My dad’s back in the hospital. We had to take him last night after dinner, trouble with breathing again. He had a lot water built up again around his lungs, he’s doing a lot better today since they have the water out. Hopefully he’ll be home tomorrow. I was up at the hospital for some of the morning and back home cleaned house and got all the leaves from the car port and driveway. All done with everything and got the cart out to enjoy the rest of the day. Beautiful out, sunny and about 78 degrees! Started off in the 40’s again. For dinner tonight its leftovers! I prepared a Turkey Meatloaf Sandwich and Baked Fries.

 

 

Had plenty of Turkey Meatloaf and Baked Beans leftover from last night’s dinner and I wasn’t going to let it go to waste! So I reheated everything, Meatloaf and Beans. I then sliced the Meatloaf, used 3 slices for the sandwich. Served the Meatloaf on a Kroger Lite Wheat Hamburger Bun and topped the Meatloaf with some of the Baked Beans and just a bit of Jack Daniel’s Honey Smokehouse BBQ Sauce. Last night’s delicious meal has turned into tonight’s delicious meal! Makes one heck of a Sandwich. I also baked some Ore Ida Crinkle Fries for a side. For dessert later a Jello Sugar Free Dark Chocolate Mousse. Below I’ve left the recipe for the Turkey Meatloaf and Baked Beans.

To make the Beans I’ll need; 4 slices Jennie – O Turkey Bacon (chopped into 1-inch pieces), 1 large can (22 to 28 oz.) spicy barbecue-flavor baked beans (I used Bush’s Vegetarian Fat Free Baked Beans), 4 scallions (whites and greens chopped), and Pepper.
Then for the Turkey Meatloaf I’ll need; 1 cup seasoned stuffing cubes (whizzed into crumbs in food processor), 2% Milk (for moistening breadcrumbs), 1 pound Jennie – O Extra Lean Ground Turkey Breast, Sea Salt, 1/4 cup flat-leaf parsley (finely chopped) plus more for sprinkling, 1 Egg, 3 – 4 tablespoons Hunt’s Ketchup, 3 – 4 tablespoons grated onion (grate over the meat to catch the juice), About 2 tbsp. Worcestershire Sauce, 2 rounded tbsp. spicy mustard, 2 tablespoons fresh thyme (chopped), 2 tablespoons fresh sage (chopped), 2 tablespoons extra virgin olive oil, 1/2 rounded tbsp. (packed) Splenda brown sugar, and 2 large cloves garlic (chopped).

Preheat the oven to 450°. Okay, to prepare the Beans part of the meal. Heat a small skillet over medium. Add the bacon and cook, stirring occasionally, until browned and almost crispy, about 10 minutes. In a casserole or shallow baking dish, mix the bacon and a spoonful of the drippings with the baked beans and the scallions; season with pepper.
For the Turkey Meatloaf; In a large bowl, moisten the stuffing crumbs with the milk. Add the turkey; season. Mix in the parsley, egg, ketchup, onion, Worcestershire, mustard, thyme, sage, oil, brown sugar and garlic. Form the turkey mixture into 4 oval mini meat loaves, each 1 to 1 1/2 inches thick. Nestle the meat loaves into the baked beans. Bake until cooked through, 30 to 35 minutes. Top with more parsley and serve! Another delicious recipe from Rachael Ray! By using Jennie – O Turkey Bacon I saved 5 calories per slice for a total of 20 calories, using the Bush’s Vegetarian Fat Free Baked Beans instead of the Baked Beans I saved 10 calories and 10 grams of fat per serving, and the Jennie – O Extra Lean Ground Turkey Breast saved 43 calories and 9 grams of fat. So in all I cut 73 calories and 19 grams of fat by using these 3 items!

Ingredients
4 slices lean, smoky bacon, chopped into 1-inch pieces
1 large can (22 to 28 oz.) spicy barbecue-flavor baked beansEvery Day
4 scallions, whites and greens chopped
Pepper
1 cup seasoned stuffing cubes, whizzed into crumbs in food processor
Milk, for moistening breadcrumbs
1 pound ground turkey (white-and-dark-meat blend)
Salt
1/4 cup flat-leaf parsley, finely chopped, plus more for sprinkling
1 egg

A cool but beautiful morning out. It was about 45 degrees this morning when I went out to get the morning paper. After a light Breakfast I headed to Kroger for a few items I needed to prepare tonight’s dinner. Back home gave Mom a hand with her laundry and then on to some house cleaning, inside and out. For dinner tonight a new recipe from Rachael Ray’s Every Day Magazine. Tonight its Mini Turkey Meat Loaves and Baked Beans.

Came across this one from the latest issue of Every Day with Rachael Ray Magazine. Baked Beans and Turkey Meat Loaf in one dish, I was sold! To make the Beans I’ll need; 4 slices Jennie – O Turkey Bacon (chopped into 1-inch pieces), 1 large can (22 to 28 oz.) spicy barbecue-flavor baked beans (I used Bush’s Vegetarian Fat Free Baked Beans), 4 scallions (whites and greens chopped), and Pepper.

We got our first snowfall of the New Year! We have about 1 1/2″ or so, not a lot just enough to make it messy on the roads this morning. We were right on the line of heavier snow. Just 4 or 5 miles just North of us they have around 4″ or 5″ with higher amounts as go more North. With the Snow and Cold outside, it’s time for a Comfort Food Dinner on the inside! I prepared a Turkey Meatloaf w/ Mashed Potatoes and Cut Green Beans.

