Today’s Menu: Banquet Homestyle Bakes Pizza Pasta w/ Baked Cheesy Bread
Spent the day catching up with an old High School friend that’s in town for the week. We’ve been good friends since about our sophomore year in High School, about 38 years now! Time does move quickly. Anyway I was running late to get back home and make something for dinner so I went with another quick and easy comfort foods; Banquet Homestyle Bakes Pizza Pasta w/ Baked Cheesy Bread.

 
So for dinner I prepared Banquet Homestyle Bakes Pizza Pasta with Baked Cheesy Bread. Another quick, easy, and delicious comfort banquet-pizza-pasta-002food. And why not it’s got two of my favorites are in it pasta and pizza! The box contains 1 can of Pizza Sauce w/ Pepperoni and Sausage and 1 Pouch of Rotini Pasta. I also added a few slices of Turkey Pepperoni and sliced Portabello Mushrooms to the mix. For the preparation you can bake it or prepare it on the stove top, which is how I prepared it. Add 1 cup of water, stir and mix, and simmer and you have your dinner! This came out fantastic! Really tasted like a Pizza. The Sauce with Sausage and Pepperoni provides great flavoring. Easily prepared and makes a hearty and delicious meal. The meal prepared by instructions is 280 calories and 46 carbs any of the additions are very little extra. I also prepared some Baked Cheesy Bread. Another easy one, using Healthy Choice Whole Grain Bread, Kraft 2% Shredded Mozzarella Cheese, and I Can’t Believe It’s Not Butter. Just Butter the Bread and add your Cheese on top. Then bake on 400 degrees until the Bread is toasted and Cheese is melted. For dessert/snack later some Tostito‘s Whole Grain Scoops along with Newman’s Own Black Bean and Corn Salsa.

Stove Top:

1. Stir Together Can of Sauce and 1 Cup Hot Water In Medium Skillet.
2. Stir In Pasta Until Well Coated. Heat to Boiling.
3. Reduce Heat. Cover and Simmer About 15 Minutes, Or Until Pasta Is Tender, Stirring Occasionally.

Happy Easter Everyone! Hope you all are having a nice one. My parents had a dinner invitation so they went out to eat for dinner. So I didn’t want to prepare a big Easter Dinner for one person and I wasn’t in the mood to fix a  Ham or Lamb really. For my dinner I prepared Ocean Perch w/ Potato Pancakes, Green Beans, and Whole Grain Bread.

 

 

I had purchased the Ocean Perch from Meijer’s Seafood Department a while back and had them frozen in the freezer. After they thawed I rinsed them with water and patted dry. I seasoned them with Sea Salt, Ground Black Pepper, and Zantarain Creole Seasoning. I pan fried them in Canola Oil about 3 minutes per side. They fried up a nice golden brown and I served them with a new Remoulade Sauce I had purchased, Louisiana Remoulade Dressing. And yes I have found the perfect Remoulade Sauce! Love this stuff, I even put a little bit of it on my Potato Pancakes. A really good sauce.

 

For side dishes I prepared Potato Pancakes, Cut Green Beans, and two slices of Aunt Millie’s Light Whole Grain Bread. I used MANISCHEWITZ Potato Pancake Mix, my favorite Potato Pancake Mix. Just mix with Water, Extra Virgin Olive Oil, Egg Beaters, Sea Salt, and Pepper. Fry until golden and your ready! I left the product info and directions at the end of the post. the Green Beans were Del Monte Cut Green Beans. For dessert/snack later some Newman’s Own Black Bean and Corn Salsa along with some Tostito‘s Whole Grain Scoops.

 

 

 
MANISCHEWITZ Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Rummaging around the freezer last night I found a bag of Kroger Brand Jumbo Shrimp. So for dinner I prepared Zatarain’s New Orleans Style Pasta Dinner Shrimp Scampi w/ Aunt Millie’s Light Whole Grain Bread.

