Buffalo Chicken Nachos Grande 007

Want an appetizer that’s real good, just not good but down right delicious? Look no further, from Pillsbury it’s Buffalo Chicken Nachos Grande! Just a warning, these are addictive! I came across these on a Pillsbury Recipe email update the other day and it sounded too good to pass up, and they were.

 

 
The recipe calls for 4 cups shredded deli rotisserie chicken, 3/4 cup Buffalo wing sauce, 1 bag (18 oz) restaurant-style tortilla chips, 3 cups shredded mozzarella cheese (12 oz), 1/2 cup finely chopped celery, and 1 cup crumbled blue cheese (4 oz). Sort of sounds like Buffalo Wings. I used a Walmart Rotisserie Chicken, Kroger Brand Medium Wing Sauce, Mission Round Tortiia, Sargento Reduced Fat Shredded Mozzarella, I was out of Celery so I didn’t add any, and Mayfield Crumbled Bleu Cheese. I think chopped Celery or maybe even chopped Green Onions would both work. Even add a Jalapeno Pepper on top for added heat.

To prepare them just Heat your oven to 350°F. and in large bowl, toss chicken and 1/2 cup of the wing sauce to coat. Spray two large (14-inch) pizza pans with cooking spray. Arrange half of the tortilla chips on one pizza pan; top with 2 cups of the chicken and 1 1/2 cups of the mozzarella cheese. Repeat on second pizza pan. Bake 8 to 10 minutes or until cheese is melted. Top each pan with celery and blue cheese; drizzle with remaining 1/4 cup wing sauce. To serve; slide one pan of nachos off onto other pan to make one large mound of nachos. Serve immediately. I wanted to try a small batch of these so I only made one baking sheet of them. As I said earlier these are delicious! Perfect for those tailgate football gatherings, parties, or even a main meal. Easily made and they are good leftovers; just put them on a plate with a paper towel over them and reheat in the microwave about 30 – 40 seconds. A mountain of nachos made with everyone’s favorite spicy Buffalo wing sauce and blue cheese!
Ingredients:

Came across this on the http://www.diabeticlivingonline.com/ web site and had to pass it along! What a great and easy recipe. Just open the bags of tortilla chips and add the addtional ingredients and you have your “Walking Taco” How great is that! I left the recipe and web link below. check the entire web site out it’s full of great recipes and info.

Homemade Walking Tacos
MAKES: 5 servings
SERVING SIZE: 1 walking taco
CARB GRAMS PER SERVING: 16

2 teaspoons olive oil or canola oil
8 ounces uncooked ground turkey breast
1/4 cup chopped onion
1/4 cup chopped red sweet pepper
1 tablespoon reduced-sodium taco seasoning
1 tablespoon water
1/8 – 1/4 teaspoon crushed red pepper
5 100-calorie packages nacho cheese-flavor tortilla chips
1 cup shredded romaine lettuce
2/3 cup diced tomato
1/3 cup shredded reduced-fat cheddar cheese
5 teaspoons light sour cream
1. In a large skillet, heat oil over medium heat. Add turkey breast, onion, and sweet pepper. Cook until turkey is no longer pink, using a wooden spoon to break up meat as it cooks. Stir in taco seasoning, the water, and crushed red pepper. Cook and stir for 1 minute more.
2. Meanwhile, open the bags of tortilla chips; if desired, gently crush chips. Add lettuce to the bags. Top with cooked turkey mixture, tomato, and cheese. Top each with a teaspoon of the sour cream. Use a fork to mix together and eat from the bag. Makes 5 servings (1 walking taco per serving)

Cheesy Turkey Sausage Nachos

Ingredients

3/4 pound bulk Turkey Sausage
1/4 cup chopped Onion
3 cups diced fresh Tomatoes, divided
3/4 cup Picante Sauce
4 cups Tortilla Chips
3 cups shredded Canadian Cheddar, divided
1 medium ripe Avocado, diced

Directions

*Crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain well. Add 2 cups tomatoes and picante sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until most of the liquid has evaporated.
*Sprinkle tortilla chips over a 12-in. pizza pan. Top with 2 cups cheese and the sausage mixture; sprinkle with remaining cheese. Bake at 350 degrees F for 8-10 minutes or until cheese is melted. Sprinkle with avocado and remaining tomatoes.

Today’s Menu: Bison Pattie Melt w/ Turkey Chili Spud

Cool and windy day outside today so I wanted a healthy and hearty, stick to your ribs comfort food dinner! I had a Bison Pattie Melt w/ Turkey Chili Spud. I used Ground Bison Sirloin that I flattened out a bit. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I fried it in Extra Virgin Olive Oil about 4 minutes per side. After I flipped the burger I topped it with a slice of Hardwood Smoked Gouda Cheese. I served it on Healthy Life Whole Grain Bread that I toasted. I had a Turkey Chili Spud as a side. I baked a Russet Potato and topped it with Hormel Turkey Chili With Beans! It tasted even better than it sounds! For a dessert/snack later tonight I’ll be trying something new Tostitos artisan Roasted Garlic & Black Bean Tortilla Chips. I had heard how good they were so I decided it was time to try them out. The chips are 140 calories and 18 carbs per serving. I’ll have them with Kroger Brand Organic Black Bean & Corn Salsa.

Today’s Menu: Jennie-O Turkey  Nachos Extreme!

These were so good I couldn’t wait to have them again! The Kit comes with the Cooked Taco Flavored Turkey (8oz.), Corn Tortilla Chips (4oz.), Shredded Cheese (3oz.), microwavable Disposable tray w/ lid, great to store the leftovers!
Step 1 – Open the end of the Taco Meat Package
Step 2 – Layer Chips in tray, top with contents of Meat pouch. Use fork to break up Meat and distribute evenly over Chips. Top with Cheese.
Step 3 – Microwave uncovered on High for approximately 2 minutes. Serve.

Can’t get much easier! They turned out great! I also added a small can of Sliced Black Olives and slices of Tamed Jajapeno Peppers before heating. Plus only 290 calories and 22 carbs per serving, there are 4 servings per kit.

Ran across this while at Walmart earlier and I knew I had my dinner for later! I was wanting something light and easy to fix while getting my Sunday dose of Football. Easy to fix, yes! The Kit comes with the Cooked Taco Flavored Turkey (8oz.), Corn Tortilla Chips (4oz.), and Shredded Cheese (3oz.).

I’ll be buying more of these a good tasting and quick and easy way to fix Nachos! Plus only 290 calories and 22 carbs per serving, there are 4 servings per kit.

Today’s Menu: Spaghetti and Turkey Meatballs w/ Bella Vita Low Carb Pasta Sauce and…

It was spaghetti and Meatballs tonight! I used Ronzoni Healthy Harvest Whole Wheat Spaghetti along with Honeysuckle White Turkey Meatballs. Topped everything with Shredded Parmesan Cheese and Bella Vita Low Carb Pasta Sauce (Roasted Garlic Flavored). Along with the great taste the Sauce is only 70 Calories and a mere 6 Carbs! I also had Healthy Life Whole Grain Bread. For dessert/snack later some Chip‘ins Popcorn Chips along with Fiesta Salsa.