 

 

 

I love this Turkey Meatloaf, I need to make it a lot much more often. I always use Jennie – O Extra Lean Ground Turkey Breast when I make it. To prepare the Meatloaf I’ll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic (Minced), 1 lb Jennie O Extra Lean Ground Turkey Breast, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt’s Ketchup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, and Sea Salt and Black Pepper (To taste).

 

 

 

Preheat your oven on 350 degrees.To start I melted butter in a medium skillet. Add the Garlic in the melted butter for 4 minutes, stirring occasionally. When done place mixture in a large bowl to cool for 5 minutes. In a large bowl combine the Turkey, Bread Crumbs, Egg Beater’s, 1/4 cup of the Ketchup, 1 table spoon Worcestershire Sauce, Spices, and Garlic mixture. Mixing by hand is the best way to mix this, make sure all ingredients are well mixed. Next, press the meatloaf mixture into a loaf pan and form into a loaf, you can use any size loaf pan you want. Take the Turkey Meatloaf Mashed Potatoes 002remaining Ketchup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking. Bake in a 350 degree oven for 50-55 minutes (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving. All the Ingredients come together to make one delicious Meatloaf. I really like the recipe for the Sauce! I also heated up some Bob Evans Mashed Potatoes and a small can of Del Monte Cut Green Beans. Not only is this a great dinner but with all the leftovers it’s going to make some killer Meatloaf Sandwiches also! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Well they were right, the heat and humidity returned! Started the day off with Jennie – O Turkey Bacon, a Scrambled Egg, and a couple of slices of Healthy Life Whole Grain Bread. Love that Turkey Bacon to start the day! Went and spent time with my Dad at the rehab center, a couple of hours or so, got the car washed, and back home for the day. I made an early dinner tonight Mom had to be somewhere at 7:00 this evening. It was comfort food heaven tonight for dinner. I prepared Mini Turkey Meat Loaves w/ Green Beans and New Potatoes.

Instead of making Mini Turkey Meat Loaves all in tin pans I made one Mini Turkey Meat Loaf Pan and 3 Patties. I got the idea from the current issue of EatingWell Magazine. The Patties looked and sounded so good I had to try them. For the Turkey I used Jennie – O Extra Lean Ground Turkey Breast. To make the Sauce topping I’ll need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan, top with sauce, and bake at 375 degrees for 30 – 35 minutes, inner temperature of 165 degrees. To make the Patties just take the meat mixture and form it into Patties and top with sauce. They both came out delicious Turkey Meatloaf and Turkey Meatloaf Patties! And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. We ate the Patties for dinner and saved the Mini Loaf to make sandwiches with for lunch or snacks.

For my side dishes it all by Del Monte. I heated up a can of Del Monte Low Sodium Cut Green Beans and a can of Del Monte Whole New Potatoes. Del Monte Products are always fresh and easy to prepare. Then for dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

1 Slice of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Ketchup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

 

 

Directions

Spent one long night last night fighting those Phantom Pains again! Didn’t get a full nights sleep and it bothered me through out the night. It did finally let it up around 6:00 this morning. So after a night of that I was starving this morning! I usually eat a light Breakfast but being as hungry as I was I had a Breakfast with a lot more calories and carbs than I normally have, but it was one delicious Breakfast! I made a Turkey Goetta and Hash Brown Hash topped with a Sunny Side Up Egg along with Wheat Toast and a Bigelow Decaf Green Tea. After Breakfast I had to take my car back up to finish some minor repairs and caught up on some laundry. For dinner it was all leftovers! I had yesterday’s Turkey Meatloaf on a Bun and a side of Mashed Potatoes.

 

 

 

I love this Turkey Meatloaf, I need to make it a lot more often. I use Jennie – O Extra Lean Ground Turkey Breast always when I make it. To make my Sauce topping I need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. 7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Today’s Menu: Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread

 

 

 
Another day and another day of arguing with my prescription insurance. I’m beginning to wonder if it’s worth the hassle of switching insurances to save a little money. Live and learn. Warmed up to 40 degrees today, big improvement there! For dinner tonight, nothing but comfort food! I prepared Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread.

For the Turkey I used Jennie – O Extra Lean Ground Turkey Breast. To make your Sauce topping you’ll need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan and bake at 350 degrees for 50 – 55 minutes. It comes out one delicious Turkey Meatloaf! And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. Almost forgot, lots leftover so this will make some incredible Meatloaf Sandwiches!

 

 

 
For one side I prepared a must when having Meatloaf, Mashed Potatoes. I used Bob Evan’s Mashed Potatoes, as usual. Easy to prepare and comes out perfect every time. Then I also heated up a small can of Del Monte Whole Kernel Sweet Corn along with a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

 

 

 

Turkey MeatloafTurkey Meatloaf Mashed Potatoes corn 001
Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 lb Jennie O Extra Lean Ground Turkey Breast
1 Slice of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into a loaf pan. Place the one slice of Turkey Bacon across the top of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Last night’s Turkey Meatloaf turned into todays Lunch, Turkey Meatloaf Sandwich! I warmed up the Meatloaf, served it up on a Aunt Turkey Meatloaf Sandwich 005Millie’s Light Whole Grain Bun and topped it with some JB’s Chipotle BBQ Sauce. Heating up a bit with the Chipotle Sauce gave it that much more flavor! Love them leftovers!