Using Zatarain’s New Orleans Style Pasta Dinner you can add Chicken, Pork, or Shrimp, but I always go with the Shrimp but I think some Blackened Chicken would be great with this also! I used the Jumbo size Shelled and Tailless Shrimp. I lightly heated the Shrimp for about 3 minutes per side and seasoned them with some Sea Salt, Ground Black Pepper and Zatarains Creole Seasoning. I then cooked the Pasta by the box directions and added in the Shrimp as the Pasta was finishing up. I left the info and details at the bottom of the post on the Zatarain’s. The Scampi came out fantastic! Great flavor, seasoned just right with a bit of heat! Real easy to make and the Zatarains Scampi Pasta is only 110 calories and 21 carbs. The added Shrimp was 120 calories and 0 carbs. I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For a dessert/snack later some Tostito‘s Whole Grain Scoops along with Newman’s Own black Bean and Corn Salsa, which is my new favorite Salsa of choice.

It’s been an afternoon of March Maddness (College Basketball) and it’s going to be an evening of the same. So what better than some Chili and Cheese Nachos to eat while watching the games this evening. Quick and easy to prepare so I won’t miss any action and delicious and filling for a meal sometimes.

 

 
I used Tostito’s Whole Grain Scoops for the chips, 2 can Campbells Firehouse Chili w/ Beans, 1 small can of Sliced Black Olives, sliced Jalapenos, and Kraft 2% Pizza Cheese. Just layer in a baking dish and bake at 400 degrees until the chips are warmed and cheese is melted. I think the Campbell’s Firehouse Chili makes the Nachos. It’s a seasoned just right, thick and just enough heat to make it perfect! I also sliced up some Celery Sticks and Carrots along with some Litehouse Lite ranch Vegetable Dip. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today’s Menu: Bison Top Sirloin Steak and Sauteed Mushrooms w/ Baked Potato and Green Beans

 

Started off the day at the Doctor’s Office at my Family Doctor, 6 month check-up. My sugar was running a bit high the past 2 check-ups so he’s put me back on Metformin for Diabetes 2. It’s tough getting the right amount of exercise in a wheelchair. I’ll just have to work harder I guess and try to turn it around again. For dinner it’s Buffalo. I just can’t get enough of these Wild idea Buffalo Top Sirloin Steaks! For dinner I prepared Bison Top Sirloin Steak and Sauteed Mushrooms w/ Baked Potato and Green Beans.Wild Idea Buffalo Top Sirloin 007

 

Preparing the Buffalo Top Sirloin is always easy. To season I just use McCormick Grinder Sea Salt and Black Peppercorn. i pan fried it in Canola Oil about 4 minutes per side to a delicious medium rare. I topped the Steak with Sauteed Baby Bella Mushrooms that I Sauteed and Seasoned with Sea Salt, Black Pepper, Roasted Cumin, parsley Flakes, and Minced Garlic. The Steak came juicy and delicious. The Wild Idea Buffalo is the finest Buffalo, or Bison, I have ever had. I’ve got some great and healthy recipes from Wild Idea that I will be passing along in the upcoming weeks also.

 

For side dishes, along with the Mushrooms, I prepared a Baked Potato that I topped with some Newman’s Own Pineapple Salsa and a Single Serving can of Del Monte Cut Green Beans. It’s the first time I’ve tried the Newman’s Own Pineapple Salsa on a Baked Potato and it came fantastic! For dessert/snack later some Tostito‘s Baked Scoop Tortilla Chips along with some of Newman’s Own Black Bean and Corn Salsa.

I had been wanting some Zatarain's New Orleans Style Shrimp Scampi 004Shrimp and what better way to prepare them than by using them in Zatarain’s New Orleans Style Pasta Dinner Mix. The easy and delicious way to prepare Shrimp Scampi. So for dinner I prepared Zatarain’s New Orleans Style Pasta Dinner Shrimp Scampi w/ Aunt Millie’s Hawaiian Style Rolls.

Today’s Menu: Fried Walleye w/ Cheesy Potato Casserole, Green Beans, and Whole Grain Bread
While at Meijer yesterday they had Ocean Perch and walleye both on sale in their Seafood Department. I ended up picking up a couple Walleye Chessy Potato CASS 004of pounds of each. So tonight I went with the Walleye, preparing Fried Walleye w/ Cheesy Potato Casserole, Green Beans, and Whole Grain Bread.

