Confetti Bean Chili Recipe

A medley of vegetables and beans adds color and appeal to this recipe

Ingredients
1 large onion, choppedTaste of Home
2 cans (14-1/2 ounces each) chicken broth
2 garlic cloves, minced
3 tablespoons chili powder
1-1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1 pound carrots, sliced
1 pound red potatoes, cubed
2 cans (14-1/2 ounces each) diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2-1/2 cups water
Directions
1. In a Dutch oven or soup kettle, simmer onion in broth for 5 minutes. Add next six ingredients; bring to a boil. Reduce heat. Cover; simmer 10 minutes. Add remaining ingredients. Cover; simmer 20 minutes. Yield: 12 servings.

I’ll start off by wishing my Mom a “Happy Birthday”, she turns 88 today! I just hope if I reach that age that I’m able to get around and do things as good as she does. Love you Mom!! I made Breakfast this morning for all of us. I prepared what is quickly becoming our favorite Breakfast dish, Ham and Diced Potato Skillet.

 

 

 

 

Black Bean Chicken with Rice 009
I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast and a favorite of Mom and Dad’s! After Breakfast I gave Mom her Birthday Presents and Birthday Cake. Afterwards I went to Meijer for a few items, I’m using Meijer more and more. For dinner tonight I tried a new recipe, Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread.

 

 

Black Bean Chicken with Rice 003
I came across this recipe in an issue of Simply Delicious (Taste of Home). Black Beans, Chicken, Rice and throw in Corn and Salsa I was sold For the Chicken I used Perdue Perfect Portions Chicken Breasts. I use the Perdue Perfect Portions Chicken Breasts quite often. They come in a package of 5 breasts and 2 types; Italian Seasoned and Plain Breasts. Anyway I grabbed 2 of the Breasts out of the freezer and let them thaw overnight in the fridge. To season the Chicken I’ll need 2 teaspoons Extra Virgin Olive Oil, 3 teaspoons Chili Powder, 1 teaspoon Ground Cumin, 1 teaspoon Pepper, and 1/4 teaspoon Sea Salt. To make the dish I’ll need; the Perdue Perfect Portions Chicken Breasts, 1 can Bush’s Low Sodium Black Beans, Sliced Black Olives, 1 container of Uncle Ben’s Natural Whole Grain Brown Rice, 1 can Del Monte Summer Crisp Golden Sweet Corn, and Kroger Organic Medium Salsa.

To prepare the dish In a small bowl, mix the seasonings; sprinkle over both sides of chicken. In a large nonstick skillet coated with Pam Cooking Spray, heat olive oil over medium heat. Brown the chicken on both sides. Add the beans, olives, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Wow, INCREDIBLE! Another delicious recipe from Taste of Home! Just a fantastic combination of ingredients! Beans, Chicken, Olives, Rice, Corn, and the Salsa just seems to bring it altogether. Another one of those “Keeper Recipes”. Plus it’s a one pot meal, which I love, and easy cleanup. I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

 
Black Bean Chicken with Rice Recipe

Ingredients
3 teaspoons chili powderTaste of Home
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons canola oil
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 cup salsa
2 cups hot cooked brown rice

Directions
1 – In a small bowl, mix seasonings; sprinkle over both sides of chicken. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Brown chicken on both sides.
2 – Add beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Yield: 4 servings.

Nutritional Facts
1 chicken breast half with 3/4 cup bean mixture and 1/2 cup rice equals 400 calories, 7 g fat (1 g saturated fat), 63 mg cholesterol, 670 mg sodium, 52 g carbohydrate, 8 g fiber, 32 g protein.

