Today’s Menu: Tuscan Seasoned Pork Medallions w/ Mashed Potatoes and Cut Green Beans

 

 

To start my morning off I prepared a Poached Egg and served it on a toasted slice of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea. 80 degrees with passing showers and thunderstorms. Went to Walmart Garden Center and bought a new Garden Water Hose. Also bought a couple of Rosemary and Italian Parsley Plants. Cleaned up the driveway area, tons of dead June Bugs and Maple Seeds every day. For Dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Mashed Potatoes and Cut Green Beans.

 

 

 

 

 

I’m using the Costco, always delicious, Tuscan Seasoned Pork Loin Medallions. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed a couple of packages out of the freezer and let them thaw overnight in the fridge.

 

 

 

 

 

 

To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Light Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Medallions to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then baked them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist.

 

 

 

 

To go with the Medallions I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 

 

 

Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also baked a loaf of Garlic Oval Loaf Bread. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Mixed Chili Beans

 

 

For Breakfast on this frigid cold morning I prepared Fried Spam and Scrambled Eggs. I used Turkey Spam. I sliced it length wise and fried it till heated through with a slight char on the outside, I love Spam! Then I Scrambled some Egg Beater’s Egg Whites and topped it with a sprinkle of Sargento Off the Block Shredded Mozzarella Cheese. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. The Weather outside is down right Frigid Freezing! The temperature is minus 1 but with the wind chill its a minus 30 degrees! Frigid! We only had a high of 4 degrees but the wind chill kept it below 0 all day. So another day indoors. Gave Mom a hand in doing the laundry and did some other household chores. For Dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Mixed Chili Beans.

 

 

 

I always pick up a package of the Tuscan Seasoned Pork Loin Medallions when shopping at Costco. They cut it fresh for me and season it as I shop. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed 3 packages out of the freezer and let them thaw overnight in the fridge. I’m fixing extra and we’ll have them for Breakfast, they’re the perfect size for Breakfast.

 

 

 

 

 

To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Light Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist. I’ll have to get to Costco to pick up another package of these soon!

 

 

 

 

For a side dish I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoon Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

 

 

 

 

 

For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! The only store I have found them is Meijer so far. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

To start my morning off I prepared a Poached Egg and served it on a toasted Healthy Life Multi Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. 35 degrees and rain this morning. Rained most of the day and a high of 55 degrees. Having a rough day with allergies today and with weather being bad it’s a good day just to relax and take it easy. For Dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Mashed Potatoes and Cut Green Beans.

Afterward stopped by a house that a friend of mine remodeling and putting it back up for sale. He’s been flipping houses for 5 years now. Good catching up with him. Then stopped by Kroger on the way home to pick up a few items. For Dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Mashed Potatoes and Cut Green Beans.

Another day of scattered rain and high of 80 degrees. Plenty of rain, and we needed it. Cleaned the Kitchen and Pantry then after Lunch I did some work on my computer. Took the processor apart and cleaned out all the dust. Then ran scans and deleted a lot of old files and pictures. For Dinner tonight its – Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Fresh Green Beans.

For another side I cooked up the last bag of the fresh Green Beans. Mom’s Cousin dropped some more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet 1/2 and 1/2 Snapple to drink.

Today’s Menu: Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Bourbon and Brown Sugar Grillin’ Beans

 

 

For Breakfast this morning I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. After Breakfast I went up to see Dad for a while. He’s barely eating anything now and is having trouble knowing anyone, so sad. Back home cleaned the house, dusted and vacuumed. Then outside I got the leaf blower out and cleaned off the deck and driveway areas. For Dinner tonight its – Tuscan Seasoned Pork Medallions w/ Roasted Butternut Squash and Grillin’ Beans.

Today’s Menu: Tuscan Seasoned Pork Medallions w/ Savory Herb Potatoes and Roasted Asparagus

 

 

To start my morning off I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with a cup of Bigelow Decaf Green Tea. I have to have my Tea to start the day! After Breakfast I headed to the local Kroger for a few items I needed then stopped by McDonald’s and picked up Breakfast for Mom and Dad. Outside we had a high of 49 degrees and mostly cloudy. Gave Mom a hand with a couple of laundry. Not much going on after that. For dinner tonight I prepared Tuscan Seasoned Pork Medallions w/ Savory Herb Potatoes, Roasted Asparagus, and Baked Multi Grain Bread.

 

 


On my last visit to Costco last week I had bought another package of the always delicious Tuscan Seasoned Pork Loin Medallions. They cut it fresh for me and seasoned it as I shopped. The package had 20 slices in it and have them in the Freezer. So Last night I grabbed a package out of the freezer and let it thaw overnight in the fridge.

 

 

 


To start I preheated the oven on 400 degrees. To prepare them I used a Cast Iron Skillet. Sprayed it with Pam Cooking Spray and added 1 tablespoon of Extra Light Olive Oil and heated it on medium heat. I then lightly Salted the Pork with Sea Salt and a sprinkle of McCormick Dried Parsley. Added the Pork to the skillet and cooked it for 2 minutes a side, as it just started to brown. Then from the stove to the oven, love Cast Iron Skillets! I then backed them to a medium rare, 145 degrees in the center of the medallions using a meat thermometer. Pork Tenderloin is one of my favorites. The Pork is so tender and flavorful. Seasoned just right and so moist.

 


For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. I love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has became the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Spent a restless night last night, allergies and sinuses problems. I’ll be glad when this weather changes. So for Breakfast I toasted a couple Eggo and had the every morning cup of Bigelow Decaf Green Tea. After Breakfast I ran a couple of errands for Mom and stopped by a local drive-thru and picked up some lottery tickets. Don’t play often, about one a month if that. Back at home did a few things around the house and then kicked back for an afternoon of some College Football! For Dinner tonight its Tuscan Seasoned Pork Loin Medallions w/ Golden Hominy and Cut Green Beans and Potatoes.

I always purchase a package of the Tuscan Seasoned Pork Loin Medallions when in Costco. They are good size packages with 24 slices. I had a package of 4 Medallions in the freeze. So I got a bag out and let them thaw in the fridge oversight.

For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

Then for another side I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also baked a loaf of Pillsbury French Bread. For dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

Not real hungry this morning so I just had a cup of the Bigelow Decaf Green Tea. It was a restless night of sleep last night, very upset of the death of my Aunt. I know life goes on but it’s weighing very heavy on my mind. I did a couple of loads of laundry. Then in the late afternoon a repairman showed up to repair the new lift chair that my Dad broke. Had the chair less than a week and he broke the chair by forcing it to go back and forth against the wall with the remote. I had been stressing to him not to do it but… Anyway they came and repaired it, out an extra $200. What can you do though. Finally got some much needed rain today, really dry around here. For Dinner tonight I prepared Tuscan Seasoned Pork Loin Medallions w/ Golden Hominy and Vegetarian Baked Beans

I had tried these a while Smoked Turkey Sausage Dogs w Vegetarian Baked Beans 012back and fell in love with the flavor and taste of the Vegetarian Beans! Only 130 calories, 0 fat, and 24 net carbs per serving. To prepare just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Beans! For dessert later a Weight Watcher’s Cookie and Cream Ice Cream Bar.
