Today’s Menu: Turkey Meatball Mini Sub w/ Baked Fries

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. What a wild weather night here in the Midwest last night! Many lives were lost and whole towns were destroyed. We were very luck as the severe weather missed us. Our temperature dropped here before the cold front came in so we avoided the tornados. This morning at 7:00 our temps rose back up to 62 degrees and by 3:00 this afternoon it had dropped to 38 degrees! I hope the bad weather is over for everyone! For Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries. I kept it simple tonight using the Leftover Turkey Meatballs to make the Sub.

 

I’ll waste no Turkey Meatballs! I used the Meijer Turkey Meatballs leftover from the Spaghetti I made the night before. The Meatballs are good size, meaty, and have a fantastic taste and they’re 150 calories and 5 net carbs for 6 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns, I used Aunt Millie’s Reduced Calorie Whole Grain Hot Dog Buns. For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took the Leftover Meatballs and Sauce and added them to a medium size sauce pan and sprayed it with Pam Cooking Spray. I heated on medium heat until all was heated through.

 

I’m using Sargento Off the Block Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I used Aunt Millie’s Live Carb Smart Wheat Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The LaRosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

 

 

I also prepared some Ore Ida Fries with a side of Hunt’s Ketchup for dipping. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Turkey Meatball Mini Sub w/ Baked Crinkle Fries

 

 

For Breakfast I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. One cold and windy day outside today! We had a high of 34 degrees but the Wind Chill had it in the teens all day. I went and picked up Breakfast for Mom and the right front tire went flat after I got home. A neighbor came over and filled the tire for us and I took it to the car to the mechanic we always use. He repaired the tire and back home after I stopped for gas. For Dinner tonight I prepared a Turkey Meatball Mini Sub w/ Baked Crinkle Fries.

 

 

I used the Meijer Turkey Meatballs leftover from the Spaghetti I made the night before. For my Pasta Sauce I had used the LaRosa’s Original Sauce. A local favorite and mine also, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. To prepare it I took a medium size sauce pan and sprayed it with Pam Cooking Spray. Emptied the can of Sauce in the pan and turned the heat on medium. Then I added my Turkey Meatballs and covered the pan and let it simmer until both the Sauce and Meatballs were heated through.

 

I’m using Sargento Off the Block Shredded Mozzarella Cheese as a topping for the Sub. You can use Hoagie Buns but to save on calories and carbs I usually just use Aunt Millie’s Reduced Fat Whole Grain Hot Dog Buns or Healthy Life Wheat Hot Dog Buns. To assemble; open the Bun up, put the Meatballs and Sauce in the Bun , top it with a few shakes of McCormick Grinder Italian Seasoning, and top it with the Sargento Shredded Mozzarella Cheese. Love these Meatball Sandwiches! The Larosa’s Sauce just seems to bring the Sandwich together! Sauce is incredible, Turkey Meatballs flavorful and meaty, and the Mozzarella is perfect with Pasta and Sauces.

 

I also prepared some Ore Ida Crinkle Cut Fries with a side of Hunt’s Ketchup for dipping. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream.

Today’s Menu: Turkey Meatball Mini Sub w/ Italian Pasta Salad

 
Not much going on around the house today. Rained most of the day, but that beats cold weather and snow! Sunny and 55 degrees tomorrow they say. Ran a few programs on the computer and that’s been about it. For dinner tonight it’s a Turkey Meatball Mini Sub w/ Italian Pasta Salad.

 

 

I used the leftover Honeysuckle White Fresh Italian Style Turkey Meatballs from last night’s dinner. I’ve been using the Honeysuckle White Fresh Italian Style Turkey Meatballs for quite a few years now. The MeatTurkey Meatball Mini Sub  Italian Pasta Salad 004balls are good size, always fresh, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. Plus they’re a perfect size for Hoagie or Hot Dog Buns. For my Pasta Sauce I used the LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve ever had, it’s got a perfect combination of a robust sauce with a hint of sweetness to it. For my Cheese I used a slice of Sargento Ultra Thin Provolone Cheese and for the Bun I used a Kroger Brand Wheat Hot Dog Bun. To assemble; open the Bun up, put the slice of Provolone Cheese on it, the Meatballs and Sauce, and top it with a few shakes of McCormick Grinder Italian Seasoning. Love these Meatball Sandwiches!

 

 
For a side I kept it light and made a Italian Pasta Salad. I made this yesterday, it’s always better to prepare it a day ahead and let it chill in the fridge overnight. I used Ronzoni Garden Delight Tri Color Rotini PaTurkey Meatball Mini Sub  Italian Pasta Salad 001sta. This is a light and tasty dish that includes the following ingredients; Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Shredded Parmesan, Kraft Zesty Italian Fat Free Dressing, and McCormick Grinder Italian Seasoning. Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients, and fold in everything. Put the Pasta Salad in a plastic bowl with a lid and set it in the fridge until your ready to use it the next day. Really like this Pasta Salad, refreshing and so easy to make.

Another beautiful Spring Day out again. Went and got Mom’s car washed for her and stopped at the bank. Later took my Mom to Home Depot, we needed some new shades for the living room windows and picked up 5 bags of fresh mulch. For dinner tonight I prepared Turkey Meatball Mini Sub w/ Baked Fries.

 

 

 

 

I reheated the Turkey Meatballs leftover from dinner a couple of nights ago. I had used Honeysuckle White Fresh Italian Style Turkey Meatballs. I’ve tried many different Turkey Meatballs and these are the best tasting I’ve found. Their 190 calories and 5 net carbs per serving (3 Meatballs ). And three is plenty as these are good size Meatballs. They were marinated in Ragu Chunky Mushroom Pasta Sauce. When Meatballs are completely heated through I served them on an Meijer Bakery Perfection Deli Mini Wheat Sub Buns and topped with Sargento Reduced fat Shredded Mozzarella Cheese. Makes one fine Turkey Meatball Hogie! I served it with a side of Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, my favorite fries! Later tonight for dessert a Jello Sugar Free Black Cherry Jello.