Today’s Menu: Kielbasa Skillet w/ Baked Rustic French Bread

 

 
Started my morning off with a Healthy Life Whole Grain English Muffin and on that I fried up some Boar’s Head Kielbasa Skillet 018Honey Smoked Ham. Topped that with a slice of Sargento Ultra Thin Swiss Cheese and I was set. Also had my morning brew of Bigelow Decaf Green Tea. They released my Dad from the hospital, he’s feeling better but he’s still awfully weak. Went to Kroger early this morning to pick up a few items for me and Mom. I needed a package of Healthy Life Whole Grain English Muffins. They had 2 packages left on the rack and both had mold on them, not real good publicity for Kroger! Sad part is it’s not the first time. Anyway for dinner tonight another new recipe, Kielbasa Skillet. I prepared Kielbasa Skillet w/ Baked Rustic French Bread.

 

 

 

Wasn’t real sure of what to have for dinner tonight. Then while at Kroger earlier today I came across some Butterball Every Day Polska Kielbasa Turkey Sausage, I found dinner! I use the Butterball Hardwood Smoked Turkey Sausage all the time, it had been a while since I had the Kielbasa. Next was finding the right recipe. Which I did on the Taste of Home website, which I use all the time for finding recipes. So a new recipe tonight, Kielbasa Skillet.

 

 

Kielbasa Skillet 002
I doubled the recipe so I needed the following; 1 pound Polska Kielbasa Turkey Sausage (sliced), 2 cups Del Monte Cut Green Beans, 1 cup sliced fresh Mushrooms, 2 tablespoons Kikkoman Less Sodium Soy Sauce, and 2 cups Uncle Ben’s White Rice. I used Cut Green Beans instead of French – Style Green Beans, I just prefer the Cut over French. The original recipe is at the end of the post.

 

 

 

 

To prepare it; In a large skillet coated with cooking spray, saute Kielbasa until browned. Add the Beans, Mushrooms Kielbasa Skillet 004and Soy Sauce; saute 4-5 minutes longer or until vegetables are tender. Serve with Rice and get ready to enjoy one delicious skillet meal! Everything works in this recipe. The Sausage is delicious and packed with flavor and the Beans and Mushrooms go great with the Sausage. And the Soy Sauce provides the great flavor. Very good recipe and great recipe to keep! I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a bowl of Breyer Carb Smart Vanilla Bean Ice Cream.

 

 
Kielbasa Skillet Recipe

Ingredients
1/2 pound smoked kielbasa or Polish sausage, slicedKielbasa Skillet 009
1 cup frozen French-style green beans, thawed
1/2 cup sliced fresh mushrooms
1 tablespoon reduced-sodium soy sauce
1 cup hot cooked rice

Directions
In a large skillet coated with cooking spray, saute kielbasa until browned. Add the beans, mushrooms and soy sauce; saute 4-5 minutes longer or until vegetables are tender. Serve with rice. Yield: 2 servings.

Nutritional Facts
1 cup kielbasa mixture with 1/2 cup rice (prepared with turkey kielbasa) equals 279 calories, 7 g fat (2 g saturated fat), 71 mg cholesterol, 1,421 mg sodium, 31 g carbohydrate, 2 g fiber, 23 g protein.

Turkey Pizza Recipe

Ingredients

1 package (20 ounces) turkey Italian sausage linksTaste of Home
1 teaspoon olive oil
2 tubes (13.8 ounces each) refrigerated pizza crust
1 can (15 ounces) pizza sauce
1 cup sliced red onion
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
2 large tomatoes, sliced
2 cups (8 ounces) shredded Italian cheese blend

Directions
In a large skillet, cook sausage in oil over medium heat for 8-10 minutes or until no longer pink. Cut into 1/4-in. slices.
Press pizza dough into a greased 15-in. x 10-in. x 1-in. baking pan, building up edges slightly; seal seam. Prick dough thoroughly with a fork. Bake at 400° for 8 minutes or until lightly browned.
Spread with pizza sauce; top with sausage, onion, artichokes and tomatoes. Sprinkle with cheese. Bake for 15-20 minutes or until crust is golden brown. Yield: 8 servings.

