Today’s Menu: Baked Breaded Shrimp and Breaded Clams w/ Baked Fries

 

 

For Breakfast this morning I prepared a Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and partly sunny. Well our humid weather is back, glad I got all the yard work done yesterday! Did a load of laundry after Breakfast. Cleaned the house today, dusted and vacuumed. For Dinner tonight and all from the oven! I prepared Baked Breaded Shrimp and Breaded Clams w/ Baked Fries.

Been a while since I’ve had any SeaPak Shrimp or Clams. So for the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

Then for the Clams I used a box of SeaPak Clam Strips. Preheat the oven on 400 degrees. I then lined a baking sheet with foil and sprayed it with a shot of Pam Cooking Spray. Placed the Clam Strips in a single layer on the sheet and baked them for 12 minutes, flipping them over after 7 minutes. These come out so delicious. Love these, very meaty strips, well seasoned, and easy to prepare. Had a side of McCormick’s Tarter Sauce, for dipping. Great product to have in the freezer for those days where you want something easy to prepare. Wow such an easy Dinner to prepare, just bake and serve. Easy to prepare Dinners can also be a Delicious Dinner.

I also baked some Ore Ida Crinkle Cut Fries. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Dr. Pepper to drink. Take Care and Stay Safe Everyone!

 

 

 

 

 

 

 

 

SeaPak JUMBO BUTTERFLY SHRIMP

– Keep frozen until ready to prepare.
– Due to differences in appliances, cooking times may vary and require adjustment.
– Microwaving not recommended.
– For food safety this product must be cooked to an internal temperature of 165°F

PREPARATION:
BAKE
* preheat oven to 425°f.
* arrange frozen shrimp in single layer on baking sheet so shrimp are not touching.
* for full package, bake 13 to 14 minutes.
* for best results, turn product over halfway through cooking.

FRY
* preheat oil to 350°f.
* place frozen shrimp in fry basket.
* for full package fry 2 minutes and 30 seconds to 3 minutes.
* drain on absorbent paper before serving.

Fried fish is a popular dish in the weeks leading up to Easter.

Most Catholic churches in the Cincinnati area hold at least one fish fry during the Lenten season; the majority hold them weekly. Parishioners and public alike can socialize and fellowship together, and funds raised help charitable causes. Some other groups and businesses also hold fish fries during Lent.

Today’s Menu: Baked Fish Sticks / Mac and Cheese

 

 

For Breakfast this morning I prepared an Egg White Ham and Cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Diced Ham, Sargento Off the Block Sharp Cheddar Cheese, and Ortega Smoky Chipotle Taco Sauce. Love these Omelets! I also toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy but had a high of 59 degrees, a litle light rain. I got my test results back from last week. My Diabetes 2 was well under control and all blood work including my liver were all normal. Not much to do today so I got the cart out of the shed and did a little yard work and took off for a ride around the neighborhood. I won’t have many more days where I can get the cart so I wanted to get it out and enjoy the day. For Dinner tonight I prepared Baked Fish Sticks / Mac and Cheese.

 

I wanted something light and easy to prepare and nothing easier than Baked Fish Sticks / Mac and Cheese. For the Fish Sticks I bought a box of Kroger Crunchy Fish Sticks. First time using these but Mom had bought a box a while back and I tried them then. So i heated the oven on 400° degrees. Grabbed a small baking pan and sprayed with Pam Non Stick Spray. Lined my Fish Sticks up in the pan and baked. I baked them for 15 minutes and done!

 

 

 

 

They baked up to a golden brown and were excellent! They make a perfect light Dinner. Nice crispness and the breading was well seasoned. They were 180 calories and 20 carbs per serving (5 Fish Sticks). Good one to have in the freezer. Served with a side of Tarter Sauce.

 

 

 

 

 

 

For the Mac Cheese I’m using Kraft Whole Grain Macaroni and Cheese. It comes in a 1 serving microwavable cup. To prepare it I removed lid and removed the Cheese Sauce packet from the cup. Added water to the cups fill line and stirred. Microwaved uncovered, on high for 3 1/2 minutes. Do not drain the excess water. Stir in the Cheese Sauce Mix and it was ready. I love the Kraft Mac and Cheese they always comes out perfect. Well Fish Sticks and the Mac and Cheese couldn’t have been any easier to prepare. One by oven and the other microwaved! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Mini Pretzels with a Sprite Zero to drink.

This week’s Diabetic Dish of the Week is – Surfin’ Salmon. To make this dish you’ll need 1 can (about 14 ounces) of salmon, drained and skin and bones removed. Along with Corn Flakes, Egg Substitute, Fat Free Milk, Dill Weed, Black Pepper, and Hot Pepper Sauce. For toppings; Tarter Sauce and Pimiento Pieces. Surfin’ Salmon
Chock-full of healthful omega-3 fatty acids, you can’t go wrong with this fun fish dish. And with its delightful shape and friendly face, the kids will look forward to getting their serving of seafood!

