of Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Mango slices.
Herb Crusted Pork Tenderloin

Ingredients
1 (4-pound) boneless pork loin, with fat left on
1 tablespoon salt
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme or 2 teaspoons minced fresh thyme leaves
1 teaspoon dried basil or 2 teaspoons fresh basil leaves
1 teaspoon dried rosemary or 2 teaspoons minced fresh rosemary
Directions
Preheat oven to 475 degrees F.
Place the pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat.
Roast the pork for 30 minutes, then reduce the heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

Today’s Menu: Smoked Cheddar & Mushroom Bison Burger w/ Baked Crinkle Fries
We were supposed to get 3 – 4 inches of rain around here in the next 2 days and it was to start around noon, we’ve yet to receive a drop, so I went to Krogers early. I picked up some Great Range Brand Ground Bison. It was 1 pound package and enough to make a couple of burgers and some Bison Joes later. Anyway for dinner tonight I had a Smoked Cheddar & Mushroom Bison Burger w/ Baked Crinkle Fries.
I seasoned the Bison Burger with McCormick Grinder Steakhouse Seasoning and fried about 3 1/2 minutes per side in Extra Virgin Olive Oil. Served on a Healthy Life Whole Grain Bun and topped with a slice of Borden Smoked Cheddar and Sauteed Mushrooms. For a side I baked a serving of Ore Ida Crinkle Fries. For dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Today’s Menu: Chili Lime Seasoned Wings w/ Baked Crinkle Fries
It was an easy to prepare Lip Smackin’ good dinner tonight. I purchased a bag of Tyson Chili Lime Seasoned Chicken Wings at Walmart earlier today and prepared them for dinner tonight. I preheated the oven to 425 degrees and lined a large cookie baking sheet with foil. I then baked them for 35 minutes. The wings came out perfect! It was the first time we tried the Chili Lime Wings and won’t be the last. The Chili Lime Seasoning provides a fantastic flavor. Just a hint of heat with the cool Lime made a beautiful glaze on the Wings. We’ll be having these again! I served them with Litehouse Gorgonzola Dressing and Dip. Along with the Wings we had Ore Ida Baked Crinkle Fries. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with Dole mango Slices.

Today’s Menu: Loaded Bison Burger w/ Smoked Cheddar, Mushrooms, and Turkey Bacon
Had one tasty burger for dinner tonight! I had a Ground Bison Sirloin that I seasoned with McCormick Steakhouse Seasoning. I fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on a Healthy Life Whole Grain Bun and topped with a slice of Bordon‘s Smoked Cheddar, Sauteed Portobella Mushrooms, and a slice of Turkey Bacon. Now that’s loaded! I’ve switched over to Bison from Beef for a few years now. I just love the taste of Bison and how easy it is to prepare, and also the healthier benifits it has over Beef. I still have Beef from time to time but it’s mainly Bison.
For a side I had Ore Ida Steakhouse Seasoned Griller Potatoes. Another one I’ve recently staerted using. Nice thick cut potatoes and well seasoned. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some of those delicious South Carolina Peaches!
