Busy day? Fix the family this fast and tasty pizza using convenient, ready-to-use ingredients—throw in a green salad tossed with Italian dressing and supper is served!
A Family-Favorites Recipe.

Recipe Ingredients:

1 (12-inch) pre-baked pizza crust
1/2 of a (7-ounce) container refrigerated pesto*
1 (10-ounce) package Italian flavored, fully cooked, carved chicken breast or other cooked chicken breast
1 (6-ounce) jar marinated artichoke hearts, drained and chopped
1 cup grated mozzarella, provolone or fontina cheese

Cooking Directions:

1 – Preheat oven to 450°F (230°C).
2 – Spread the pizza crust with the pesto. Sprinkle with chicken, artichoke hearts and grated cheese. Season with freshly ground pepper, if desired.
3 – Bake on a pizza stone or baking sheet for 8 to 10 minutes, until the cheese begins to brown.
Serve hot.
Makes 4 (2 slice) servings.

*If desired, freeze remaining pesto for use at another time.

Cooking Tips:

* Two grilled chicken breasts from your local deli will yield 10 to 12 ounces.
* If shredded chicken is dry, toss with about 2 tablespoons of your favorite Italian dressing before placing on pizza.

For this week’s Sunday Pizza a Memphis Style BBQ Turkey Pizza. It’s from the Jennie – O website (https://www.jennieo.com/) It uses the JENNIE-O® Turkey Breast Roast along with toppings of; Broccoli Slaw, Coleslaw Dressing, BBQ Sauce, and served on a Whole Wheat Pizza Crust.

 

Memphis Style BBQ Turkey PizzaMemphis Style BBQ Turkey Pizza

Ingredients
1 (10-ounce) package broccoli slaw
½ cup lite coleslaw dressing
1 ½ cups barbecue sauce, divided
1 (12-inch) pre-made whole wheat pizza crust
1.25 pounds JENNIE-O® Turkey Breast Roast, in deli grab-n-go section, chopped into bite size pieces

Directions
1 – Heat oven to 450°F. In medium bowl, mix broccoli slaw and coleslaw dressing; set aside.

2 – Spread ¼ cup barbecue sauce over pizza crust. In large bowl, combine turkey with 1 cup barbecue sauce. Spread barbecued turkey over pizza crust. Bake 10 minutes or just until heated through.

3 – Spread remaining barbecue sauce over the turkey. Top turkey with broccoli slaw.

Beef Pizza Bagels

Kids will love these ground beef and cheese pizza bagels.Cooksrecipes 2

Recipe Ingredients:

4 plain bagels, halved
1/2 pound cooked, lean ground beef
1/2 cup shredded mozzarella cheese
1/2 cup pizza or spaghetti sauce
Cooking Directions:

1 – Spread top of each bagel half with 1 tablespoon sauce. Top with approximately 3 tablespoons cooked ground beef. Sprinkle with 1 tablespoon cheese.
2 – Place bagels on cookie sheet sprayed with non-stick cooking spray.
3 – Bake in a preheated oven at 350°F (175°C) for 10 minutes or until cheese is melted and bagel is golden brown. (Or, place bagel in 400°F (205°C) toaster oven for 10 minutes.)
Makes 4 servings.

Tip: Especially for the kids – Ask mom or dad to cook an extra pound of lean ground beef ahead of time. After drippings are poured off, separate the ground beef into four plastic baggies and keep in the freezer. These can be taken out of the freezer, reheated in the microwave, and used in this recipe for a short cut.

Recipe Ingredients:

4 large eggs, beaten
1/3 cup pizza sauce
2 English muffins, split, toasted
1/2 cup shredded Italian cheese blend (2 ounces)
Dried oregano leaves

Cooking Directions:

1 – Preheat oven to 450°F (230°C).
2 – Coat large nonstick skillet with cooking spray; heat over medium heat until hot.
3 – Pour in eggs. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking – pulling, lifting and folding eggs – until thickened and no visible liquid egg remains. Do not stir constantly. Remove from heat.
4 – Spread pizza sauce evenly on muffin halves; place on baking sheet. Top with eggs and cheese, dividing evenly.
5 – Bake in 450°F (230°C) oven until cheese is melted, about 5 minutes. Sprinkle with oregano.
Makes 4 servings.

Note: Pizzas can be baked in toaster oven at 450°F (230°C) until cheese is melted, 1 to 2 minutes.

Jerk Chicken Pizza with Mango SalsaCooksrecipes 2

Spicy Jamaican-style barbecue chicken pizza with a red-hot fiery attitude and cool mango salsa to help douse the flaming heat.

