Teriyaki Turkey and Rice
Fresh, fruity and flavorful, this Asian weeknight dinner recipe is brimming with fresh veggies, tender stir-fried turkey tenderloins and crunchy almonds. Low in fat and under 500 calories per serving.

INGREDIENTS
1 tablespoon vegetable oil
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, thinly sliced
1 red pepper, thinly sliced
¾ cup thinly sliced red onion wedges
1 cup pineapple pieces
⅓ cup teriyaki sauce
1 cup frozen green peas
2 cups jasmine rice, cooked
½ cup sliced almonds, toasted
3 tablespoons chopped cilantro

DIRECTIONS
1) Heat wok or skillet over high heat. Add oil and stir-fry turkey strips 5 to 7 minutes or until well-done, 165°F as measured by a meat thermometer.
2) Add red pepper, onion and pineapple. Stir-fry 3 minutes or until peppers are tender-crisp.
3) Add teriyaki sauce, peas, rice, almonds and cilantro; stir-fry 3 to 5 minutes or until hot.
* Always cook to an internal temperature of 165°F.

Pepper and Pineapple Pork Stew
A tasty and colorful pork stew that slow cooks all day while you are out—working or playing. Serve with hot cooked brown rice and multigrain dinner rolls.

Recipe Ingredients:
4 boneless pork chops, cut into 1-inch cubes
4 carrots, sliced
1/2 cup chicken broth
3 tablespoons teriyaki sauce
1 tablespoon cornstarch
1 (8-ounce) can pineapple chunks in juice, drained and juice reserved
1 green bell pepper, seeded and cut into 1-inch pieces

Cooking Directions:
1 – Brown pork cubes in hot skillet.
2 – Mix pork, carrots, broth and teriyaki in 3 1/2-quart slow cooker; cover and cook on low for 7 to 8 hours.
3 – Mix cornstarch with reserved pineapple juice; stir into pork mixture. Stir in pineapple and green pepper. Cover and cook on high 15 minutes or until thickened and bubbly.

TERIYAKI SHRIMP STIR-FRY WITH PINEAPPLE AND PEPPERS
Ingredients

3/4 cup fat-free, reduced-sodium chicken broth, divided
2 tsp. cornstarch
2 Tbsp. lite Teriyaki sauce
1/8 tsp. ground pepper
2 Tbsp. canola oil, divided
3/4 lb. medium shrimp, shelled and deveined
1 Tbsp. grated or minced ginger
1 large garlic clove, minced
8 large white mushrooms, stemmed and quartered
1 cup diced green bell pepper
1 cup diced red bell pepper
1 cup fresh pineapple, in 1-inch cubes
Cooked brown rice

Directions

1 – Pour 1/4 cup of broth into small bowl. Add cornstarch and whisk to blend. Add remaining broth, Teriyaki sauce and ground pepper. Set seasoning sauce aside.
2 – In wok, heat 1 tablespoon of oil over high heat. Add shrimp and stir-fry until they look pink, 2-3 minutes. Turn shrimp out into bowl.
3 – Add remaining oil to wok. Stir-fry ginger and garlic until fragrant, 30 seconds. Add mushrooms and peppers and stir-fry until mushrooms look moist, 2 minutes. Add pineapple and return shrimp to wok. Stir seasoning sauce and pour it into pan. Stir-fry until the sauce thickens and boils, about 2 minutes. The shrimp should be white in the center. Serve immediately. Can be accompanied by cooked brown rice, if desired (not included in nutritional information).

Recipe Yield: 4 servings.

Teriyaki Turkey with Brown Rice
Trade out the take-out! This Teriyaki Turkey with Brown Rice is an Asian inspired dish that will take your taste buds for a delicious ride.

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 tablespoon olive oil
¾ cup chopped green onions
2 garlic cloves, minced
1 tablespoon grated ginger
½ cup shredded carrots
½ red bell pepper, sliced
2 cups broccoli florets
¼ cup plus 1 tablespoon Teriyaki Sauce
1 tablespoon Low-Sodium Soy Sauce
3 cups cooked brown rice

DIRECTIONS
1) Cook ground turkey in olive oil as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Add to the cooked turkey, green onions, garlic, ginger and cook 3 minutes. Stir in carrots, peppers, broccoli, teriyaki and soy sauce. Cook until broccoli is crisp tender. Serve over brown rice.
* Always cook to an internal temperature of 165°F.

Turfuffle Burger

This winning burger from My Burger features a griddle-seared, hand-packed JENNIE-O® turkey patty topped with aged gruyere cheese, house-made teriyaki sauce, baby portabella mushrooms, iceberg lettuce, tomatoes and truffle aioli

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 teaspoon seasoned salt
4 hamburger buns, sliced
2 tablespoons butter, divided
8 baby Portobello mushrooms, sliced
4 slices Gruyere cheese
2 ounces truffle aioli
1 ½ ounces teriyaki sauce
1 large tomato, sliced
1 cup iceberg lettuce

DIRECTIONS

1) Spread half of the whipped butter on both sides of the buns. Toast on a pan until golden brown, remove from pan. Place remaining butter in the pan and add Portobello mushrooms. Sauté until soft, about 2-3 minutes. Shape turkey into 4 ½” thick patties and sprinkle with seasoned salt. Spray nonstick skillet with cooking spray. Preheat skillet over medium-high heat. Add turkey patties to hot skillet. Cook approximately 14 to 16 minutes, turning 2 to 3 times. Always cook to well-done, 165°F as measured by a meat thermometer. Top with Gruyere cheese when the burgers are close to done. Spread bottom bun with truffle aioli. Top with turkey burger, teriyaki sauce, mushrooms, tomato, and lettuce.