Our nice weather has left us. It was 36 degrees at 7:00 this morning and by noon it was down to 32 degrees with a wind chill of around 22 degrees. But we still can’t complain, it’s been a somewhat mild Winter in this area. Had a light Breakfast and a quick workout and started getting the prep work done on tonight’s Dinner, and then into the Crock Pot. Love these one Pot Meals! Did some housework and then went to the bank and got some gas, filled it up since the weekend price increase went back down being Monday. For dinner tonight another new recipe, Chicken Thighs with Sausage w/ Cut Green Beans and New Potatoes.

 
I had come across this recipe in an issue of Taste of Home, love that magazine. It uses Chicken Thighs and Smoked Turkey Sausage, so it’s already a winning recipe! To prep I’ll need the following; 1 Bag Baby Carrots, 2 Celery Ribs (chopped), 1 large Onion (finely chopped), 8 Miller’s Amish Skinless Chicken thighs (about 3 pounds), 1 package (14 ounces) Butterball Hardwood Smoked Turkey Sausage (cut into 1/2-inch slices), 1/4 cup Hunt’s Ketchup, 6 garlic Cloves (minced), 1 tablespoon Frank’s Hot Sauce, 1 teaspoon Dried Basil, 1 teaspoon Paprika, 1 teaspoon Dried Thyme, 1/2 teaspoon Dried Oregano, 1/2 teaspoon Pepper, 1/4 teaspoon Ground Allspice, and 1 teaspoon Worcestershire Sauce. To prepare, it couldn’t be easier! . In a 4 – or 5-qt. slow cooker, combine the carrots, celery and onion. Top with chicken and sausage. Then in a small bowl, combine the ketchup, garlic, hot sauce, seasonings and, if desired, browning sauce. Spoon over meats. Cover and cook on low for 6-8 hours or until chicken is tender. I’ve left the original recipe and it’s web link at the end of the post.

After 8 hours of simmering on low I removed the lid to check and see if everything was done, and what an aroma when I removed that lid! The Carrots were tender and the Chicken Thighs and Smoked Sausage were moist and done just right. The flavor was incredible, we did have to add some Salt but that was it. Very good dish, and a Keeper Recipe. I also heated up a can Del Monte Cut Green Beans and New Potatoes. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

TOTAL TIME: Prep: 25 min. Cook: 6 hours YIELD:8 servings
Ingredients
2 medium carrots, chopped
2 celery ribs, chopped
1 large onion, finely chopped
8 bone-in chicken thighs (about 3 pounds), skin removed
1 package (14 ounces) smoked turkey sausage, cut into 1/2-inch slices
1/4 cup ketchup
6 garlic cloves, minced
1 tablespoon Louisiana-style hot sauce
1 teaspoon dried basil
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon ground allspice
1 teaspoon browning sauce, optional

Taste of Home
Directions
1. In a 4- or 5-qt. slow cooker, combine the carrots, celery and onion. Top with chicken and sausage.
2. In a small bowl, combine the ketchup, garlic, hot sauce, seasonings and, if desired, browning sauce. Spoon over meats. Cover and cook on low for 6-8 hours or until chicken is tender. Yield: 8 servings.
Nutritional Facts
1 chicken thigh with 1/3 cup sausage mixture equals 280 calories, 12 g fat (4 g saturated fat), 118 mg cholesterol, 675 mg sodium, 8 g carbohydrate, 1 g fiber, 33 g protein. Diabetic Exchanges: 5 lean meat, 1/2 starch.

Came across this recipe a while back on the Taste of Home website and sounded too good not to try. It turned out delicious, goes great with Mission Tortilla Chips!

 

 

Chunky Crawfish Spread RecipeChunky Crawfish Spread 003

Ingredients
1 package (16 ounces) frozen cooked crawfish tails, thawed
1 package (8 ounces) cream cheese, softened
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1/2 to 1 teaspoon Creole seasoning
1/2 teaspoon salt
6 to 12 drops hot pepper sauce
Assorted crackers
Directions
1. Chop crawfish; pat dry. In a small bowl, beat cream cheese until smooth. Add the peppers, onion, garlic, Creole seasoning, salt and hot pepper sauce; stir in the crawfish. Cover and refrigerate for at least 2 hours. Serve with crackers. Yield: 3 cups.
Editor’s Note: The following spices may be substituted for 1 teaspoon Creole seasoning: 1/4 teaspoon each salt, garlic powder and paprika; and a pinch each of dried thyme, ground cumin and cayenne pepper.

