This week’s Diabetic Dish of the Week is – Surfin’ Salmon. To make this dish you’ll need 1 can (about 14 ounces) of salmon, drained and skin and bones removed. Along with Corn Flakes, Egg Substitute, Fat Free Milk, Dill Weed, Black Pepper, and Hot Pepper Sauce. For toppings; Tarter Sauce and Pimiento Pieces. Surfin’ Salmon
Chock-full of healthful omega-3 fatty acids, you can’t go wrong with this fun fish dish. And with its delightful shape and friendly face, the kids will look forward to getting their serving of seafood!

Ingredients
1/3 cup cornflake crumbs
1/3 cup cholesterol-free egg substitute
2 tablespoons fat-free (skim) milk
3/4 teaspoon dried dill weed
1/8 teaspoon black pepper
Dash hot pepper sauce
1 can (about 14 ounces) salmon, drained and skin and bones removed
Nonstick cooking spray
1 teaspoon olive oil
6 tablespoons tartar sauce
5 small pimiento pieces

Directions
1 – Combine cornflake crumbs, egg substitute, milk, dill, black pepper, and hot pepper sauce in large bowl. Add salmon; mix well.

2 – Shape salmon mixture into 5 large egg-shaped balls. Flatten each ball into 3/4-inch-thick oval. Pinch one end of each oval to make tail shape.

3 – Spray large nonstick skillet with cooking spray. Cook fish over medium-high heat 2 to 3 minutes per side or until firm and lightly browned. Turn fish over, adding oil to skillet, as necessary, to prevent sticking and increase browning.

4 – Place small drop tartar sauce and pimiento on each fish to make “eye.” Serve with remaining tartar sauce, if desired.

5 – Serving Suggestion: For a tasty side dish of sea plants, serve fish on a bed of shredded Romaine lettuce and matchstick-size cucumber slices.

Yield: 5 servings.

Serving size: 1 salmon patty.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

 

For Breakfast I had a fried Egg Sunny Side Up, Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Opened the door to go out and get the newspapers and it feels like you’re walking into a blast furnace! 97 degrees and humid outside today. We have an excessive heat warning out for the next few days. Highs in and around 100 degrees with the heat index up around 110 degrees and more! The over night low will be in the mid 80’s. Say hello to my air conditioner! Nothing going on outside at all today. It’s even so hot that I’m not even going to fire the Kitchen up for a second straight day. I shut the Kitchen down and went to Izzy’s!

 

 

 

 

 

Well they say if you can’t take the heat, get out of the Kitchen! And that is what I’m doing tonight! So I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! Plus we are only 3 miles from the Izzy’s Deli. The Sandwich is huge! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy’s Reuben, her favorite. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I’ve had another rough morning dealing with Phantom Pains. 2 days in a row is very unusual. They started about 5:00 this morning and continued until about 3:00 this afternoon. So another day of not doing much besides sleeping and resting. Hopefully pain free tomorrow. For Dinner tonight an Izzy’s Boneless Cod Sandwich.

 

 

 

 

 

Really didn’t feel like cooking after the day I’ve had so I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! The Sandwich was huge! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

For Breakfast this morning I prepared some Simply Potatoes Garlic and Herb Hash Browns, 2 Johnsonville Turkey Sausage Links, and toasted a slice of Aunt Millie’s Light Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Great way to start my day! Sunny and 43 degrees out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Then later I drove Mom over to the bank and and took her to run a couple of errands. For Dinner tonight one of my favorites, Izzy’s Boneless Cod Sandwich.

 

 

 

 

Well I had my Dinner planned out but I received an email from Izzy’s Deli that a coupon for $2.00 off for their Boneless Cod Sandwich, my Dinner plans just changed! So tonight’s Dinner I had planned will be tomorrow night’s Dinner and tonight I’m having the Izzy’s Boneless Cod Sandwich. The Sandwich was huge and as good as always! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a small Pasta Salad Cup and Potato Pancake, which I gave to Mom. Mom had the Izzy’s Reuben. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

Had a late Breakfast this morning, I had to be at the Family Doctor for my 4 month checkup on Sugar, Cholesterol, and such. Back home I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. After Breakfast me and Mom went over to spend some time with Dad. His weight is down and has no energy what so ever. I feel sorry for him, just wish I could do something for him. For Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

 

For Dinner tonight it’s Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean another time. I love all the Izzy’s Sandwiches!

