Another beautiful day out, just a tad warmer. I wasn’t able to get out and enjoy much of it though I had a computer glitch that took a while to correct. For dinner tonight I prepared a Fried Seasoned Haddock w/ Whole Grain Medley – Quinoa and Brown Rice and Green Lettuce and Radish Salad.

 

 

I had purchased a couple of fillets of Haddock a couple of days ago and had already cleaned, cut them into smaller pieces, and froze them. I took one package out and let it thaw overnight in the fridge. To prepare them I seasoned them with some Sea Salt and put them in a sealable plastic bag along with some Zatarain’s Lemon Pepper Breading Mix. Shook until they were well coated on all sides. Removed from the bag, shook off the excess Breading Mix and pan fried them in Canola Oil. Fried them about 3 minutes per side till it had that Golden Brown Crust on both sides. As usual the Haddock was delicious! The Zatarain’s Breading Mix is hard to beat for any Fish or Seafood.

To go with the Haddock I heated up some Uncle Ben‘s Whole Grain Medley Brown Rice and Quinoa with Garlic. The Uncle Ben’s Ready Rice is one of the best things that Uncle Ben’s done with Rice! It comes in a microwavable bag. Just microwave it according to the bag instructions and it’s hot and ready. The Quinoa and Brown Rice is my favorite. I also made another Salad using the Green Lettuce I had used the other night. With the Lettuce I added some sliced Radishes, fresh grated Parm Cheese, and topped with the Ken’s Steakhouse Light Options Sweet Vandalia Onion Dressing. Still suffer from upset stomach when eating green leaf vegetables but I love salads, so it’s worth the upset stomach! For dessert later a 100 Calorie Bag of Jolly Time Pop Corn.

Well I got my voice back, family wonders if that’s a good thing or not! But I just haven’t felt up to par today. It seems since I went through the Cancer Trial I’ll have a day or two of feeling like this every few months. I just feel really run down and no energy but it only lasts a day or so. Thank God for that Cancer Trial though, I was Stage 4 Melanoma at one point. So things could have a lot worse. Really didn’t feel like cooking and not all that hungry so I prepared Whole Grain Breaded Chicken Strips w/ Long Grain and Wild Rice.

 

 

I used Perdue Whole Grain Breaded Chicken Breast Strips. Since using these a while back I now keep a package or two of these in the freezer. Their great for Lunch or Dinner and a breeze to fix and delicious. They come breaded and you just bake them for 12 minutes, flipping them over after 6 minutes and their done. Good for salads, sandwiches or just by their self. To go worth the Chicken I microwaved a bag of Uncle Ben‘s Ready Rice Long Grain & Wild. I guess my favorite among the Uncle Ben’s Ready Rice. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. A very easy meal to prepare but quite good! It’s not bad being a slug every now and then! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

About three months ago I seen my family doctor and my sugar was up a bit so he wanted me to watch what i eat and try to lose a few pounds. Losing weight is hard enough but if your working with just a right leg it’s a bit tougher. Being a left leg amputee I just get the normal exercise as a normal person. I’m a notorious snacker, nothing large but a pinch here and a bite there and it all adds up. So I’ve been snacking on Apples and Grapes and another change I made was cutting back on Breads, and I am Bread lover!! I take that after my Uncle who was huge Bread lover. Anyway I’ve started using Joseph’s Pita Bread with Whole Grain and Flax Seed in place of Bread where I can. The adjustments seem to be working I’ve lost almost 15 pounds, I think the Doc will be pleased next week when I go for my check-up! For dinner tonight Fried Yellow Lake Perch Fillets w/ Whole Grain Brown Rice and Green Beans.

I picked up the Yellow Lake Perch at Meijer yesterday, on sale. I rinsed the fillets in cold water and patted dry with a paper towel. Seasoned them with a bit of Sea Salt and rolled them in Zatarain’s Lemon Pepper Breading Mix. Fried them in Canola Oil about 3 minutes per side.Came out a perfect golden brown and delicious! As usual I live on Fish!