 
To prepare the Walleye I first rinsed it with water and patting dry with paper towel. Then I seasoned it with Morton’s Lite Salt and Ground Pepper and lightly coated it with Progresso Italian Style Bread Crumbs. I pan fried it in Canola Oil about 3 1/2 minutes per side. As always Walleye frys up to a perfect golden brown and delicious as always also. For side dishes it was leftovers, Green Beans from yesterday’s meal and Ore Ida Cheesy Potato Casserole that I had frozen. I just warmed both up in the microwave and they were ready! I love this Cheesy Potato Casserole! It’s become one of my favorite dishes and the good thing is that it freeze’s up and reheats beautifully. I’ve left the recipe at the bottom of the post. I also had a slice of healthy Life Whole Grain Bread. For dessert/snack tonight some of Newman’s Own Blackbean and Corn Salsa along with Tostito‘s Baked Scoops.

Ore Ida Cheesy Potato Casserole

Ingredients
1 bag Ore-Ida® Country Style Hash Browns
1 can cream of chicken soup
2 cup Sour cream
1/2 teaspoon salt
2 cup cheddar cheese shredded
1/3 cup green onions sliced
1/4 teaspoon black pepper, ground
2 cup corn flakes crushed
1/4 cup butter, melted

Instructions
1. Preheat oven to 350 degrees F. Coat 13×9 baking dish with nonstick cooking spray.
2. In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and Hash Browns until well mixed. Spoon evenly into baking dish.
3. In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of Hash Brown mixture.
4. Bake uncovered for about 45 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Garnish with additional sliced green onion if desired.
TIP: If desired, substitute condensed cream of chicken soup with condensed cream of turkey soup.

Today’s Menu: Velveeta Cheesy Turkey Mac w/ Whole Grain Bread
The one pot meals, you have to love them! I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 2 cups of water, the seasoning and pasta. Simmer for 11 – 13 minutes and add the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 350 calories and 27 carbs but you can lower the calorie count by using the Ground Turkey as stated above. I also had a couple of slices of Healthy Life Whole Grain Bread. For dessert/snack later some Tostito‘s Whole Grain Scoops with Newman’s Own Medium Chunky Black Bean & Corn Salsa.

Velveeta Cheesy Skillets Ultimate Cheeseburger Mac

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Today’s Menu: Chili and Cheese Nachos

It was laid back day today. The biggest effort of the day was changing the batteries in the remote! So needless to say there wasn’t going to be any huge dinner prepared tonight. I wanted something light and easy to prepare so I went with Chili and Cheese Nachos. I used Tostito’s Whole Grain Scoops for the chips, 2 can Campbells Firehouse Chili w/ Beans, 1 small can of Sliced Black Olives, sliced Jalapenos, and Kraft 2% Pizza Cheese. Just layer in a baking dish and bake at 400 degrees until the chips are warmed and cheese is melted. I think the Campbell’s Firehouse Chili makes the Nachos. It’s a seasoned just right, thick and just enough heat to make it perfect! For dessert later a bowl of Blue Bunny Vanilla/Chocolate Swirl Frozen Yogurt.

Today’s Menu: Chicken ‘n’ Noodles

Tried another Margaret Holmes Product for dinner tonight. I went with the Simple Suppers Chicken ‘n’Noodles Fixins’. It comes in a 5 serving can and contains the Noodles and Seasoning, I added the Chicken. I cut up 2 Chicken Breasts seasoning them with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsley. I then fried them in a large skillet until done and added the can of Fixins’. Cooked until it the Sauce was bubbling and heated throughout.

Well this will be another Margaret Holmes product that I’ll be buying more of! The noodles and seasoning was perfect and the sauce was unbelievable, a really fantastic flavor. A real hearty and delicious meal. I left the info and web site link at the bottom of the post. I also had Healthy Life Whole Grain Bread. For dessert/snack later Tostito‘s Whole Grain Scoops with Kroger Organic Black Bean and Corn Salsa.