 

 

Recipe Ingredients:

Dough:
1/4 cup warm water (105°F to 115°F | 40°C to 45°C)
1 1/2 teaspoons active dry yeast
2 teaspoon granulated sugar
2 cups all-purpose flour
1/4 cup semolina flour
1 1/2 teaspoons salt
2 tablespoons olive oil
1/2 cup warm water

Toppings:
1 (4-ounce) boneless, skinless chicken breast half
1 tablespoon jerk seasoning
1 tablespoon olive oil
1/2 cup slice shiitake mushroom
1/2 cup bottled barbecue sauce
1/4 cup Wisconsin Asiago cheese, grated
1/4 cup shredded Wisconsin Mozzarella cheese
1/4 cup Wisconsin Smoked Mozzarella cheese, grated

Mango Salsa:
1/2 ripe mango, diced
2 tablespoons diced red onion
1 tablespoon diced ripe tomato
1 tablespoon olive oil
1 1/2 teaspoons balsamic vinegar
1 teaspoon chopped fresh mint, basil or cilantro or mixture of all three

Cooking Directions:

1 – To Make Dough: In a small bowl, combine water, yeast and sugar and stir well to combine. Set aside for 5 minutes.
2 – In a large mixing bowl, combine flour, semolina flour and salt. Add olive oil to the yeast mixture. Stir well and add to flour. Add additional 1/2 cup warm water. Bring the mass of dough together until a compact ball is formed. Turn dough out onto work surface and knead vigorously for 7 minutes until smooth and satiny.
3 – Place a small amount of olive oil in a large bowl. Put dough in the bowl and turn it twice to coat. Cover bowl with plastic wrap and a kitchen towel. Set the bowl in a warm place. Allow dough to double in bulk, about 1 hour.
4 – Punch down dough and let stand for 20 to 30 minutes at room temperature before using. Roll dough into a circle about 10 inches in diameter, building up the edges slightly. Place dough on a pizza pan or baking sheet.
5 – To Prepare Toppings: Coat chicken with jerk seasoning. Heat olive oil in a sauté pan and when hot, sear chicken on both sides. Remove chicken from pan, add mushrooms to pan and sauté them for about 1 minute. Drain liquid from pan. Slice chicken into thin strips.
6 – To Prepare Salsa: In a small mixing bowl, combine and mix thoroughly all ingredients.
7 – To Assemble Pizza: Spoon barbecue sauce onto dough. Top with mushrooms and chicken strips. Sprinkle cheese on top.
8 – Bake pizza in a preheated 450°F (230°C) oven for 7 to 8 minutes until crust is browned and cheese is golden and bubble. Garnish pizza with mango salsa as soon as pizza is removed from oven.
Makes 4 servings.

Turkey Sausage Pizza on a Cauliflower CrustTurkey Sausage Pizza on a Cauliflower Crust

Ingredients
CRUST
cooking spray
½ head cauliflower
2 garlic cloves
¾ cup shredded low-fat mozzarella cheese
1 egg, beaten or ¼ cup egg substitute
1 teaspoon dried oregano
COOKED TOPPINGS
1 tablespoon olive oil
3 JENNIE-O® Lean Sweet Italian Turkey Sausages
3 crimini or white button mushrooms, sliced
1 cup shredded kale
⅛ teaspoon kosher salt
pinch of freshly ground pepper
FRESH TOPPINGS
5 grape or cherry tomatoes, halved
1 medium heirloom tomato or beefsteak tomato, sliced
¼ cup shredded low-fat mozzarella cheese
4 basil leaves

 
Directions
Heat oven to 400°F. Lightly spray baking sheet with cooking spray.

Line pizza pan with parchment paper and lightly spray with cooking spray.

Cut cauliflower into florets. Add cauliflower florets and 2 garlic cloves to food processor and pulse until the cauliflower turns into rice-sized pieces.

Spread cauliflower and garlic across baking sheet. Bake 15 minutes until cooked through; set aside to cool.

Make the cauliflower crust dough:
In bowl, combine cooked cauliflower, ¾ cup mozzarella cheese, egg, and oregano; mix well until a dough-like texture forms.

Form and bake crust:
Spread mixture onto the parchment paper-coated 10-inch pizza pan and create a circular crust.

Bake 20 to 25 minutes. Allow crust to cool 10 minutes before removing the parchment paper and placing the toppings on it.

While the crust is cooling, prepare the toppings.Jennie O Make the Switch

Prepare your toppings:
Remove turkey sausages from their casings. In medium size pan on medium high heat, add 1 tablespoon olive oil. To heated oil, add turkey sausage. As it cooks, break apart with wooden spoon. Cook the turkey until done, approximately 5 to 6 minutes. Always cook turkey until well-done, 165°F as measured by a meat thermometer.

To turkey, add mushrooms, kale, salt and pepper. Cook 2 to 3 minutes or until mushrooms have softened and the kale is wilted down.

Assemble your pizza:
Layer sausage mixture, tomatoes, ¼ cup cheese and basil over the slightly cooled pizza crust.

Bake your pizza:
Bake 5 to 6 minutes or until pizza is hot and bubbly.

* Always cook to an internal temperature of 165°F.

Thai Turkey Pizza

Ingredients
1 (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast CutletsThai Turkey Pizza
2 teaspoons minced gingerroot
2 teaspoons minced garlic
¼ teaspoon crushed red pepper
⅓ cup thinly sliced red bell pepper
¼ cup hoisin sauce
1 (12-inch) pre-baked pizza crust
⅓ cup thinly sliced green onions
½ teaspoon lime zest
⅓ cup coarsely chopped roasted peanuts
2 tablespoons chopped fresh cilantro or basil

 
Directions
1 – Heat oven to 450ºF. Cook cutlets as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Cut turkey into 1-inch strips. In medium bowl, combine turkey with ginger, garlic, red pepper and bell pepper. Coat large nonstick skillet with cooking spray; heat over medium-high heat. Add turkey mixture; stir-fry 3 minutes. Add hoisin sauce; stir-fry 2 minutes.

