Open Faced Chili Mango Turkey Burger
Cut the carbs, not the flavor on burger night with a delicious Open Faced Chili Mango Turkey Burger. This recipe features a homemade chili mango guacamole on a turkey burger served in a lettuce wrap.

Total Time – 40 Minutes
Serving Size – Makes 4 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Turkey Burger Patties

4 – lettuce leaves

4 – tomato slices

sliced red onion

cilantro

Chili Mango Guacamole

2 – avocados, mashed

1 – mango, diced

1 – Roma tomato, diced

1/4 – cup chopped cilantro

2 – tablespoons minced red onion

1 – hot chili pepper, minced

1 – clove garlic, minced

2 – tablespoons lemon juice

1 – tablespoon olive oil

salt and pepper, to taste

Directions

1) Spray skillet with nonstick cooking spray or add 1 to 2 teaspoons of oil. Preheat skillet over medium heat. Place burger patties in hot skillet. Cook approximately 15 to 17 minutes turning occasionally (2-3 times). Always cook to well-done, 165°F. as measured by a meat thermometer.

2) In medium bowl, combine all ingredients and mix well. Refrigerate until ready to use.

3) Fill lettuce leaves with turkey burger, tomato, red onion, cilantro, and Chili Mango Guacamole.

Lettuce Wrapped Turkey Burger Blends
When hunger strikes and you’re short on time, rely on a flavor-packed version of the classic burger. Lean, protein-packed turkey delivers a delectable patty, and chipotle-infused sauce, crisp lettuce, and juicy tomatoes make this a simple, delicious meal for any day of the week.

Serving Size – Makes 4 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Turkey Burger Blends

½ – cup mayonnaise

2 – teaspoons canned chipotles in adobo sauce, minced

1 – head iceberg lettuce

tomato slices
red onion slices

Directions
1) Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) In small bowl, combine mayonnaise and chipotles.

3) Slice 8 rounds from edge of lettuce head to create 4 lettuce buns.

4) Serve burgers in lettuce buns, with chipotle mayo, tomato slices, and red onion slices.

GRILLED ONION BURGER
Here’s a healthier version of a classic burger topped with grilled onions and all the fixings. Recipe for Grilled Onion Burger from our Sandwiches recipe section.

Ingredients

1-1/2 pounds 95% lean ground beef
1 large sweet onion, cut crosswise into 1/2-inch thick slices
Vegetable oil
Salt and pepper
4 hamburger buns, split, toasted
Lettuce leaves
Tomato slices

Directions

1 – Lightly shape Ground Beef into four 3/4-inch thick patties. Brush onion slices with oil.
2 – Place patties and onion slices on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, 13 to 14 minutes) until instant-read thermometer inserted horizontally into center registers 160F, turning occasionally. Grill onions, 10 to 12 minutes or until tender, brushing with oil and turning occasionally.
3 – Season burgers and onions with salt and pepper as desired.
4 – Line bottom of each bun with lettuce. Place burgers on top of lettuce. Top with tomatoes and grilled onions. Close bun.
NOTES:

Chickpea Burgers
Chickpeas, lentils and other legumes are the ideal diabetes management trifecta: They lower blood sugar after meals, lower “bad” (LDL) cholesterol and increase “good” (HDL) cholesterol. Work

some into your meal plan with these tasty vegetarian burgers!

Ingredients
1 can (15 ounces) chickpeas, rinsed and drained
1/3 cup chopped carrots
1/3 cup herbed croutons
1/4 cup chopped fresh parsley
1/4 cup chopped onion
1 egg white
1 teaspoon minced garlic
1 teaspoon grated lemon peel
1/2 teaspoon black pepper
1/8 teaspoon salt (optional)
Nonstick cooking spray
4 whole-grain hamburger buns
Tomato slices, lettuce leaves and salsa (optional)

Directions
Yield: 4 servings
Serving size: 1 burger

1. Place chickpeas, carrots, croutons, parsley, onion, egg white, garlic, lemon peel, pepper and salt, if desired, in food processor; process until blended. Shape mixture into 4 patties.

2. Spray large nonstick skillet with cooking spray; heat over medium heat. Cook patties 4 to 5 minutes, or until bottoms are browned. Spray tops of patties with cooking spray; turn and cook 4 to 5 minutes, or until browned.

3. Serve burgers on buns with tomato, lettuce and salsa, if desired.