The Sandwich is huge and so delicious! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Had a light rain early this morning and it was 50 by noon. A bit cooler as the day went on, into the low 40’s.Went to Meijer and Walmart got Dad a couple of Flannel Shirts and Pajamas for Christmas. Mom is a bit tougher to buy for. Stopped by the ATM and got gas before heading home. This area has been hit hard with what they call “skimmers”. They put the devices on gas pumps to hope to steal credit card info. You can’t even get gas safely anymore! So for Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

For Dinner tonight I went to Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean another time. I love all the Izzy’s Sandwiches!

Had a light rain early this morning and it was in the mid 50’s, had a high of 69 degrees and cloudy for the rest of the day. A bit cooler out there. I had an Eye appointment at 1:00. Back home I was all caught up on everything so I caught up on some shows I recorded. For Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

 

For Dinner tonight I went to Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean later this week. I love all the Izzy’s Sandwiches!

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. I also fried up a couple of Jennie – O Turkey Breakfast Sausage Links, Scrambled an Egg, and made my morning cup of Bigelow Decaf Green Tea. Well I’m back to full strength, I have a sinus infection and not a Summer Cold. Mostly sunny and 83 degrees with low humidity again! I heard that the Weather Services had said it looked like our coolest August in the last 15 years or so. As long as the humidity is low I’ll take it! Went to Meijer for a few items, then stopped and got gas, then to the bank and back home. Dad is doing ok in rehab but he’s still having trouble with water build up around his heart. So he’s back on the heavy duty water pills, hopefully it will clear it up. Not much going on at the house today. Got the cart out and took a spin around the neighborhood and picked the mail up. For Dinner tonight a Sandwich I could not wait to have again, the Izzy’s, Boneless Cod Sandwich. So the Kitchen is closed!

 

I have been wanting another one of the Izzy’s Boneless Cod Sandwich since I had one a few weeks ago. Perhaps one of the best Fish Sandwiches that I ever had! The Sandwich is huge. Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I can only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy’s Reuben. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink. Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam. Gave Mom a hand with laundry. Changed the bed sheets and did some bedroom cleaning. Dad was released from the hospital last night and was moved to a local rehab center. He was at this one the last time and we really liked over there. Not sure how long he’ll be there this time, hopefully not long! After lunch I went to the local Kroger and picked up a up a few items we needed.Back home not a lot going on so I got the cart out and trimmed some bushes at the side and back of the house. Then took a spin around the neighborhood and down by the lake. For Dinner tonight it’s Izzy’s, Boneless Cod Sandwich.

 

 

We I had my Dinner planned out but I received an email from Izzy’s Deli that a coupon for 2$ off for their Boneless Cod Sandwich, my Dinner plans just changed! So tonight’s Dinner I had planned will be tomorrow night’s Dinner and tonight I’m having the Izzy’s Boneless Cod Sandwich. I had this once before but it’s been years. I do remember how good it was so I took advantage of the coupon.

It’s just been one of those days where nothing seemed to workout and everything going wrong. Without going into details, was having problems trying to take care of my Dad again. Then I have a new Hoveround Chair that’s basically  my legs here in the house. Life would be so difficult without it. But I just got this new version of the chair and it was not designed for people who are disabled in mind. So I spent quite a while on the phone with Hoveround, expressing my displeasure over the chair. They are going to send a repairman out to help me out and correct the problem, probably be a week or so. All right enough ranting, time for dinner! Tonight I prepared Clam Strips and Baked Fries.

After the day I’ve had today I wanted something very easy to prepare, but still a good meal. So what be easier than baking everything, Clam Strips and Baked Fries! I used a box of SeaPak Clam Strips. Preheat the oven on 400 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare.

 
For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