1/4 cup (prepared with reduced-fat cream cheese) equals 88 calories, 5 g fat (3 g saturated fat), 65 mg cholesterol, 244 mg sodium, 3 g carbohydrate, trace fiber, 9 g protein. Diabetic Exchanges: 1 lean meat, 1/2 fat.

Pepperoni Pizza Chili

Ingredients
2 pounds ground beef
1 pound Johnsonville® Hot Italian Sausage Links
1 large onion, chopped
1 large green pepper, chopped
4 garlic cloves, minced
1 jar (16 ounces) salsa
1 can (16 ounces) hot chili beans, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (12 ounces) pizza sauce
1 package (8 ounces) sliced pepperoni, halved
1 cup water
2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 cups (12 ounces) shredded part-skim mozzarella cheese
Directions
1 – In a Dutch oven, cook the beef, sausage, onion, green pepper and garlic over medium heat until meat is no longer pink; drain.
2 – Stir in the salsa, beans, pizza sauce, pepperoni, water, chili powder, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until heated through. Sprinkle servings with cheese. Yield: 12 servings (3 quarts).

Today’s Menu: Italian Pork and Potato Casserole w/ 9 Grain French Bread

 

I saw this yesterday in the latest issue of Healthy Cooking (Taste of Home) and I knew I had my dinner for today, Italian Pork and Potato Casserole. Pork, Potatoes, Minced Garlic, Seasoning, Marinara Sauce, Shredded Smoked Gouda and Parmesan Cheese what’s not to like! It’s all baked into a Casserole, love these one pot meals. I added Sliced Black Olives, McCormick Grinder Italian Seasoning, and fresh Shredded Dutch Smoke Gouda to the original recipe. for my Marinara Sauce I used Newman’s Own Marinara. This is an excellent Italian dish! The Pork Chops and Potatoes are natural pairings but then with Seasoning and Marinara it just explodes with flavor! Then you have Parmesan Cheese and the creamy Dutch Smoked Gouda to top it off, tooo good! it’s an easy recipe to prepare and takes about 45 – 60 minutes baking time. The recipe says 40 – 45 but I baked for almost 60 minutes, till the pork was at 150 degrees. If you’re looking for a delicious and hearty Italian dish give this one a try. I left the recipe at the end of the post, the items I added are listed above. I also had a slice of Walmart/Marketside 9 Grain French Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Italian Pork and Potato Casserole

Recipe from Healthy Cooking and Theresa Kreyche

Ingredients:

6 Cups sliced Red Potatoes
3 Tbsp Water
1 Garlic Clove Minced
1/2 tsp Sea Salt
1/8 tsp Pepper
6 Boneless Pork Loin Chops (6 oz. each)
1 Jar (24 oz.) Marinara Sauce
1/4 Cup Shredded Parmesan Cheese

Directions:

1. Place potatoes and water in a microwave safe dish. Cover and microwave for 5 minutes or just until tender; drain.
2. Place Potatoes in a 13 – in. x 9 – in. baking dish coated with cooking spray. Sprinkle with Garlic, Salt, and Pepper. Top with Pork Chops and Marinara Sauce. Cover and bake at 350 degrees for 40 – 45 minutes or until a thermometer reads 145 degrees and Potatoes are tender.
3. Sprinkle with Cheese. Bake, uncovered, 3 – 5 minutes longer or until Cheese is melted.

Nutrition facts:

1 Pork Chop w/ 1 cup Potatoes and 1/2 cup Sauce equals 412 calories and 38 carbs.