 

 

For side dishes I microwaved a bag of Uncle Ben‘s Whole Grain Brown Rice, almost always my brand of preferred Rice! I also heated up a can of Del Monte Green Beans. For dessert later, all fruit tonight a Dole Mini Banana and a couple of Apple Slices.

Today’s Menu: Fried Walleye Fillet w/ Long Grain and Wild Rice, Carrots, and Whole Grain Bread

 

 

 
I had tried for several years to get a prosthetic leg to work but was unsuccessful due to my stub was cut so short. But I’m always Fried Walleye 002checking the news and web sites for new developments on legs. I’ve now found out through a routine exam and some x-rays it will be impossible for me to wear a prosthetic leg. I had a right hip replacement about 4 or 5 years ago due to arthritis. After doing some checking they found that my left hip is in terrible shape with arthritis. And because my left leg femur bone is cut so short they can’t perform a hip replacement and the hip is in such bad shape it would never support the wear and tear of normal use of the leg. So in a wheelchair I’ll remain but I’m Cancer Free and able to get around be it by a walker or wheelchair. So life goes on as they say, “The world is what you make of it. If it doesn’t fit you make alterations.” On a more positive note for dinner tonight I prepared; Fried Walleye Fillet w/ Long and Wild Rice, Carrots, and Whole Grain Bread.

 

I had one Walleye fillet leftover from the Meijer that i had purchased a while back. To prepare it i seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then rolled it in Progresso Italian Style Bread Crumbs and pan fried it in Canola Oil about 4 minutes per side, came out golden brown. I just love the taste of Walleye.

 

To go with my Walleye I prepared Long Grain and Wild Rice, Mini Carrots, and Aunt Millie’s Light Whole Grain Bread. The Rice was Uncle Ben‘s Long Grain and Wild Rice. It comes in a microwavable Bag, just heat for 90 seconds and serve. I boiled the Mini Carrots, about 20 minutes until fork tender. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt Cup.

Today’s Menu: Baked Buffalo Chicken Breasts w/ Sautéed Asparagus, Quinoa/Brown Rice (with Garlic) Medley, and Whole Grain Bread

Today is my Mom’s 85th Birthday! I had a dozen Roses delivered to her and a while back I bought her a Heart Shaped Pendent Circled by small Roses and this year I gave her a matching Bracelet. I can never do enough for my Mom. I don’t know if I would have been able to defeat cancer twice and survive a very serious accident without her. She’s my best friend, she’s my Mom! For dinner I prepared Baked Buffalo Chicken Breasts w/ Sautéed Asparagus, Quinoa/Brown Rice (with Garlic) Medley, and Whole Grain Bread.First time fixing the Baked Buffalo Chicken Breasts and preparing the Uncle Ben‘s Quinoa/Brown Rice (with Garlic) Medley.
To prepare my Chicken I needed 2 (4 ounce) Boneless Skinless Chicken Breasts, 4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip which will be served as a side for dipping the Chicken. To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it with Bleu Cheese Dressing. You can adjust the amount of Wing Sauce or Hot Sauce you use depending on the amount of Heat you like. The Chicken came out moist and with the right amount heat I like! The Litehouse Bleu Cheese Dressing just added that much more flavor!

 

For side dishes I prepared Sautéed Asparagus, Quinoa/Brown Rice (with Garlic) Medley, and Whole Grain Bread. To prepare the Asparagus using a skillet, saute over medium high heat, heat 1 tablespoon Extra Virgin Olive Oil and add 1-2 finely chopped garlic cloves (depends on how much garlic you like) add the trimmed Asparagus. Sprinkle with Sea Salt and Pepper. I cooked the stalks about 7 minutes. When finished I sprinkled them with Shredded Parmesan Cheese. The Quinoa/Brown Rice (with Garlic) Medley was from Uncle Ben and was the first time I tried it and loved it! Easy to prepare, just heat in a microwave and it’s ready. I also had Aunt Millie’s Light Whole Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

Baked Buffalo Chicken Breasts

Ingredients
2 (4 ounce) Boneless Skinless Chicken Breasts
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Directions
Preheat oven to 400°F.
Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
Add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and
Pour Wing Sauce over chicken and bake (uncovered) 25 minutes.
Serve with Bleu Cheese Dressing.