Ingredients
1/3 cup cornflake crumbs
1/3 cup cholesterol-free egg substitute
2 tablespoons fat-free (skim) milk
3/4 teaspoon dried dill weed
1/8 teaspoon black pepper
Dash hot pepper sauce
1 can (about 14 ounces) salmon, drained and skin and bones removed
Nonstick cooking spray
1 teaspoon olive oil
6 tablespoons tartar sauce
5 small pimiento pieces

Directions
1 – Combine cornflake crumbs, egg substitute, milk, dill, black pepper, and hot pepper sauce in large bowl. Add salmon; mix well.

2 – Shape salmon mixture into 5 large egg-shaped balls. Flatten each ball into 3/4-inch-thick oval. Pinch one end of each oval to make tail shape.

3 – Spray large nonstick skillet with cooking spray. Cook fish over medium-high heat 2 to 3 minutes per side or until firm and lightly browned. Turn fish over, adding oil to skillet, as necessary, to prevent sticking and increase browning.

4 – Place small drop tartar sauce and pimiento on each fish to make “eye.” Serve with remaining tartar sauce, if desired.

5 – Serving Suggestion: For a tasty side dish of sea plants, serve fish on a bed of shredded Romaine lettuce and matchstick-size cucumber slices.

Yield: 5 servings.

Serving size: 1 salmon patty.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

 

For Breakfast I had a fried Egg Sunny Side Up, Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Opened the door to go out and get the newspapers and it feels like you’re walking into a blast furnace! 97 degrees and humid outside today. We have an excessive heat warning out for the next few days. Highs in and around 100 degrees with the heat index up around 110 degrees and more! The over night low will be in the mid 80’s. Say hello to my air conditioner! Nothing going on outside at all today. It’s even so hot that I’m not even going to fire the Kitchen up for a second straight day. I shut the Kitchen down and went to Izzy’s!

 

 

 

 

 

Well they say if you can’t take the heat, get out of the Kitchen! And that is what I’m doing tonight! So I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! Plus we are only 3 miles from the Izzy’s Deli. The Sandwich is huge! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy’s Reuben, her favorite. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Coke Zero to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I’ve had another rough morning dealing with Phantom Pains. 2 days in a row is very unusual. They started about 5:00 this morning and continued until about 3:00 this afternoon. So another day of not doing much besides sleeping and resting. Hopefully pain free tomorrow. For Dinner tonight an Izzy’s Boneless Cod Sandwich.

 

 

 

 

 

Really didn’t feel like cooking after the day I’ve had so I’m having the Izzy’s Boneless Cod Sandwich. I love these always so good and you can’t get mush easier for clean up! The Sandwich was huge! For Breakfast this morning I prepared some Simply Potatoes Garlic and Herb Hash Browns, 2 Johnsonville Turkey Sausage Links, and toasted a slice of Aunt Millie’s Light Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Great way to start my day! Sunny and 43 degrees out today. After Breakfast I went and picked up Breakfast for Mom at McDonald’s. Then later I drove Mom over to the bank and and took her to run a couple of errands. For Dinner tonight one of my favorites, Izzy’s Boneless Cod Sandwich.

 

 

 

 

Well I had my Dinner planned out but I received an email from Izzy’s Deli that a coupon for $2.00 off for their Boneless Cod Sandwich, my Dinner plans just changed! So tonight’s Dinner I had planned will be tomorrow night’s Dinner and tonight I’m having the Izzy’s Boneless Cod Sandwich. The Sandwich was huge and as good as always! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. It came with a small Pasta Salad Cup and Potato Pancake, which I gave to Mom. Mom had the Izzy’s Reuben. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

Had a late Breakfast this morning, I had to be at the Family Doctor for my 4 month checkup on Sugar, Cholesterol, and such. Back home I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. After Breakfast me and Mom went over to spend some time with Dad. His weight is down and has no energy what so ever. I feel sorry for him, just wish I could do something for him. For Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

 

For Dinner tonight it’s Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean another time. I love all the Izzy’s Sandwiches!

The Sandwich is huge and so delicious! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I’ll have the other half for Lunch tomorrow. This is one of the best Fish Sandwiches I have ever had! It came with a Potato Pancake which I gave to Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Dr. Pepper to drink.

Today’s Menu: Izzy’s Boneless Cod Sandwich

 

 

For Breakfast this morning I Poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. Also had a cup of Bigelow Decaf Green Tea. Had a light rain early this morning and it was 50 by noon. A bit cooler as the day went on, into the low 40’s.Went to Meijer and Walmart got Dad a couple of Flannel Shirts and Pajamas for Christmas. Mom is a bit tougher to buy for. Stopped by the ATM and got gas before heading home. This area has been hit hard with what they call “skimmers”. They put the devices on gas pumps to hope to steal credit card info. You can’t even get gas safely anymore! So for Dinner tonight the Kitchen is closed and it was Izzy’s Boneless Cod Sandwich.

 

For Dinner tonight I went to Izzy’s, so the Kitchen is closed! I couldn’t decide to go with their Cod Sandwich or the Corned Beef – Izzy’s Lean. I went with the Cod for tonight and I’ll have the Lean another time. I love all the Izzy’s Sandwiches!