2 – Place pizza crust on baking sheet. Arranbe turkey mixture evenly over pizza crust; sprinkle with green onions and zest. Bake 8 to 10 minutes or until crust is golden brown. Sprinkle with roasted peanuts and fresh cilantro. Cut into wedges.
* Always cook to an internal temperature of 165°F.

Turkey Taco Pizza PieTurkey Taco Pizza Pie

Ingredients
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
1 onion, chopped
1 small green pepper, chopped
1 (14-ounce) can diced tomatoes
1 (14-ounce) can whole kernel corn, drained
1 (6-ounce) can ripe olives, sliced
1 cup salsa
1 (8-ounce) package cornbread muffin mix
2 cups shredded taco cheese, divided
shredded lettuce, sour cream and taco sauce, if desired

 
Directions
1 – Heat oven to 400°F. Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Add onion, green pepper, tomatoes, corn, olives and salsa. Bring to boil, stirring occasionally. Cover and simmer 15 to 20 minutes. While simmering, prepare cornbread muffin mix as specified on the package. Spread batter into greased deep dish pizza pan. Bake 8 to 10 minutes or until lightly browned.

2 – Remove cornbread from oven, sprinkle with 1 cup cheese. Spread turkey mixture on top of cheese, then top turkey mixture with remaining 1 cup of cheese. Bake 4 to 5 minutes or until cheese is melted. Serve with shredded lettuce, sour cream and taco sauce, if desired.
* Always cook to an internal temperature of 165°F.

The Sunday Pizza – Cast Iron Skillet Pizza

I came across this recipe in an email update from local blogger, My Adventures in Dinner Time, and couldn’t wait to give it a try! Cast Iron Skillet Pizza, it uses my favorite piece of cookware (Cast Iron Skillet) and it’s making one of my favorite foods Pizza. It quickly became a family favorite!

In her recipe she made her own dough for the Pizza Pie. I do not have a very good baking history using yeast, I’m down right terrible! So I used Pillsbury Classic Pizza Crust. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Breakfast Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. CAST IRON SKILLET PIZZA:

INGREDIENTS

2 1/2 cups bread flour
1/2 tsp dry active yeast
1 cup + 3 Tbsp warm water
2 tsp olive oil, plus more to coat pan
Pizza sauce
Cheese
Toppings
Fresh basil, minced (optional garnish)

 

DIRECTIONS

* Combine flour, yeast, salt, oil, and warm water in a large bowl. Using a wooden spoon, mix until no dry flour remains. Make sure the bowl is nice and large to accommodate for rising.
* Cover bowl tightly with plastic wrap and let sit on a counter for 8-24 hours. Dough will rise quite a bit.
* Once fully rested, sprinkle top of dough with flour and turn out onto a well floured surface.
* Divide dough into 2 portions, shape each into a ball/disk… tucking dough under itself to form a tight ball.
* If desired, place one of the balls in a Ziploc bag for freezing.
* Pour some oil (a couple of tablespoons) in the bottom of the cast iron pan, place ball of dough in pan, turning to coat in the oil.
* Using your hand, push the dough around to spread the oil in the pan.
* Cover tightly with plastic wrap and let rest for 2 hours.
* Preheat oven to 550 degrees (or as high as your oven goes)
* Once dough has rested, it should have settled and puffed to fill the pan. Use your fingers to push the dough into all edges of the pan and remove large air bubbles.
* Lift up edges of the dough to eliminate any air pockets on the bottom of the dough.
* Top the dough with your pizza sauce, cheese and any desired toppings or seasonings. Drizzle with olive oil.
* Place skillet in oven and bake for 12-15 minutes. The top should be bubbly and golden brown.
* Use a spatula to lift the edge of the pizza and check to see if the bottom is nice and golden brown and crisp. If you’d like it crispier, place on a stove top burner over medium heat for a couple of minutes.
* Sprinkle pizza with grated Parmesan cheese and/or fresh basil. Slice into pieces and serve hot.

Scrambled Egg Mini Pizzas

4 large eggs
1/4 cup milk
1/2 cup shredded part-skim mozzarella cheese (2 ounces) – divided use
1/2 cup pizza sauce
4 English muffins, split, toasted

Cooking Directions:

  • Heat oil in large nonstick skillet over medium-high heat until hot. Add bell peppers, onion and Italian seasoning; sauté until tender, 3 to 4 minutes.
  • Beat eggs and milk in medium bowl until blended. Pour over vegetables in skillet; sprinkle with 1/4 cup cheese. Reduce heat to medium. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking – pulling, lifting and folding eggs – until thickened and no visible liquid egg remains. Do not stir constantly. Remove from heat.
  • Spread 1 tablespoon pizza sauce on each muffin half. Top with eggs and remaining cheese, dividing evenly.
